Love that your cookies don't call for any flour. I'm psyched to try these!
A week later...omg...these are absolutely fantastic!!! Added vanilla extract and chocolate chips to the cookies. Omitted to coconut. Then topped them with butterscotch chips. But the base recipe is the same. To die for. And so super easy. This is definitely one of the best and easiest keto cookie recipes I have tried.

I also made these cookies this afternoon. I tweaked them a little bit and I wanted to share what I did. I added English toffee stevia for the stevia and I added a few chopped pecans. I kept the coconut, because I really like it. I also added another pinch of pink salt. The cookies kind of taste like turtle cookies. You know chocolate, caramel and pecans, yummo. Thanks for the recipe, I don’t mean any disrespect by tweaking your recipe.❤️

Where I come from (Brazil, in case you're wondering), avocado IS mainly eaten sweet. People used to find it weird to eat it in salads, but now it's a growing trend. We make smoothies and eat it topped off with honey etc. I often make an avocado-chocolate pudding and am willing to try that recipe ASAP!! Just need my avos to ripen haha! Thanks for the recipe

I just made these today, and WOW! These are really good! They're chocolatey and I don't even notice the avocado. I just used a 1/4 cup of Swerve (instead of the erythritol and liquid Stevia), left out the coconut, and added some Almond extract. My teenage son even said they weren't bad and he could eat them. He did say he thought they had an odd aftertaste to them, but I think it might just be the slight bitterness of the chocolate because it's not as sweet as he's used to.

I tried your recipe and the avocado is kinda still noticeable. My family did not like it and called it horse manure. Even with adding the sugar. All those green lumps were still in the cookies. Even after blending it. Even if you add vanilla extract...the avocado taste is still there. You are right though If you don’t like avocado in your sweets then this isn’t the desert for you. Then again...Keto can get kinda boring after a while even when you jazz it up. My family bought this blue berry Keto thing and it was way better. You got to try making it. It’s way better. Thanks for being bold and creating something I wouldn’t have ever thought of. It was still a fun experience making your cookies. And your personality is super chill and cool. You remind me of one of my cousins. So I guess I watched this video because you seem to be an interesting person with a really great personality. Can you make Keto Blueberry waffles? I would eat that and it won’t taste like weird guacamole mixed with chocolate. I am proud of your hard work and your attitude to keep making content. God Bless and Keep being your amazing self!✌🏽

You are my new favourite. You're soooo easy to watch. So many keto people doing recipe vids get this weird persona... They speak in a jilted fashion, bounce their shoulders back and forth, speak with their hands zipping back and forth in right front of the camera, and the video takes easily twice as long because you have to hear about their day and the time they brought their (insert keto recipe here) to the family reunion, and everyone stood and clapped, the neighbours clapped, the hidden newborn kittens under the deck clapped... So annoying. You're voice and cadence were great, you get to the point, and everything you post looks so great and simple. Thank you! I grew up eating avocado as a desert, and found it odd when we had it as a savoury with prawn cocktail, it’s very versatile food!
The keto version of my childhood avocado dessert, is monk caster sugar, and cream , ripe avocado all puréed, and it’s delicious!

I made this using someone else's recipe using a did processor.. I added a bit more erythrito and processed it until there was no trace of avocado. The avocado flavor was gone! My son with SPD loved it. He will never know about the avocado... Well, maybe some day. But, for now all I know is that he ate ½ an avocado and enjoyed the heck out of it!

@@maureengannaway8635 I was kinda joking about the cats. But anyway I've had Moses since her head was the size of a golf ball when I found her on the fuller Warren bridge emergency lane five years ago so I got her for free and my other cat the maincoon walked into my house one day when he was four months old. My neighbor had found him and fed him and defleaed him and said I could keep him because her husband said she could not have 3 cats. So I've had Random for 3 years. So yes you will pay for whatever they need and most of what they want but there are so many unwanted cats it is really doing a disservice to cat kind to pay someone to make more when there are so very many cats who are unecessarily killed by euthanasia, cars, disease, poisons, neglect, etc... every day.

Whoever first thought of using avocado as a base for desserts was a genius! It has a high enough fat content to substitute for most dairy products that are normally used in desserts, hence providing the mouth feel of full fat dairy products, but at the same time giving the eater a lot more nutritional benefit than dairy products. On a side note, Matt better watch out. Megha just mentioned a hypothetical child twice. She is hinting at something that is already there, or something she desires. Matt better get used to losing a lot of sleep and changing diapers ;-)

Have learned the importance of potassium, B1 and electrolytes in general when on OMAD and IF as can see how my feet and hands react immediately when there is a drop. So I have started adding the above to my fat/deserts as well. 1 avocado is over 1000 mg of potassium...out of 4700/day required so this is awesome thank you!

      @KC-mw3de 5 лет назад +6

You can place them in close proximity to each other. But since the batter is thick and doesnt thin out and "spread" in the oven by cooking you need to flatten them out a bit so that they arent round balls still.

I haven't tried it but I had a thought about what might work. Crushed pork rinds. I already add a scoop of collagen to get them to be chewy. I bet if you added the scoop of collagen and crushed pork rinds you MIGHT get crunchy. I've used it as breading for Scotch eggs and they were not really crunchy but just a lil crunchy.

just made these. They're so good! Here are the adjustments I made for the recipe to work for us:
our avocado was 156 grams (I wanted to use the whole thing) so I added 4 tbsp (approx 56 grams) softened butter when whipping the avocado.
I don't have liquid stevia so I added 1 tbsp xylitol in addition to the erythritol. I tasted it first and it was lacking with only the erythritol for me.
I added sugar free choc chips inside AND on top.
I also forgot the baking powder completely. oops.
These are excellent! Thank you. They are easy to flatten if you wet your fingers first.

If you use the entire avocado, how do you lose anything at all regardless of how you prepare it? That makes zero sense... I doubt they threw out the rest of it..they eat avocado regularly....the entire flesh are "the healthiest bits"..

in my brain lol its just avocado and i used cashew milk so u the blender will blend it lol then add enough to make sure the blender works w all 4-5 ripe avocados, and this cookie stevia mint extract in a blender with some salt and vanilla extract...then mix up some whipping cream and add stevia and whatever favorings u want to that....im going nuts since i discovered flavors...the possibilities are endless!! feel free to tweet me @errorasmr if ya need any extra help lol

I made these today. As someone on their blog suggested, I used 1/3c. granulated Swerve in place of the other sweeteners. I was worried about the avocado taste being too strong, so I used sweetened coconut (the carb difference is negligible) and I toasted it first. I also added 1 tsp of vanilla extract, and used a microplane to shave 1 square of 70% chocolate into the batter. Then I added 1tsp of instant coffee to half the batch.
My dough was very sticky, so I chilled it for about 30 min. I also weighed the dough. Because it's so sticky I recommended using the one hand method (like you do for frying chicken.) I baked them for 10 min, and let them cool on the sheet for 20 min. They have a fudgey-brownie texture more than a cookie (not that that's a bad thing.) I could still taste the avocado, but less so with the coffee ones. If I make them again, I will increase the extract and coffee.
