  • Try a delicious one-skillet breakfast recipe for beans and eggs. This egg recipe is easily adjustable for any family meal; just add as many eggs to the recipe as you have folks to feed!     Absolutely delicious! I’d add maybe a little of that adobo sauce from the chipotle container… that stuff is liquid gold!

      yeah...I really like the zing the sauce adds, although sometimes I put just a little too much in and CG gives me "the look"

    This is perfect for my frozen eggs. When I get to many eggs I freeze tham in a muffin tin. I'm going to do this. Looks so good. Thanks

      the chickens at our house sit produce just enough eggs that we can stay ahead of them without having to freeze any...if we start to get behind, I can just make an egg bake and that'll use up 8-10 eggs and get me out of the hole :^)

    I literally made a similar dish this morning. I chopped up 4 heart stalks of celery and added a dozen cherry tomatoes whole. I added 4 tablespoons of crumbled bacon with a pinch of saffron and two teaspoons of paprika. Last week instead of bacon, I minced a can of low sodium Spam and wow, with the eggs hard boiled and crumbled in with the bacon and then topped with cheddar after adding a third a cup of bread crumbs and half a cup of jar pasta sauce garlic infused. Stand back!

      gaw...my mouth is watering reading your comment!--it all sounds good to me--celery is a great idea and I'm going to add that to this dish next time...that would add a nice texture without altering the flavor

    "Chicken-based pornography" is not a phrase I ever expected to hear in a cooking video, but then again I don't think I'd expect to hear that anywhere at all :v That aside, I definitely gotta give this a try sometime soon, it looks like it'll hit all the right notes for me: packed with flavor, easy to prepare, and inexpensive 👍

    Have you ever made an egg dish called shak Shuka? My spelling may be off. It’s a lot of ingredients but it’s delicious!

      I have made shakshuka, which is a dish I like--there aren't many egg type recipes I don't enjoy!--shakshuka looks fancier, I think...if I was trying to impress my in-laws, I'd serve them shakshuka instead of eggs and beans (well, maybe not my in-laws)

      We were very close to applying to a long-term house sit in northern Oregon for this winter...I'm looking forward to getting back to the Northwest, although I don't think we could find a sweet rental deal in Seattle like we had when we were there before...I've read that the heat is tough there this summer, and no place we lived in the Northwest had AC, but I think that might be a requirement in the future

      I bet there is a better lid option for that skillet somewhere in the kitchen...it takes me at least a month to figure out where things are...and I'm definitely better versed in chickens than when we first got here, although the chicken set-up here pretty much takes care of itself, so my job is mostly eating eggs (which is not a job I'm unfamiliar with)

    Love those Chipotles! I find them occasionally in a jar but I freeze the canned ones in ice cube trays!

      that's a great idea--they would be handy frozen that way. A can of la costena chipolte and sauce is dinky, but it can last a while

    I did the same thing first time I used those chipoltes. Used a whole can to make a rattlesnake pasta! YIKES! ONE with some of that adobo sauce is great though.

    You could save yourself a ton of money and salt if you would use dried beans. And they are pretty easy to hydrate and cook.

      yes...and we've even got dried beans...I'm so lazy...George Orwell said canned food would be the downfall of us ...hope you like that chipolte and sauce--I love it--but don't be like me and dive into too much too soon (unless you're a fire eater!)

    who doesn't like eggs? I would add salad olives and cheese. But I get paid by big salad olive and cheese corporation to say that. You might try an impossible pie recipe, they use a lot of eggs. I did one with mackerel to make a fish pie.

      this is a potential 2 month house sit...we're about 3 weeks in, but we agreed to be pretty flexible since the folks we're house sitting for are traveling to parks in the western USA and their trip might be impacted by the wildfires

      definitely--I love this kinda dish with a little sausage or ham--I've been taking a break on my fat intake, so I've left a lot of meat out of the recipes I've been cooking lately, but that's just the middle age man in me making that call

      @@ChefBuckRecipes 🤣. Here's an idea: instead of canned tomatoes, substitute pork and beans along with the white beans. Bake up some cat head biscuits and you have a twist on the British classic: Beans on Toast. Of course, cheese and bacon stays. 🤣👍
