If anyone haven't tried the kelp chili crisp, i highly recommend it! My brother gave me one as a gift and it's addicting! I've been putting it on pork belly, roasted duck, all sorts of protein along with some noodles and it's smacking!

The way you put rice on the head shell, scraped the linings, and scooped it up is exactly how we eat it in Korea! Seaweed, some sesame oil.. Perfect! The head's usually marinated raw with the legs as well. The crabs in Korea are tiny so we just suck on the legs and the main part is raw head piece with all the gut linings and what not. You should try making the spice version as well! Yangnyum geyang! Every time you make Korean food, I love how you represent it so accurately!

Another trick for fresh crab bait that worked well for me was bringing a rake to a busy fish cleaning station. You can fish a few fresh ones out of the dumpster without getting too smelly. Great video as always Taku! Thank you for sharing your experiences with us.

I lived in Korea in ‘95 and ‘96 this raw crab got my attention when I found out Japanese tourists would come just for this dish so I had to try it. I swear to you, I still dream about this raw crab to this day. It’s been over 20 years and I crave this dish so bad so often

Good thing is, blue crab season in the east coast is now so if you are going to look for it I would hurry up and look now because September is the best (but the last) month of the crab season. There are 2 ways it is prepared, soy sauce based and chili paste based (it is only very slightly hot). Try both! I guarantee you will never ever forget your first time eating this I promise you.

With the crab trap line tangle: you're problem is that you coil it. Coiling rope/line will introduce a twist, which is where the tangles come from. You either need to flake it into a bucket (drop line in however it lands) or wrap it in a figure 8. The bucket could be soft-sided like your orange one for easier storage.

Another great adventure! I bought the barnacle foods red chili oil and the 3 pack hot sauce both are great, I think my son drank the hot sauce because it was gone in a couple days and I been enjoying the oil on culinary creations here in the kitchen. I saw a busy food stand that was only popular with locals. This is what we got. It was amazing, but I was surprised to see so many young couple on dates ordering it, it doesn’t seem like date food to me.
Taku, I did mail the Barnacle people about maybe you coming up with this. Why not try to use strips of the kelp stipes and create something like kampyo! Maybe strips need to be slightly dried for more texture then simmer in shoyu, sugar, and other spices. Then you can use it in norimaki rolls or just cut into chunks (like the Chinese do with cucumbers)! Now you’ll have a tasty Asian item for norimaki rolls or just savory good bites! I'm not sure if you're aware but the best way to eat that is you have the head upside down with some of the marinate in and you use it as a bowl for the rice. Mix the rice, marinate and whatever crab stuff is in the head. And it slaps. I feel like presentation can be better too.
