To be fair his chicken is the most authentic (from the look of it) everyone else jerk was American jerk. Jerk is supposed to be on the gril and the seasoning is burnt into the meat. Most people, not just Americans probably never heard of actual authentic Chinese food let alone actually ate it. Americanized is when it happens in America, but it can be any country. It’s nothing wrong with people liking what they like. I’m just simply pointing out his was the most authentic. But like I also said authentic doesn’t mean best, it just means closest to traditional.

I’ve been to Jamaica multiple times, eaten at Jamaican restaurants in NYC. Nobody comes close to my neighbor next door. I used to cook fo a living so I know food. My neighbors jerk chicken is next level. These guys would go insane if they tried it. Dammit, now I’m hungry.

Jerk chicken is real easy to mess up, but extremely rewarding when made right, a while ago i used leftover bourbon marinated chicken, and added a bbq base jerk sauce and it was amazing, the bourbon adds a smokey taste with the reliability of being oven cooked, using premade chicken also means it only has to be in their till glazed, you can also slow cook the chicken on a drip tray, and then add jerk sauce and cook till nice and glazed, cook in a cast iron pan inside the extra sauce, and mix leftover sauce w rice, every recipe is unique, everyone's tastebuds are different
