    I remember watching this video 5 years ago and desperately wanting to make this but I was afraid to waste money on a dish that I'd mess up.
    I saw this video come back to me on my timeline today and now I'm in a place were I can make it and not fear messing up. It's all part of the plan, I guess. Thank you Chef John!!

    This was absolutely delicious! I only had half of a butternut squash because I used the other half to make something else in Friday. I was looking for something to do with the rest and this pops up on my RUclips! I used a sweet potato to make up for the missing half of squash and my husband and I both LOVED this soup. Super easy to make, and delicious. Thanks Chef!

    Toasted squash seeds are so good that it's unthinkable to waste them. Yes, separating the seeds from the pulp is tedious and messy, but if you soak them in salted water for a little while it's a much easier job.

    I've honestly never cared for squash soup, but this looks fantastic! The caramelization on those roasted veggies, straining to get rid of the fibrous bits, the apple cider vinegar! My taste buds can't wait to give this one a try.

    I made this for thanksgiving and it was a huge hit. None of it was left! I will says it’s a lot of energy and time for a soup, so this is definitely not something I would do everyday, but it’s a great soup and I will redo again.

    This looks incredibly silky & perfect. Always thought butternut squash soup would be too complex to try, but I think I could do this! Love how creamy it is without being cream-based too. Bravo, Chef John! Killed it yet again!

    Chef John, Just want to thank you for a very amazing RUclips and recipe food blog. I had a dinner last night with some of my closest friends 6 couples. I built the dinner around some key items starter soup, main meal with various side dishes. I used your recipes for some of the anchor items.

    I did a Chef John with this meal. I wanted a roast turkey breast and, seeing all the gorgeous flavour in my roasting pan, I marinaded my turkey in the butter nut squash drippings. It was awesome. But that's Chef John thinking for you. Delicious.

    I just made this soup and it was delish! 5 stars. Some tips: add a tsp or 2 of apple cider vinegar first, then taste. Add more if needed but you really don't need to.
    Also, if you have a powerful blender like a Vitamix or Blendtec, you do not need to stieve the soup after blending it. It will be smooth and creamy...

    This recipe is bomb.
    I roasted some jalapenos with the other vegetables and added coconut milk at the end. Tastes so good (3 jalapenos is too many lol.)

    Brown butter with sage is so good. The sage leaves get crispy and so delicious. Really good as a sauce for pumpkin ravioli.😋

    I made this and it was absolutely fabulous! But unlike you I didn't have any honey, so instead I added a little traditionally made cider, ( a slightly acidic and sweet liquor ) it worked really well. I will definitely make this again!

    I finally made this! Didn't have sage, so subbed it with dried thyme. And out of cayyene, subbed with 1.5 amount of paprika. And added a teeny bit of nutmeg. It has layers and layers of taste once you add the acv, paprika and nutmeg. Love it! Thank you, Chef

    We made a double batch of this and froze half. I just wanted to let you know this soup freezes and reheats BEAUTIFULLY. Also... this is the ONLY butternut squash soup I've ever liked (it's DELICIOUS!). All other ones I've ever tried taste too much like baby food squash (when you're a mom, sometimes you'll do regrettable things to try to get your child to eat their vegetables).

      I absolutely love butternut and grew a ton in my first garden this year. But I cannot imagine the soup tasting good as I like butternut slightly sweetened. . I like my butternut chopped and roasted with a sprinkle of brown sugar and pumpkin pie spice but I might have to try it since reading your comment.

    Beautiful soup, Chef! Extremely pleased with the absence of cream in this soup (the mark of a lazy butternut squash soup recipe). But I also believe adding some freshly grated nutmeg at the end lifts the flavor a bit.

      +Kristian Georgiev Do you think? I've made this numerous times (not quite his recipe) with nutmeg and I though well too much dessert. I would never add nutmeg for this reason (unless the obvious). Instead, I'd add another herb/spice ... what would you do for this recipe?

    I love this soup and all the appreciate creative and nostalgic comments down below. Glad you like Canadians …. I'm vegan, and honestly don't usually bother replicating meat or dairy, but there really is a vegan crème fraiche that is incredible …. sage is mandatory and the apple cider vinegar was perfect. Made it yesterday; brilliant. Tx from Montreal, home of the 500,000 strong climate change protesters, including our prime minister. Feeling temporarily good, but politics, …. not as reliable as food.

    I did this recipe and instead of water I added coconut milk, and that with the advised maple syrup made the most tasty soup I have ever had! Amazing!

      that's a good idea...i will try almond milk/coconut milk tomorrow when I finish the preparation. I've already made this a few times and it's fantastic. I put mine in the nutribullet. I combine his recipe along w/tips from Laura Vitale's recipe.

    just made this one; I used 2 small carrots and 2 small parsnips, a kent pumpkin, and I put in olive oil and sage powder, (had no leaves), but apart from that, the same recipe. Absolutely a family (of one) favorite. The apple cider really made a huge difference. A beautiful soup. Thanx Chef John!

      a month late but as the butter browns it should have a nutty scent to it, thats when it tends to be done :)

    I've made this twice this month! My new favorite winter soup! Had to use dried sage, and instead of the chili powder you use, I used some powdered serrano chili I like...and doubled the recipe this time. Thanks for sharing this recipe, Chef John!

      Wow, really? You should check out on Facebook a page called Tasty... I made this way too good butternut squash fettuccini Alfredo recipe from them on Friday. They're the reason why I had a squash in the first place. I hate it because it's a super fatty recipe, but dammmmnnnn it was worth it.

      I had one I bought for a dollar at a garage sale. The button on it was broken, so it turned on the second I plugged it in. My husband called it my robotic murder hand. I had it for years until the family had an intervention and bought me a new one. Still miss my little murder arm.

Thousands of us love this guy just as he is, thanks all the same, and he has really helped us to improve our cooking skills. I hope John won't change a thing about his presentation style, and any badmouthers can just go... elsewhere.

      That was the comment I was going to make. I put the chicken stock in the casserole dish and put it back in the oven to heat it enough to deglaze it. Lots of flavor in there. Of course my casserole pan wasn’t an All-Clad :)

    Made this and LURVE IT! I omitted the super long simmering at the end though, cut down to 15min, cos I was too exxited to tuck into the soup. This recipe ROCKS!

    Classic Chef John! Honest, straight-forward, no excuses or embellishment. That's why you're so good. Oh, and I can't fail to mention your sense of humor -- at times a little corny, but I never fail to laugh.

      I was just thinking that. Amazing video, amazing recipe... voice-over is... meh. Wish I wasn't focusing on that, so trivial. But there you have it.
      It kind of distracts from the squashy goodness. Food for thought.

      wow very dramatic, you also can voluntarily leave the country. Also I'm sure that is not the only thing you hate in the world, there are many petty things that I get annoyed by it doesn't mean I am butt hurt over it. Also don't take "hate" that literally in my comment, it is more of an annoyance than a hatred but sometimes figures of speech have different intentions.

      I feel the same way! He is the only person whose recipes I try and are GREAT every time. I hope he releases a book some day that I can buy and handover to my daughter someday, as all the food my family love from me are his recipes.

    That sage infused browned butter is incredible! (I licked the spatula - whoa!) And those caramelized carrots and onions are so good (not to mention the squash), you could stop at this point and call it a meal.
