  • Really tasty, really fast soup.
    Love using my pressure cooker for soups, you get a fresh meal in a few minutes. I garnished with a bit of paprika and it was amazing.
    1 Medium Onion
    3 Stalks celery
    1 cup carrots
    2 cups potato
    5-6 cups squash
    Salt and pepper
    3-4 cups chicken stock
    If you find squash hard to cut, pre cook it. • Pressure cooker squash

    Watched this video just a couple hours ago, and it look easy and tasty. Since I had all the ingredients I gave it a try. Fabulous soup we eat a lot of soup here and my husband could not stop raving about it. I must say I tried my hand blender and shortly there after threw it all in my vitamix. It was absolutely perfect. Only thing different is that I use vegetable broth because I’m vegan. Thank you so much.

    This was sooooooo good. I used bone broth instead and added 4 cups (diluted) total. Wow. So easy and delicious.

    Save extra work...invest in an Emerson blender. $16 Walmart. Works great for soups like this. Can keep in same pot to blend beautifully. I use mine for broccoli soup, tomato soup...will definitely try this recipe. Looks delish, thanks

      I have an immersion blender, I used it in another recipe. It works pretty good, but a Blendtec or Vitamix is awesome too.

    I melt butter and add fresh sage, let that sit on stove, at finish of soup add 2 tab real maple syrup, dash apple cider vinegar, yum! Almost like Panera Bread's recipe.

    Try roasting your pumpkin, it’s much more flavourful that way.

      Absolutely. Normally when I make squash by itself I roast it in the BBQ. Really brings out the flavour, I'm going to have to try turning that into soup.
