    Made this yesterday, ate the crab today. SOO GOOD! If you love eating raw sushi, the texture/flavor is similar to that & the crab meat melts in your mouth 😍 The flavor is not too salty or sweet. It tastes so fresh! I paired it with seaweed & rice. You can also garnish & customize if you want to add other flavors to the mix.

    This Ganjang-gejang reminds me of my childhood memory that my grandma in South Korea used to make this one all the time whenever I visited her! Now I can make this by myself! I appreciate at it, Maangchi:)

    I watched another Korean RUclips channel eating this a few hours ago. So I figured, let us go to Maangchi's channel and learn how to cook raw crab so I can try.
    Its 9PM so I have to wait until tomorrow before I can grab some ingredients at our local Asian supermarket.

      Ive been thinking about it but people have been complaining about food poisoning. Its not an alarming amount but still, I do not feel like having diarrhea LOL.

      Okay so I did some research but all you need to do is add your own soy sauce with about 5 percent alchohol content. Or add some plain wine.

      @@vickyrae5949 I heard you let it ferment in the fridge for 3 days. That way you don't get sick. Since it not a raw food anymore but a fermented one.

    Where i am from ( Thailand) we use fish sauce to marinate our crabs and top them with generous amounts of spicy and sour (seafood sauce). Marinated Raw Crabs is my all time favourite dish!
    I'd love to try Korean version of yours as well, by just looking at the dish my mouth is drooooolinggggggg :p yum yum! Thanks for sharing Maangchi, you rock as always

    My mom's family is from a fishing town in China and we eat crab kind of like this too! Haven't had crab in maybe half a dozen years and this makes me miss it so much. We sometimes just marinade the crab in liquor (well, okay, we marinade everything in liquor) and it's really strong but really good.

      it is slowly fermented rice starch by amylase so that it become sweet and sticky. usually sells in korean and Chinese market.

    The first (and only) time that I ever encountered these was at a the Korean BBQ place Kang Suh here in NYC back in 1998. It was my first time at a BBQ and my (non-Korean) friend and I were served these with the banchan. We saw the crabs and were like, um, what do we do with these? They're raw! So we put them on the grill to cook. In a few minutes, the waitress came over and started screaming at us in Korean and took them off. This was in the early days of Korean BBQ in NYC and very few of the waitstaff spoke English. About a year later, I told the story to some Korean friends about it and they laughed and laughed and called me an idiot and brought me back there (I was too embarrassed return on my own) and had a great time. Strangely, I've never seen them (as banchan) at any Korean restaurant since then and completely forgot about it all until I saw this video. Thanks, Maangchi :o)

    게딱지를 떼서 씻는 이유가 있으신가요?? 다른데서는 게딱지를 안떼어내고 담그는거 같던데 이유가 궁금해용

      좋은 질문입니다. 게딱지를 열어보면 속 아가미 부분을 보시면 검정색 뻘 모래가 끼어있어요. 그리고 가끔 기생충도 있어요. 그래서 저는 깨끗이 씻고 간장을 부어만듭니다.

    I'm Korean. When I was young, my mom always had a smooth rock in the kitchen that I was never allowed to touch. I always saw it in a jar of something, and my mom told me it was for "flavoring".
    I was young...so I never doubted her. I honestly believed it until I was an adult.

    I'm a crab fishermen here in Seattle, Wa. and haven eaten a lot of cooked crab over the yrs but never raw and I want to try it with the Dungeness Crab which is about 3x the sz. of a blue crab. Only thing is were not allowed to take the female-crab so I guess that means no roe just the yellow-green-brown crab -butter guts. Well I hope I don't get sick!

      I grew up in northern California and my mother used to make it with Dungeness. It's great but the shell's thicker than blue crab so be careful.

      If there's no female crabs with the roe, you can make the soft boiled egg and put the yolk on the marinated crab instead just before you eat it. ;)

      Actually, that 'roe' @ eggs she's talking about is what u just called butter guts. Tomalley. Crab inerts. Crabs eggs is never on the inside :)

      The marinade sauce needs to be boiled until hot (over 70 degress Celcius) to kill any bacteria/viruses manifesting inside the crabs. About a day or two after the first pickling process, you collect the liquid, boil it again and pour it back onto the crabs

      I don't think freezing them actually kills them. Blue crabs might be different but I know the dungeoness and king crabs we have available in my area live in near frozen waters so freezing them just makes them slower not dead.

      Humanely too, they go into torpor and just never wake up.

      Are you talking about the seaweed that looks like paper called gim? If so, it won't work. You need to add dried kelp that makes the broth savory. Good luck!       It's called dashima. It's used to make soup stock and is a bit thicker than usual nori/ seaweed

      @@suriyanichow can definitely use honey or brown sugar. Jus watch out for the amount you put in. Maple syrup, in my experience, will give it a sort of candy aftertaste that doesn’t really go along with crabs or any other soy marinated food so I dont recommend it,

    I'm from Shanghai and we eat marinated fresh water crabs too. But fresh water crabs must be soaked in marinade with strong liquor, so that the crabs are well cooked, and the crab roe is amazing!

      It's really good. Actually when she rested the crabs with the sauce in the refrigerater, those are kinda fermented? So that's why you can eat the crabs raw. If you get nterested of those, i surely would recomend you to visit South Korea and try it. There are many restaraunts making it in traditional way which can be so much better, Maangchi's is also good though.

    Fresh raw crab is superb!
    In my country we freeze them icy cold and make them a spicy salad with various herbs.

    Please forgive my ignorance. My grandmother is from south Carolina and she catches her own crabs out there. Can this dish be made with any crab or just the blue crab and are there any health related concerns (besides allergies) with not cooking the crab? Does it go through a (cold cooking) process or something? This is different for me. I love crab but never saw someone eat it without boiling them first.

      We, Koreans eat raw fish and crabs with a salty marination.
      We even eat salty raw fish guts. It may sound gross but very tasty.
      However, be sure to use alive crabs and wash thoroughly. I sometimes use a toothbrush to wash hard-to-reach areas.

      +miya sanchez If they're sea water crabs it should be fine, otherwise don't do it! Fresh water animals are dangerous to eat raw.

      +miya sanchez I'm not an expert on crabs but the enzymes in the marinade do contribute to a raw "cooking" method, like citrus juice does to fish (as with ceviche).

      boil the broth again and make cool and pouring in the jar to submerging crab....we repeat this procedure 3 times in big Ganjang-gejang restaurant.

    하... 수능 끝나고 여수 여행 가서 첫 영접했는데 맛없는 식당에 걸려서 게장은 다 비리고 맛없는 줄 알고 안 먹었는데... 이번 가을에 엄마표 간장게장 한 입 먹고 엄청 배신감 들었어요 ㅋㅋㅋ
    게 값 엄청 쌀 때 왕창 주문해서 게장 서너 번 해먹고, 남은 국물로 게국지 끓여먹고 해서 3주 정도는 맛있게 먹었네요 ㅎㅎ 참, 같은 간장 양념으로 새우장 해도 맛있어요 :)

      Gwendoline I believe that would work fine. but it would have a milder flavor than if you used a Fuji apple. Korean pear if you can find it.

      Gwendoline I have noticed from living on both east and west coasts that belie crab is very popular and wilt available. or average crab will work fine. I wouldn't use a king crab or others of that nature cause it more about the body not the claw meat. hope I was helpful! !

    Honestly, you are a delicious human being. Thank you for teaching me amazing things. I am a single mom and my daughter is in love with watching you while we cuddle, then we cook!! You have taught me how to cook octopus (which took a few tries for sure), sauces and now crab!!     Sometimes oldies are getting hard to eat comfortably. But once you have this fermented crabs, I would say they can easily finish their meals without a problem. I just make sure that the saltiness is not too much.

    for the first time i tasted Gajang Gejang and i could say its so Yummy. The sauce is sweet and beautifully blend in the Crab. I ate 7 crabs. But unfortunately i had swollen lips and tongue after, it was Itchy after eating. i had allergy. I could say this is only for people who have no allergy in raw crab. No regrets in trying. Its so delicious

    I thought you have to wait at least 2 - 3 days before eating. My mother makes this and she separates the sauce with the crabs after 3 days and she boils the sauce, cools it, and combine with the crabs again for one day before eating. I asked her why, but she’s not sure why. Is it safe to eat after 24 hours?
    Also, I made this and used a sandwich bag filled with water instead of using a stone because my container is square shaped.

      The brine gets diluted as the moisture from the crabs seeps out from osmosis. Bacteria can start growing at this stage. The second boil is to kill off these bacteria.

    Maangchi I have a request, can you please a short video telling the most important, common and optional ingredients and stuff to have in a korean kitchen? Please include spices, herbs, sauces, curries, pastes etc etc.

      I'm not sure if you still need this (since it's been 5 yrs) but heres a short list excluding the obvious like salt and sugar:
      Gochujang (spicy chili paste)
      Dwenjang (soy bean paste)
      Gochu garu (grounded chili)
      Ganjang (soy sauce- theres two kinds of soy sauce that we like to use. One is guckganjang and the other is jinganjang)
      Dried anchovies
      Dried kelp
      Chamgileum (sesame seed oil)
      Garlic (ground and whole)
      Aekjut (Korean fish sauce)
      Literally you can make most things with just this. Hope this helped.

    In Thailand we eat raw crab too! We eat with spicy sauce.
    And we put it in Som-Tam (spicy papaya salad).

    In Cambodia we call it salted crab. We just used a lot of fish sauce. And put the live crab in and let marginated.
