"Wai" ( short and high pitch sound) is a short form of "Ao wai" (literally "bring or take something at/to ...") which actually implies as "Let's set it this way" and in this context it means you set agreement with the seller to review or buy the goods next time. I hope my translation may help. By the way, your sentences in question are the same usage but just a bit different in etiquette. Wai ( Ao Wai) Maa Doo Mai may sound more considerate to the listener.

What does 'just saying' mean? Just say what you mean. The idea is not to slow down, but for you to repeat the same lesson over and over again. It's in the repetition, not them slowing down
by doing your request the lesson will lost the dynamic and would be not so pleasant to watch !As a teacher myself I am agree with martin woyzeck! Repeat the lesson again and again....
I believe the point of this lesson is to adapt to listen to real spoken thai at conversational speed. It's to train your ears and brain to get used to actual spoken thai pace. So as others mentioned it would be better to repeat the lesson and trying to catch the words rather than slowing it down
