    I love the husband/wife ganjang gyejang as part of his menu, paying homage to his Korean roots and food culture while also showing deep respect to traditional Japanese techniques. Beautiful presentation and skill.

      Japanese cuisine has adopted Korean food before. Popular Japanese food mentaiko (spicy fish roe) is from Korean myeongnan-jeot. There are other foods Japan adopted from Korean cuisine but they’re not seafood.

    Thats so nice! There are many korean families that are still hesitant about japanese culture and Japan because of what happened in the last 150 years between both cultures. But this proves that people can overcome their cultural hesitations. Way to go!

    Wow, Brings back memories of coming home from Chinatown with the parents and my dad teaching me how to prep and steam crab. Learned how to do that before I knew how to read. Fresh steamed crab with a dish of vinegar. Perfection.

    I never appreciated the sushi master until now. It is ALOT of work to get everything cleaned and then to make the sushi to perfection. A LOT of ingredients that must be fresh at all times. It is a highly skilled difficult craft. I am in awe. I tried making sushi on my own. It is NOT easy. 🙇🏻‍♀️Doma Arigato

    I can tell you with certainty I would enjoy ever piece of sushi this chef made just because of his presentation. Man I miss good sushi 'it's not easy to find good sushi in the east Texas pines woods. We have to go into Dallas to enjoy real sushi at a place called Sushi Rock......Its also a father and son that are the chef's and they make incredible sushi. Best cold smoked Salmon you will ever have if anyone is ever in Dallas and wants excellent Chefs and even more spectacular sushi.........

    Gangjang gejang is the ultimate in raw delicacy. We have a raw crab with sea salt, hot chili peppers and crushed kukui nut in Hawaii which is similar but the ganjang gejang is far more flavorful, succulent and mouthwatering. I'm surprised it took this long for someone to use it the way this chef does. On the other hand, Koreans already use rice as a vehicle for this dish. But combining it in this way? Bravo!

      @@125pizzaguy which they have already did in 1965 pact where Japan gave $300 millions and $200 millions in loans to Korea (along with other countries that were affected by the war). ($300 million is basically the equivalent of $2.4 billion in today’s money). Japan have been apologizing for decades. Even recently in 2015 Japan apologized to the victims and contributed $1 million yen to the victims. Not sure what korea is doing with all of those money Japan have been funding them.

    perfect combination. we always eat the ganjang gaejang with rice so it would make such a great sushi. though you would have to use top notch fresh crab bc low quality cheap crab would have slimy and watery meat texture.

      Yup, you can tell fat, fresh plump crab flesh from even a day old crab. Absolutely can tell the difference.
