    How long did the steak take in the oven and was it cooked on convection setting? Great video 👍

      About an hour for this one on convection, was about 2lbs!

      Yes but no more that 40% humidity

      @@coreybsiegel just tried it. 30% humidity to 46 Celsius and then finished off on the Teppanyaki. Awesome, best steak ever. Thank you.

    I know you said until.it gets to 115f intenal but how long does that take approx 15mins?

      About 1 hour for a big tomahawk like that

      @@Jonnydoescarnivore my pleasure! It’s a slower method to get very even cooking. That steak is about 2.5 inches thick

      It’s called a combi oven, there are home versions but this one is for professional kitchens

    One thing no one tells me enough info about is the searing process e.g. what temperature how long each side when to use butter as I'm a beginner I got no clue how this works.

      Use animal fat or oil in a hot pan ( cast iron works amazing to hold in the heat) you should see a light translucent/ almost white smoke come from the pan then add on the steak. Maybe 1 minute on each side or until there is a nice golden brown then flip, when you are about 30 seconds from removing from the pan, add in your butter, shallots, garlic and herbs to baste it for about 10 seconds then take it out of the pan onto a roasting rack to rest before slicing. Hope this helps!

      Hi there good sir... the question is about the temperature.... at some point the butter burns and it becomes this black goo with bad smell/taste. On the other hand we need high heat for the crust to form... so how hot do we make the pan?​@@coreybsiegel

      @@eranliber5993 the pan should be hot hot, and you want to use beef fat or oil with a high smoke point to sear the meat, the butter should just be for finishing. Once the meat is ready to be basted, pull it off the stove and add the butter and herbs

      @@andyhawaii2819 which part? Would love to help. Steak goes in the oven for about 1 hour to slowly cook then finish on the grill and let it rest for for 5 minutes before slicing
