I can honestly say you are the ONLY vegan person that I’ve seen make dishes that consistently make my mouth water. I swear I can smell the aroma thru the screen when you’re cooking. So flavorful! I hosted a dinner party last night and cooked the butterbean stew and the 'Lack of shepherds' pie ... accompanied by home made bread and green beans. Absolutely fantastic !! It went down a storm to a table of 5 guests - all meat eaters!! Finished off with homemade vegan, gluten free brownie !! Yum yum yum Sitting here the day after, nursing a tiny hang over, eating leaf over bean stew AWESOME ! Thank you Rachel for sharing your culinary delights !!

My family and I watched What The Health and my dad (a hardcore steak lover) decided to go vegan for 2 weeks and the entire family joined! I've always been vegetarian, wanting to be vegan, but my parents didn't want me to. So happy to start the year like this!

A Shepard pie Irish tradition is to serve it with boiled eggs. A vegan options is to stuff whole mushrooms soak in pickle juice and black sea salt dry off fill with mashed chick peas seasoned with black sea salt for egg taste vegan mayo pickle relish ,paparika, dill seasoning and black pepper.
You probably won’t see this, Rachel, but the second recipe is actually a family staple here nowadays. It’s extremely quick to make, cheap (especially if you opt for frozen baby spinach!), nutritious and just sooo good! Even my suuuper picky six year old proclaimed that it’s her new favourite dish the first time she ate it and requests it all the time. We’ve had it with rice, jacked potatoes and tortillas and it’s delicious whichever way. Thank you so so much! Your channel is probably the best vegan channel on YT!

I went vegan just over a month ago but got so bored with the repetitive foods I was eating, I was just about to give up and then I stumbled on your channel! Honestly, you are a life saviour and so creative with your meals! have already made the dishes from 'what i eat in a day when sick' and love them! ( also my friends did not even notice that the gnocchi was a vegan dish!) As a suggestion, maybe you should do a series of veganising some popular foods by country? ie Indian, Chinese, Italian, French, Russian etc etc that would be very interesting to see+ give plenty of ideas for main dishes! Keep going with your work you are great!

I know this is a little over a year later but I saw this video with the vegan shepherd's pie and tried it myself. I did tweak some of the ingredients a bit because I didn't have your recipe handy when making it. I used lentil instead of quinoa and other grains. I also had chopped up mushrooms and left some just sliced for a variation of textures and added a cup of frozen peas. The red wine really sets off this recipe along with a little browning sauce I added to the mix. It was so good and so filling. We are not vegan in my family but do participate in Meatless Monday for now until we add a few more days of the week. My whole crew loved this and asked for it again! I've taken quite a few ideas from your videos and they are always so delicious and always asked for again!
I love that all of these recipes didn't include meat substitutes like tempeh or plant based "ground beef"! I am not vegan but I don't eat a lot of meat and I have a hard time with meat-like substitutes. I much prefer the veggies and legumes on their own. Thank you for these!
You prob won't see this comment, Rachel, since its an older vid, but I want to share a flavor combo I made up that involves ginger! Your recipes are awesome and you don't need any help but you mentioned ginger is your fav, so that's the only reason. I made an apple gallette with homemade flaky crust, very rustic in that sense, but I did NOT use cinnamon. I used 3 varieties of apples, ginger and fresh ground nutmeg, well and of course sweetener that doesn't over power. The result was an incredible flavor sensation that cinnamon usually hides. Plus it was so delicate (if you get the loose juice to firm up a bit) which is quite the juxtaposition to a rustic approach. Please let us know if you ever try it!!

I love all three of these meals! Stir Fry is my go-to meal for busy nights. I'll prep any weary looking veg and store them in the fridge for salads, stir fry, soups.....Bean dishes are a staple in my house. This stew looks amazing! Shepherds Pie is great, if I'm feeding a crowd or need food for a time when I lack ambition...oy! Thumbs Up!

I made the stir fry and the beans they are trully filling been vegan for a month now I can say the only hard time I had was the first week where i had no idea what to cook and lost so much weight due to pure laziness but kept going the preparation time is so quick aswell no dissecting nobody to eat a meal is definitely a goal

I made a Jaime Oliver version of this shepherds pie recently but I think your version looks so much tastier!! I love that you used mixed legumes. I added a tablespoon of marmite to my base mix which was absolutely amazing!!
now these are tasty! I have already tried a couple and I have to say this is my fave vegan chef. I need flavor and these pack a lot of flavor! Also, her skin is everything so glowing. Must be all that healthy eating!

My wife is vegan and been vegetarian since birth. I am not but being a nurse I clearly understand the benefits of consuming little to no meat especially as one ages. My wife have been pushing me to be vegan to no avail lmao. She try hard but she still trying to figure her way around the kitchen. She is a sista in need of a sista, your food look so good and your use of spices and herbs fits my taste bugs wells. I would love your help, like come to Huntsville and help lol. If you have a sturdy whisk use that, and then get cathartic. I like to say my mashed potatoes were not mashed with love but beaten with rage.

My wife is vegan and been vegetarian since birth. I am not but being a nurse I clearly understand the benefits of consuming little to no meat especially as one ages. My wife have been pushing me to be vegan to no avail lmao. She try hard but she still trying to figure her way around the kitchen. She is a sista in need of a sista, your food look so good and your use of spices and herbs fits my taste bugs wells. I would love your help, like come to Huntsville and help lol. I know that may not be possible but is it anyway to learn more?
