    Just finished this. Amazing flavor with the mushroom base. Instead of seasoned salt, I used Penzey's Fox Point seasoning. Used Light cream since I had that and Marsala instead of Sherry.
    DELICIOUS.

    I made this after I seen this. Didn't have the wine and it still turned out so yummy. Don't think I will ever have canned cream of mushrooms. Thank you for sharing.

    I just made this today. It's awesome! I try to eat vegan so I used a can of coconut milk instead of the half and half. I just whirled it around in my Vitamix to make it smooth and creamy. Man, this was good!!!!!

    I made this using half and half instead of cream & next time I will use the recommended heavy cream because it would add some depth to show off this soup. Nonetheless it was very good. I skipped the sherry since I didn't have any but if I did I would use real sherry as opposed to the suggested cooking sherry. It was so much fun measuring out all of my ingredients & then getting to sit down & relax in-between the stages of the Instant Pot working its magic!

    My grocery store had the mushroom base and since I too LOVE LOVE LOVE cream of mushroom soup, I just made this a n hour ago. It's very good! The only change I made was to use evaporated skim milk instead of cream because I wanted to not feel so guilty eating this. Thanks for another great recipe Jeffrey. ☺

    I made this today and it is better the Cambells Cr of Mushroom soup. I am going to make this from now on. It is so good. I had to make it with chicken broth as I didn't have the mushroom better than broth. I hope I can find it soon. Hands up Jeffery.

    Just a suggestion to put 1 big potato in the beginning, that will serve as a thickener instead of flour and will add amazing taste to the soup

    I just made your Loaded potato soup so yummy now I'm going to go on the shroom trip !!!! Its one of my favorites one chef told me to make it creamy with out cream use leeks I'm going to try it both ways.

    I plan to do a version without the dairy- should be good - will avoid the flour too but cornstarch works well too

    Finally got around to making this recipe. Very easy and tasty! Put a couple scoops of white rice in the bottom of the bowl and ladled in some soup .... was very good. I will definitely be buying the mushroom better than bouillon in the future!!!

    Ever tried skipping the flour and adding cream cheese, or, better yet, goat milk cream cheese? Should thicken it nicely, certainly add a tangy smoothness to the soup. The benefit is it keeps the carbs down. I lucked out in a good price for some shrooms yesterday, so tomorrow will be making this soup - pobably with the goat cheese since I have some I want to use up.

    2:33 I'm lazy and a rough measurer, if you don't want to deal with mixing outside of the pot just toss clear water in and stir the better than boulion in there. Easy and no need to wash the measuring cup.

    Ok i got lazy. I threw everything in the pot and pressure cooked 8 mins with a natural vent of 15 mins. Upon opening then i added the butter- i didnt want soggy mushrooms and this way i didnt need to deglaze. Then i added some extra green onions and the reserved mushrooms. I also used better than bouillon but i only had beef flavour- so i used less. Sometimes its about what you have and making things work. It is amazing.

    I made this today but as it is immediately addictive, I cannot recommend this recipe! It was too delicious! I used “ B than B” vegetable base as mushroom not available. I forgot to mention that I forgot to use the pressure function so this recipe is good for those without a pressure cooker. If this soup was any more delicious, I could not tolerate it! Thanks sharing your wonderful recipes . I enjoy your warm entertaining personality.

    I'm a new fan, will try this later in the week. You need to expand your recipe though. Fresh shitakes, dried procini, very aromatic, small oyster mushrooms. Add some white truffle oil rather than dried thyme. Speaking of dried thyme, aka wood shavings, use a spring or two of the fresh stuff. I make an on the stove, clear, multiple mushroom soup/broth that is to die for. Similar prep to what you do. A major dollop of ketchup rather than cream. Really, mushroom soup should be a cold weather mainstay in every kitchen. So thanks for posting!

    Jeffrey, I noticed your measuring cup with the mushroom base in it is 4 cups, yet, you
    said to add 5 cups of mushroom base (water). Did you have another cup of base added in? Iwe really like your videos...have to try the apple, walnut honey mixture...it looks delicious...

    I mistakenly bought less mushrooms so had to cut all ingredients in half to make a soup. At the end I added teaspoon of seasoned salt instead of tablespoon, and my soup turnes great except it's too salty. Any recommendations what to add to make it taste better?

    I made this for Sunday lunch. The family loved it! One question - when I did the quick release, my instant pot became a geyser of mushroom soup. The wall behind my pot was covered in a mist of soup. Did this happen to anyone else? Anyway to avoid this in the future?

      Jeff, I just had to make this today as I happened to have the crimini mushrooms in the fridge, even without the mushroom base, which I'm ordering today for the next time. Oh yes, there is going to be a next time. This soup was pure bliss. Thanks for all your recipes and ideas.

    I was really excited to make this however mushrooms are pretty expensive here in Australia. One batch would have $20 worth of mushrooms. I would rather not make a half batch though. I'm open for ideas to cut the cost. Love your recipes so much

    Hi jeff. U little cutie.
    I made the cream of mushroom soup. I made half he size and i couldn't remember what mushrooms u said so i just gor a bunch out under a tree. LOL no i didn't but i d8d buy whole shrooms. I pretty much done everything else except in not overly in love with thyme so i only used a quarter of it. I made the slurry and boy oh boy i cant wait to make it again.
    BUT first I am going to make your chinese pork tendrloin.. i went out today and got a sake on them. Buy one pack of 2 get second pk of 2 free oh i cant wait to try that.
    U have the greaest voice. Ty so much for taking the time to do these vids
