Cooked your Mississippi Chicken for my Husband's 63rd B-Day dinner. He ate until he was unable to eat another bite. Said it was better than going to a restaurant. Froze the leftover sauce to reuse again next week. Awesome recipe. Only difference was no liquid zatarains, instead bought 4 box's of zatarains boil in a bag. Placed content's of bags in storage container. Added 4 tablespoons in recipe. Yummy!

My husband, who is a Clam Chowder snob says this is way better than any Clam Chowder he's ever tasted. He bought Boudins Clam Chowder for lunch one time and was very disappointed, saying mine outshines Boudin's. Thanks for giving me such a great reputation. Everyone thinks I'm such a great cook. You did it again, another fabulous soup in the Instant Pot. Followed your recipe to the letter with the exception of 1 whole lemon juiced in place of cooking sherry. We had rolled cabbage (Golumpki's), Clam Chowder and salad with sour dough baguettes. The Cabbage Rolls (1/2 beef, 1/2 hot sausage), Mediterranean Stew and Biryani (Indian Rice Pilaf) fed ski team of 4 people for 3 days. All were Instant Pot meals and hits at each meal.
I made this great Chowder in my Instant Pot...We prefer the minced clams to the chopped but that was the only change. Please be sure to add the clams AFTER pressure. If you pressure them they WILL be tough...Thanks for a great recipe, Jeff.
Oh yeah man this is delicious! I have not made it in my pressure cook but I take your recipe and adjust it to make it on my stove top. It is really GOOD !
Just finished it. Rendered a few pieces of bacon, added about 1/4 cup of orange pepper to onion and celery. Think next time, and there will be, I will make my potato dices bigger. Bet fresh oysters would be delicious too. Or a combination. Thanks Jeff.
Made it today and it was excellent. My wife said it could be a little thicker for her. I was thinking about adding a little more butter and flour for the roux. But, the taste was outstanding too me. Very little left over.
I know this post is already 5 years old but I wanted to tell you I'm trying this for my wife tonight and I lived in Ogunquit Maine about 35 years ago. Beautiful place but during the summer the traffic there is unreal.
Love this one as well Jeff ! New to the instant pot but have cooked 7 of your recipes in the last 2 weeks and left compliments on most. I get the basic idea of what to put in the pot and when. I wanted to use a store bought 1# package of seafood mix from a local chain containing shrimp, calamari, scallops & mussels. Used a small can of oyters too, drained/separated and used the oil from the can along with butter to saute the onion & celery. Cooked up the cheap pound of seafood in the IP with a cup of water for 2 mins. I will go with one minute next time (still good, could saute a bit for better results) and added the oysters from the, can, seafood mix and about 4 oz of imitation crab at the end. Otherwise, I followed your formula step by step.
Wanted to add that as a newbie to this method of cooking, you're the most easy to follow along with. Well explained and produced ! No worries, I will just watch and comment, don't have the charisma and camera presence you have to do it myself lol... Glad you are out there and I sure as heck won't run out of new recipes to try !
As a Maniac born and bred, the correct way to make this chowder is starting with salt pork. Render it down, then add your onions, etc. Bacon is a great second option. And we never add Sherry. (Maybe just the fancy folks do! 😉)

I like it a bit thicker but that looks amazing!!! I would also use seafood broth instead of chicken broth because I want that seafood flavor in my soup. I think that I would also add a little bit of sweet white corn to mine too. I know that sounds funny but it would add an amazing flavor to this soup anyway, ya think? Also, please add the Zatarans or the Old Bay seasonings because the chowder will be off the chain with one of those flavorings. Just imagine...
Loved this recipe! My only issue is that by doing quick release, not only the pressure came out of the valve but a bunch of the soup too!!! Any hints on how to prevent that?

Very nice. 1. I didn't know you could buy clams in cans. Obviously, I'm not a seafood kinda gal, tho I did used to like clam chowder before ... 2. I became lactose intolerant. Can I sub soy or almond milk for the cream? I usually sub milk out with no problem, but cream is thicker and I wonder if I'd lose the thickness of the soup with just soy milk?
Hi! You can def sub soy milk but it will not be as thick as with the cream. Luckily, the flour adds to the soup's thickness already so it won't be too thin!

Hey Carlton! The sherry simply adds some wonderful flavor and works VERY well in chowders! The alcohol is very minimal as it's cooking sherry and it will absolutely burn off.
Jeff, at the risk of sounding stupid, how do you serve this to more than one person with out causing a flood? The dog would love it, but me, not so much!

Instead of butter, I render down two or three strips of bacon, chopped up and then take out the bacon and reserve to sprinkle on top of soup.

Excellent recipe! However, not enough clams. I ended up using 4 cans of chopped clams, and it was perfect.
I wish they had more cooking channels with more pressure cookers that aren't instapot,

Fresh clams only! Only tuna in a can. You can also get frozen clams that are good but nothing beats fresh clams. I’m Goyish from New England.
