I've noticed that I digest them very well. I've been growing them from seed in an Easy Sprout container for about the last 7 weeks (Amazon). We start eating them after about 4 days and they are gone by day 7. I never put them in the fridge. I just take out what I want to eat and let the rest keep growing. Soak, stir and drain twice a day. I think I am going to get another container, so that we have sprouts all week long. Also, I soak them in 158 deg water for 10 minutes to increase the sulforaphane.
