German potato pancake looks like a fantastic feast to have on a Sunday morning after a night of strong beverages, egg, and herring roll mops.
I remember back in the days when I used to have something similar to this. We always had it on a Saturday morning while we watched the mice scamper in and out of the mouse cupboard. It really was a fantastic time, there was no internet or cure for polio.

Hi, Kay! I've had German potato pancakes when a local restaurant here does German dishes for Octoberfest. They're an option as an appetizer for this place and served with applesauce to spread over them as a topping. I know you're not big on sweet things, but you might want to try it (you can get applesauce without added sugar). It's really good.
Maybe use a little less oil and/or turn down the heat a little to prevent spitting. We don't want you to get burned. 💕

Got a recipe for you. Hotdog Enchilada. What you need is:
    1 package of hotdogs.
    1 package of tortillas.
    8 cups of cheddar cheese.
1 large can of chili con carne.
Open chili and pour it into a large mixing bowl. Open the hotdogs and cut them into even small pieces. Pour into the mixing bowl. Take 4 cups of cheddar and mix into bowl contents. In a 9x13 baking pan, put your tortilla down overlapping each other by half. Spoon in the mixture and roll the tortilla. Repeat until all tortillas are filled. Pour the remaining mixture on top of the tortillas. Pour the remaining cheese on top. Bake at 425°F(232°C) for 30 minutes. Remove from oven and allow to cool. The mixture is HOT!!! Serve on plates. For ease of serving, use a stiff spatula. Garnish with hot sauce to taste. This fed me many times while I was in college.

In Jewish cookery these are called potato latkes. They're eaten during Hanukkah with applesauce and sour cream, or just plain. When I make them, I salt the grated potatoes, let them sit for a while then put them in a cloth and squeeze all the excess liquid out. They're crunchier like that.
If anyone wants to make these but can't eat egg, you can use gram flour (chick pea flour), just mix a couple of tablespoons into the potato, with plenty of salt and pepper and leave out the egg and plain flour, but for this version, no need to salt and squeeze potatoes.
    Happy cooking everyone!

@@KaysCooking Hey Kay, I found allergy tablets from the doctor completely wiped me out and made me exhausted. I buy local honey from someone nearby who keeps bees and make nettle and mint tea with a teaspoon of local honey instead and it works better than the tablets.
I hope you feel better soon, you seem really down.
      Big hugs fabulous lady X
