In this video, I take a close look at "Ginchiro", a restaurant in Wakayama, Kishu, famous for its moray eel cuisine!
This time, they processed the biggest moray eel in the fish tank, a 5 kilogram class moray eel.
The technique introduced in the video, "lkejime," originated in Japan, where the fish is immediately killed (brain-dead) and bled to prevent decomposition of the flesh and keep it fresh longer.
"Shinkeijime" is a technique that has recently been gaining attention in Japan, where a special wire-like device (piano wire in this case) is used to destroy the nerve bundles (spinal cord) that run along the upper middle bone of the fish.
This is said to prevent the fish from becoming violent or stressed, to prevent the loss of ATP (the source of energy and flavor in fish), and to prolong the time when rigor mortis begins.
From a religious point of view (Islam, veganism, etc.), people from overseas may think that such a method is cruel and inhumane, but it is a necessary technology to make raw fish such as sushi and sashimi, which the Japanese love, more delicious, and this technology for handling fish meat is unique to Japan and is still evolving.
We eat and live with gratitude and respect for all life, be it animals, fish, or plants, without distinction.
Not everyone, but many Japanese people seem to have this kind of thoughts, ideas and philosophy.
As for the taste of the moray eel dish, it was not a ghetto dish, but a refined and elegant taste like a blowfish, and the meat was surprisingly tender.

It surprises me how calm this eels is when it is taken out of the water and gets prepared to be processed. I sometimes catch them by accident when going fishing, and usually they struggle very badly and are a nightmare to dehook.

Morey eel is a saltwater long fish it has to come up to breathe oxygen and yes it can be used as food. However its more of an unscale fish like catfish rather that a fish with scales.

1.吊るした時点で魚体は生物学的には死んでいる
2.完全に心停止させない理由は、丁寧に血抜きしたほうが美味いため(これは狩猟でも用いられる技術)
3.ウツボの血液には毒がある。加熱すれば無毒化するが、今回のように生食する場合には徹底した血抜きが必要

Man. I know that the eel is dead at the first cut, but it’s still so haunting seeing it thrash around and move so much like it’s deliberate.
I have to say though, the meals made from it certainly look delicious. In the end, maybe that’s how I find peace in it. Knowing that the eel was given enough respect to have been cooked well.

They did cut the head off lol, they severed the spinal cord. Cut it completely in two. If they cut the head completely off, it would've been difficult to hang to let the blood drain. But that eel didn't feel any pain once it's spinal cord was cut.
The brain had no way of sending pain signals to the body, and the brain had no way of receiving oxygen. So even if the animal was 'alive' after it's spinal cord was cut, which is highly unlikely, the lack of oxygen would've killed with. It literally couldn't feel any sort of pain.

The fish was dead when its brain was separated from its body, when you see it wiggling around its just the nerves going on, like anything does when its killed. Sever your own spinal cord and tell me if you suffered. You wouldn't be able to cause your dead just like the eel. And the eel is moving because the nerves are still being fired and trying to send signals to the brain. If you sever the spinal cord like the chef did in this video it cuts off ALL COMMUNICATION between the brain and the body which means it can't feel it.
the nerve signals travel from the body to the spine until they reach the brain, where it becomes pain, when it is cut off that flow stops completely and therefore the signals do not reach the brain. In short, no pain, just spasms

This was probably a moray or conger eel, since they are the only eels which have pectoral fins that earrings could be attached to.

Fascinating. Thank you. However, I find it extremely unlikely that they would be moray or conger eels. They are both saltwater eels. Hard to see them survive for a long time in a freshwater pond. On the other hand, all eels have pectoral fins. Freshwater eels have them too. I do not see why large freshwater eels could not have earrings attached to their pectoral fins. Could you share your source? Thank you again.

Why not just cut the head completely off. Then you know it's dead and can't feel anything. The Chef processes it right away, so I don't see any problem (less fresh) with immediately killing it.

this looks like torture i know, even the say it wont feel more pain because brain damage i doubt it, and this way is to keep it alive the longest time possible, you can see the flesh still convulsing when is in the plate, i gues this is why they dont kill it fully since beginning, but i dont know how much is worth it a dish like this fresh at cost of the suffering of the animal, i would not eat or buy this dish.
It's very considerate of the eel to make its organs brightly coloured, so the chef knows which bits to cut out! 😆

When the first knife hits, the eel was immediately killed. The reason why it was still moving was due to the neural reflex. The cells are still not dead thats why the body was still moving.
By destroying the nerves with wire, the freshness and taste of the meat can be maintained.
Although it looks cruel, the moray eel was already dead when its head was cut off. The vibration is a nerve reflex caused by the insertion of the wire. This method is commonly used in Japan for high-grade fish. I often see this technique at the fish market in my neighborhood.

Even though (with subtitles) the video clearly describes the process, why it's used and how effective it is at humanely dispatching the animal. A lot of people still seem to think that the animal is 'alive' and sensitive to what's happening after that first chop. All of the twitching is just involuntary muscle movement as the nerves begin to fail, but this eel is not in any pain, it's basically dead after that first cut. Think of it in the same way that a human heart can carry on beating after a traumatic brain injury. In that scenario the person is dead, unconscious and in zero pain, but the heart can carry on for a while. This animal is dead, but the rest of it's body just hasn't caught up yet.

People who think it's still alive when he puts the wire down the spine are wrong it's just nerves. Same thing with a person or any animal with a nervous system. You can cut the head clean off and 30 min later hit certain nerves with something and it will make the muscles tense up and move around but you are dead you don't know and can't feel a thing. It's pretty amazing how the nervous system works and the skills these guys have in preparing this is incredible in itself. They make it look so simple and they don't let much go to waste
