Neil, I have watched so many different teachers online. At first when I saw the length of your videos, my short attention span felt challenged. There are two things that made me fall in love with your content.
1. I watched your video on how to sharpen/put a proper edge on a knife. The next chef I sold a knife to almost shit his pants when he checked the edge. He bought three.
2. In your coffee etch video. I was watching with the teenage son of my tenant. When I saw you look up towards the noise you heard the second time I looked at the boy and said “he’s gonna tell them to shut the f*ck up” I hadn’t seen enough of your videos know that from experience. There was an authentic sense of character and when you told them to shut the f*ck up, you weren’t mad, you could tell there was kindness in your voice. If I was the one working in your shop, I would have turned around, laughed, and gave you the finger while I pretended like I was going to start again. It’s one thing to be a great teacher, it’s another thing to imagine working for you/with you and knowing I would wake up each day and not dread going to work.
This is from someone who can’t work due to severe ptsd, moral and sanctuary injury. My boss was a psycho, and I worked in child protective services. I spent half my job working around her just to try and give the family’s I was working with 110%. I see a man like you and I can imagine working for you and even on the dull and boring days being thankful.
You are an authentic human being and I am grateful that you exist and produce the products and online content. Love you man, keep being yourself.
