    I'm obsessed with making bagels these days. To be honest, before I started baking bread, bagels were always the bread I picked up at Costco. I had to buy 2 bags, so I put it in the freezer and toasted it whenever I wanted to eat it. Among them, I liked onion bagels and cinnamon bagels, but now I make and eat them. A day like this is coming ha ha ha ha ha ha ha ha ha ha ha ha ha ha ha ha ha ha ha ha ha ha ha
    Actually, I like the chewy taste. I guess that's why I like bagels more. And how delicious would it be if you eat it as a sandwich, not too sweet, and top it with lots of cream cheese? I seem to really like bagels.
    I was thinking about how to eat it more chewy, so I made a bagel with tangzhong, but there weren't many videos about how to make that tangzhong.
    So I took a video of making tangzong. It's so simple.

    [ingredient]
    150g bread flour, 3g sugar, 3g salt, 370g water
    [How to make]
    1. Mix water, salt and sugar and boil (water temperature: about 90 degrees)
    2. Add 1 to bread flour and mix for 30 seconds at low speed
    3. Mix 90 seconds at high speed
    4. Double wrap and microwave for 4 minutes
    5. Mixing at high speed for 1 minute
    6. When hot, put in a plastic bag and store in the refrigerator for a day before use
    * The amount was small, so I used it as a hand mixer. If the quantity is large, please use a kneading machine.
    * Since you will be using a microwave oven, measure the flour in a microwave-safe container.
    * Make and store in the refrigerator for a day before use. If you put it in bread or bagel, it's very chewy.
    * The Tangzhong dough you made can be stored for 1 week.

      @@yomo_cake 쌀은 비추합니다. 쌀가루 자체가 반죽하면 떡의 질감이라 탕종을 넣으면 더 찐덕해질것으로 생각되요

    안녕하세요 오늘 이걸 보고 전자렌지에 돌려 냉장고에 넣긴 했는데 다른 레시피들 보면 전자렌지 전단계에서 숙성을 하더라고요? 전자렌지를 쓰신 이유를 여쭤도 될까요??

      전자레인지 전단계에서 숙성을 하는건 처음들어봤어요. 일단 전자레인지를 쓰는 이유는 뜨거운물을 부어 믹싱을해도 온도가 떨어집니다. 탕종은 풀을쑤어 전분을 호화시켜 떡처럼 만들어 수분을 보유한 사전반즉입니다. 전자레인지에 돌려 온도를 확실히 올려야 전분이 알파화되어 믹싱해야 완벽한 탕종을 만들수 있기에 전자레인지를 사용했습니다

    탕종은 밀가루 양에 몇프로 정도 넣으면 돠나요?

      레시피에는 정답이 없으나, 탕종을 많이 넣으면 빵이 떡처럼 나오고 믹싱또한 어렵습니다.저는 베이커스퍼센트 기준으로 20% 넣어줍니다.
