I'm not like you, on that I love cooking for one! I have a small appetite, and I make sure that my food is nutritious. I'm small, too, so I don't need much, but I do eat great food, simple, high quality, usually from raw ingredients. I'm 85, and still luckily feeling well. I live alone, frugally! And happily. Single for many years, such a luxury, just pleasing me.
Good for you! Sounds like you are happy, which is the most important thing. Lol, cooking has never really been my thing. I can cook well, I make great bread and I took a diploma in holistic nutrition a couple of years ago just for fun, but I still struggle to get excited about it. I have developed a good repertoire of some yummy and healthy meals, and my goal is to share those on my channel with people that are in the same position as myself… that is they struggle just for themselves or for two people.
I always saw cooking as a duty, and after 25 years of cooking for a family of 5, that was enough thank you very much 😂 I’m I’m also 5’ & a healthy weight. I eat largely Keto and within a 10 hour window. Black coffee with collagen in the morning then brunch around 12-1pm. Usually avocado & eggs with masses of salad veg + seeds, ferments, seaweed etc. Dinner is a source of protein (meat, fish, halloumi and a huge plate of at least 4 vegetables. No potatoes, pasta or rice. An alternative would be a veggie casserole/chilli made to last 4 days. Bed of kale or similar, not carbs. Wouldn’t suit everyone but suits me 👍🏻
Omg! I’m 4’11” and slim too! I can confirm that it can much easier to gain weight as a tiny person. I also keep my diet simple and healthy. I have come to enjoy growing vegetables. It’s a relief knowing how it is grown. I’m 51 and basically retired. I’m legally blind. I’ve spent a good amount of my time contemplating many of the topics that you address on your channel. I don’t have children. I haven’t figured out a “path” to employment with my eye disease. I’ve had to learn new skills and hobbies. Like you I’m focused on how I can have a great life and choose not to focus on things I can not control. 💗

Omg, thank you! I don’t know what happened! Maybe there is a lot of folks my age and they’re looking for their counterparts on RUclips. Now I feel pressured to keep improving. Someone mentioned my lighting is not great! I don’t know how to fix it!!! These are like the only videos I have ever done so the learning curve is steep.

One other thing about the bowls... I recently bought a soup cozy and I love it. It's a quit type material that holds in your bowl and keeps your food warm and allows you to carry the bowl to the table without burning your fingers. I just love it.

Noooo not a bowl! A bowl is for soups and spoons! LOL sorry my pet hate at restaurants is to be given food that needs to be eaten with a fork, in a bowl. So interesting to see what other people like! :)

I don't like breakfast either, until about 10am. I also love my 1 cup of coffee each morning. I'm a big salad eater. Smoothies mostly in hot weather, I add hemp seed and flax seed before I finish blending. My lunch is always larger than my dinner also. I make sure I finish eating at least 3 hours before I go to sleep at night. I'm a new subscriber. Thanks for the video.
This is the kind of food that I make for myself as well. I have been putting off buying an air fryer because I just didn’t think I needed one but after watching you I realize it would be a great thing for me. I live alone, also. If I cook something that takes a lot of effort, I will make a batch of it and freeze some for later meals. For instance, I made goulash and I had enough for another eight servings.
I don’t enjoy cooking but I definitely enjoy eating and it shows. Now that I’m almost there, maybe knocking at the menopausal door..maybe I’m there already because of the weight gain, hair falling out/growing in places , hot flashes, memory lapses, insomnia and ohh the achy joints/pains it’s difficult to lose weight. I need to learn to eat more protein packed smaller meals. ❤ Another great vlog 😊

Yay! I was hoping to find “solo living meal prep” on your new channel & hope you’ll keep ‘em coming! I’ve never had an air fryer but Id like to learn more about how it works and clean up, to see if it’s something I’d use. Right now, I use a toaster oven, microwave, or stovetop for most of my cooking. I just bought my first tofu and need more detail on how to prepare it. There were so many different kinds to choose from. I think I got the extra firm. Like you, I love, love, love coffee! I don’t usually get hungry until after my morning coffee time, around 9 or 10am. My “Mr. Coffee” is at least 10 yrs old and I program it to start brewing at 6am. The delicious aroma is so wonderful to wake up to and makes me feel like there’s another person in the kitchen making it (tee hee). I drink a large glass of water first, then settle down with a cup of coffee, electric cup warmer by my side, and sit next to a big window where I can see people out walking their dogs (or themselves), and where squirrels and birds are chasing each other around. I enjoy the view, sip my coffee, and gently ease into another day of “simple living”. I do lots of different things- when the urge strikes, and at my leisure. And I am grateful for having the luxury to live a life that’s simple, tranquil, & peaceful. Back to meals, after breakfast, my other meal times vary greatly depending on where I am and what I’m doing. I try not to eat anything after 7pm (to avoid acid reflux🙄). Love your subject matter, and I’ll be watching for more of your retirement lifestyle videos!

And also a lot of retired folks just have a tough time scaling down their cooking to one or two people because they’re used to cooking for a family.

Loved how simple your meals are. As someone in my senior yrs and being only 5’1” I tend to not eat large and focus on healthy simple meals as well. Looking forward to following your meal plans in the future. 😊🥗
I have to say that I get a lot of recipes online, I tend to make up a lot of my own recipes, but my favourite cookbook is a very old cookbook that I purchased years and years ago, and it’s called Frugal Feasts. It’s written by a ballerina, and her name is Mary Spilsbury Ross. All the recipes in the cookbook are very inexpensive to make, don’t require a ton of appliances and our perfect for one or two people. The recipes are from all around the world, and she learned them while she was travelling with a ballet troupe. That is why they require minimal tools, because she did not have a lot of tools while staying in tiny little hotel rooms.
Lol, I am so laughing at this. I have been known to like literally buy salad in a bag. Pour the dressing into the bag and eat the salad out of the bag. I just started realizing I need a second breakfast. If you workout in the morning this is especially a good approach. More small meals and snacks works better for me than fewer large meals. I'm also really petite and can only eat so much at one time. People judge but I don't care. I eat to feel good and satisfy my senses.
Wow. Nice. We are equal on this. I use almost all these ingredients including Diesel protein. lol. Great! I am also small 5’1” Love bowls too. Not a plate person.
I love to cook Do a menu for yourself it’s the best. 2 protein & do sides like baked potatoes have that ready and some carrots steamed kale sautéed, beets, grilled, and maybe some vegetables that you like in a container. And of course, some rice or quinoa so you can mix and match lunches and dinners .

I also try to keep a simple diet for my husband and I. I always have basic salad fixings, vegetables fresh or frozen in the winter and some protein. I donated all my cookbooks and all the specialized cake pans and cookie cutters.

Wow, your lunch is like Korean style. We Koreans like to eat dubu(tofu in Korean) with soy sauce, sesame oil, a bit of chopped spring onion, and some red pepper powder^^
Love the foodie video..I would not be able to use the recipes as I am reducing my chronic inflammation and a lot of the foods you are using are not suitable.. that said loads of great points.. I have had MS for.20 years and only just found the diet link information 😮
So much of this obsessive fixation with eating and being afraid of calories or gaining weight. I love to cook for myself and eat a big variety of foods, thin people get old and die same as big people. Just try to enjoy life.
Not all food that use to be nutritious is still nutritious. It’s her channel and she can put whatever content she wants on here. My husband doesn’t watch calories and he had a massive heart attack at 67. Weighed 206 at 5’4”. Calories DO matter. Some people are gluttonous

Thank you I really try to make most of what I eat fairly simple and healthy. I actually did go back to school the year before I retired to take a diploma in holistic nutrition. Kind of a dumb move on my part because it was really hard and with working full-time at that point it was crazy! But now I enjoy having the knowledge. And it was a good switch up from being a corporate finance girl.

Yes, I know exactly what you mean. Some days it is more difficult. I’m definitely an introvert and my alone days are what I love the best. But even an introvert has to see people every now and then.😀
Wow, I'm surprised to find that our daily meals are quite similar! The biggest difference is that I eat lots of salmon (the only animal product I eat) as an alternative protein to tofu. I couldn't believe how similar your tofu marinade is to mine! 😄
At 63 I try to eat healthy. I like to keep my weight down even though it seems my body wants me meaty, I fight it. Great snacks for night time. Thank you
I do batch cook as I am plant based no oil or added salt. So my freezer is full. I make my own ketchup and mustard without all the additives. Also I eat raw foods which is so easy . No cooking
They are by a company called BIA Cordon Bleu International. I purchased them here in Calgary at a local store called Edelweiss. But I think they actually have a website. Usually like higher-end kitchen stores will have them.

I love every single one of these meals right down to the choice of bowl over plate! 😊 Your layoff story resonated with me ... I was laid off at 59 yo but fortunately I spent the majority of my career as a consultant so i "just pivoted" back to my roots. Took 2 years after my pivot to find a few good client fits, but I am now back in the game for a few more years until my youngest is settled in college and my oldest is settled in his post graduate life.

I’m glad that you were able to pivot and go back to what you had done previously. Being able to run your own business or your own consulting firm is just so empowering. Oof, I have no idea, I just picked the style and my contractor found them in a local cabinet store. I know IKEA sells similar. They are truly nothing special. There is a brand called Top Knob that carries the same pull and it’s their Mercer Collection - I think that may be what I have. Home Depot has a an almost identical pull by a company called Richelieu. Mine are in a brushed silver nickel.
I’ve never fixed tofu before. There used to be a restaurant in my town lovely tofu salad, but they went out of business. I’d like to try your recipe in the air fryer. Could you tell me what temperature you set it on and how long you had it in the air fryer? I just found you today and you have a lovely channel. Keep doing what you’re doing.
I do the tofu in the air fryer at 400°F. I do it five minutes on one side, then flip it and another five minutes on the other side. So 10 minutes in total, hope that helps.

lol not of Finnish ancestry but am from what used to be Czechoslovakia, then became the Czech Republic and now is Czechia…I think 😂 when we lived there my parents had the typical 60s mid-century teak furniture, most of it from Denmark. So I guess I have a preference for that Scandi look. And I like things spare.
I just use a Cosori from Amazon. It’s the smaller sized one. I am happy with it…it pretty much does what I need it to, though I don’t really do anything complicated in it.

I'm 79 (how did THAT happen? - still 37 in my mind) & love my rim soup bowl for pasta, salad, soup, stew ... Keep going ;-)
I also don’t like to cook for myself. Here in the US, we have Meals on Wheels for seniors and that’s where I get my meals Monday-Friday. Mostly, they are good. At least they’re prepared fresh every day and don’t have preservatives. I’ve now caught up on all your videos. Great content and great job with filming and editing.
This by 2nd video. It was just what I needed. I'm 5'1" 71yo still a Canadian but live in USA from 5yo. I'm going to work on my diet to lose weight. Love your suggestions, and will buy a air fryer soon. Question -- What olive oil do you use, there are so many choices, and price doesn't mean it's good. I like tofu but don't know how to cook it. I use the olive oil from Costco. It’s actually pretty good. The brand is called Terra Delyssa. But any good quality olive is fine. I use avocado oil for my stir fry.
is there a protein powder that is your favorite ? I have never tried a protein powder and think this is a great way to get my nutrients at 64 and I do not eat a lot of meat anymore.

I drink a large glass of water first, then settle down with a cup of coffee, electric cup warmer by my side, and sit next to a big window where I can see people out walking their dogs (or themselves), and where squirrels and birds are chasing each other around. I enjoy the view, sip my coffee, and gently ease into another day of “simple living”.
I do lots of different things- when the urge strikes, and at my leisure. And I am grateful for having the luxury to live a life that’s simple, tranquil, & peaceful.
Back to meals, after breakfast, my other meal times vary greatly depending on where I am and what I’m doing. I try not to eat anything after 7pm (to avoid acid reflux🙄).
Love your subject matter, and I’ll be watching for more of your retirement lifestyle videos!

And also a lot of retired folks just have a tough time scaling down their cooking to one or two people because they’re used to cooking for a family.

I have to say that I get a lot of recipes online, I tend to make up a lot of my own recipes, but my favourite cookbook is a very old cookbook that I purchased years and years ago, and it’s called Frugal Feasts. It’s written by a ballerina, and her name is Mary Spilsbury Ross. All the recipes in the cookbook are very inexpensive to make, don’t require a ton of appliances and our perfect for one or two people. The recipes are from all around the world, and she learned them while she was travelling with a ballet troupe. That is why they require minimal tools, because she did not have a lot of tools while staying in tiny little hotel rooms.

I just started realizing I need a second breakfast. If you workout in the morning this is especially a good approach. More small meals and snacks works better for me than fewer large meals. I'm also really petite and can only eat so much at one time. People judge but I don't care. I eat to feel good and satisfy my senses.

2 protein & do sides like baked potatoes have that ready and some carrots steamed kale sautéed, beets, grilled, and maybe some vegetables that you like in a container.
And of course, some rice or quinoa so you can mix and match lunches and dinners .

I also try to keep a simple diet for my husband and I. I always have basic salad fixings, vegetables fresh or frozen in the winter and some protein. I donated all my cookbooks and all the specialized cake pans and cookie cutters.

Not all food that use to be nutritious is still nutritious. It’s her channel and she can put whatever content she wants on here. My husband doesn’t watch calories and he had a massive heart attack at 67. Weighed 206 at 5’4”. Calories DO matter. Some people are gluttonous

Thank you I really try to make most of what I eat fairly simple and healthy. I actually did go back to school the year before I retired to take a diploma in holistic nutrition. Kind of a dumb move on my part because it was really hard and with working full-time at that point it was crazy! But now I enjoy having the knowledge. And it was a good switch up from being a corporate finance girl.

Wow, I'm surprised to find that our daily meals are quite similar! The biggest difference is that I eat lots of salmon (the only animal product I eat) as an alternative protein to tofu. I couldn't believe how similar your tofu marinade is to mine! 😄
At 63 I try to eat healthy. I like to keep my weight down even though it seems my body wants me meaty, I fight it. Great snacks for night time. Thank you
I do batch cook as I am plant based no oil or added salt. So my freezer is full. I make my own ketchup and mustard without all the additives. Also I eat raw foods which is so easy . No cooking

Your layoff story resonated with me ... I was laid off at 59 yo but fortunately I spent the majority of my career as a consultant so i "just pivoted" back to my roots. Took 2 years after my pivot to find a few good client fits, but I am now back in the game for a few more years until my youngest is settled in college and my oldest is settled in his post graduate life.

I’m glad that you were able to pivot and go back to what you had done previously. Being able to run your own business or your own consulting firm is just so empowering. Good for you for having the courage to do that, because running your own gig, I think does take courage.
I cannot function or talk any sense until I have that breakfast coffee and toast when i get up. After that i am somewhat human and ready for my day.

Oof, I have no idea, I just picked the style and my contractor found them in a local cabinet store. I know IKEA sells similar. They are truly nothing special. There is a brand called Top Knob that carries the same pull and it’s their Mercer Collection - I think that may be what I have. Home Depot has a an almost identical pull by a company called Richelieu. Mine are in a brushed silver nickel.

I’ve never fixed tofu before. There used to be a restaurant in my town lovely tofu salad, but they went out of business. I’d like to try your recipe in the air fryer. Could you tell me what temperature you set it on and how long you had it in the air fryer? I just found you today and you have a lovely channel. Keep doing what you’re doing.
I do the tofu in the air fryer at 400°F. I do it five minutes on one side, then flip it and another five minutes on the other side. So 10 minutes in total, hope that helps.

lol not of Finnish ancestry but am from what used to be Czechoslovakia, then became the Czech Republic and now is Czechia…I think 😂 when we lived there my parents had the typical 60s mid-century teak furniture, most of it from Denmark. I just use a Cosori from Amazon. It’s the smaller sized one. I am happy with it…it pretty much does what I need it to, though I don’t really do anything complicated in it.

I'm 79 (how did THAT happen? - still 37 in my mind) & love my rim soup bowl for pasta, salad, soup, stew ... Keep going ;-)
I also don’t like to cook for myself. Here in the US, we have Meals on Wheels for seniors and that’s where I get my meals Monday-Friday. Mostly, they are good. At least they’re prepared fresh every day and don’t have preservatives. I’ve now caught up on all your videos. Great content and great job with filming and editing.

Love your suggestions, and will buy a air fryer soon. Question -- What olive oil do you use, there are so many choices, and price doesn't mean it's good. I like tofu but don't know how to cook it. I use the olive oil from Costco. It’s actually pretty good. The brand is called Terra Delyssa. But any good quality olive is fine. I use avocado oil for my stir fry.
My dr told me 1200 calories. I’m 5’5 and gained 60 pounds. I was doing over 2000 calories because of my soda habit. This is helpful

is there a protein powder that is your favorite ? I have never tried a protein powder and think this is a great way to get my nutrients at 64 and I do not eat a lot of meat anymore.
I use Diesel. It’s the only one that doesn’t upset my stomach.
