How to make 10 minute Spicy Thai Butternut Squash Soup in the Pressure cooker or Instant Pot

  • I love this fast and easy Thai soup.
    A bit of spice, really nice and warming for those cold fall and winter days.
    1 Large onion
    2 tbsp garlic
    1tbsp cumin
    1/2 tsp coriander
    1tsp fennel (ground)
    1tsp salt
    1 stick of lemongrass
    1 thai chili (to taste)
    1 tbsp fish sauce
    1 can coconut milk
    4-5 large cups squash
    3-4 cups chicken stock.
    Lime/Lime juice & basil for finish and garnish
