Fermenting something means it is no longer raw. Applying heat to food is not the only way to 'cook.' Aging and fermentation are another method of 'cooking'. If people only pull themselves out of their cultural comfort zone and realized there are other ways of doing things...

I'm Korean, food poisoning from Gejang(fermented crab) is well known to Koreans, and it is defenetly something a cook or a consumer needs to be cautious. We see this in news pretty often, and i had a stomachace few times from eating Gaejang, and now i totally avoid the dish, even though it tastes so good. If you copy paste '간장게장 배탈' in google you will be able to find numerous news videos and articles about it. You can use google translation feature to just get a glance of the news.

I’ve never tried it but it looks delicious. I live in Canada and I grew up eating raw egg mixed with rice, sashimi and I’ve tried yukhoe (raw beef) and I haven’t yet died. Fermented food is good for you. I didn’t learn about the weird fear of fermented food or raw food until I took a foods class in middle school and my teacher said: “that sh*t will kill you! It’s unsanitary.”
I was just like: 😒 *really*? So in the west we can eat all this chemically processed junk but not healthy cuisine that has existed for centuries. Ok.

Like everything else, fermented crabs is a cultural food. It has been many years since I've had fermented crabs, which was common at my grandparents dinner table when I was growing up. I loved the tastes of fermented crab in soy sauce. It is something people ate seasonally, and whilst eating it, you just appreciate the flavor of the occasion it's food at its simplest form. Unlike complicated European Cuisine. You cannot compare fermented crabs to 'artisan cheese' from Europe as an example. I love both, they can only be appreciated at the time of eating and the occasion.

The reason why soy sauce, which was made with crabs, boils more than three times is to sterilize them. It is easy to cook crabs by boiling or steaming them. But it's not easy to keep the fresh taste alive. Soy Sauce Marinated Crab in Korea is a recipe designed for this. You don't have to worry about bacteria. Fresher than any other dish.

No, the soy sauce does not only season the crab it also gets rid of all those parasites and bacteria. That's why we don't eat crab sashimi but we eat them fermented in soy sauce. After all fermentation is done in order to stop the seafood being rotten

I love crab 🦀! The city of Fortaleza in Brazil 🇧🇷 they serve amazing crab 🦀. There is even a crab day (every Thursday).
