    Just made this and it was indescribably delicious . I found it faster and less messy to not bisect the lasagna noodle but apply ingredients as described to a full width noodle then cut it in half after it’s rolled ... like a cinnamon roll... so good!

    When I use mushrooms I marinate them in tamari and olive oil for a while before cooking. Draws out the moisture and a deeper flavour too.

    made this for a big gathering, and the effort for making this totally payed off! all my friends, vegan and not, LOVED this dish! A treat for the eyes and belly! the bread crumbs added that little extra oomph to take it over the top and all the flavors worked so well together!

    Made this last night and it turned out awesome! Last night was a test run for what I might bring to Thanksgiving dinner. I'm bringing Rotolo ;)
    A few notes I made:
    1. I think under-cooking the lasagna sheets would help with making them easier to work with (I used gluten free sheets. Soaking doesn't work for this particular brand).
    2. I ended up with quite a bit of extra Ricotta. I just poured it over the top and put the breadcrumbs on top of that. It looked and tasted fine.
    3. I made a rookie mistake by pureeing the wilted spinach into the cream sauce... it turned green. Tasted great, but visually, looked a bit off. I told my wife we were having a St. Patty's Day themed Rotolo. haha
    4. When I make this again, I'm going to salt the ricotta cream a bit more and maybe add a little more garlic powder.
    5. Be sure to cut your mushrooms thin enough. The larger pieces can have a bit too much "chew" to them.
    This was a fun one, guys! Gonna keep it on rotation, for sure! Thanks!

    That looks awesome; I can't wait to try it. You can make the mushroom step easier by using much higher heat and starting with the mushrooms. Because they'e so moist, they can take high heat. The moisture flashes off, and you get a Maillard reaction without needing to press them with a pan. Then lower the heat and add onions. Thanks so much for the recipe.

    This is probably the first recipe of you guys that I will recreate. Usually I like to watch your videos to get inspired and when I cook I sort of wing it (just like you do).       Virginia Donnelly I know you hate mushrooms.
      But...
      They say it takes ten times of trying something you don’t like before your body changes its preferences and starts to crave it. This happened with both of my children who used to hate onions and mushrooms. I kept at it and now they both love them!
      Mushrooms have such amazing anti-cancer properties. Might be worth the experiment! 👍🏼

      I used to hate mushrooms but overtime introducing them to recipes in small quantities I eventually came to love them.

    Brilliant parody of what good cooking should be. Great job guys for taking the Mickey out of centuries and centuries of culinary art... I loved everything in this video from the way you wrongly pronounce the name of your dish (...you will find it's actually stressed on the first syllable: ròtolo) to the list of ingredients some of which are not necessary if you don't have them...but what really takes the biscuit is when you say that you put pesto in your passata just to add "calories". Please keep going and in the meantime stir away from any sort of food preparation!!!!

    I tried this and it’s delicious! Though I’ll probably make it more like a traditional lasagna since rolling is messy and is harder for me to eat. Love your videos since half the year I’m vegan and don’t know good recipes :)

    Just in case anyone else makes the same mistake I did...... don't dry the pasta sheets with kitchen roll.... it sticks really well and then breaks up into little bits 🙈

    When you put salt in the water to flavor the pasta, do you put the salt in before or after the water is boiling? Or does it matter?

      Better to put it in once it's boiling (or near boiling) so that it dissolves quickly. Salt crystals sitting in the bottom of your pot can damage it (even stainless steel will pit).
      You'd have to be doing it a LOT to notice, but if you have a choice, might as well do it once boiling.

      Oh no! I made this dish last night and forgot to take a photo!!😂😂 it took me over an hour to get in the oven and with three little grandchildren waiting for dinner.... I think this meal needs to be prepped and organised earlier in the day. The taste and flavours were divine... need to give this another go when I’m not time frenzied ....what a messy job though!

    I'm thinking of rolling mandolined courgette instead of lasagna sheets. Do you think this would work if I laid them on kitchen roll to soak up excess moisture?

      Courgette would go soft in the oven. Eggplant is a better bet...

    Great dish to bring to Christmas lunch this year !! Only one question, due to having to cater for a guest who has a nut allergy, how can I make the ricotta without nuts. Does anyone have a good tried and tested recipe ??

      You probably need to make it around sunflower seeds or tahini - it won’t be as creamy and colour will be a bit greyer - but that’s what we would do - you’ll need to play with it a bit - good luck with it 🙏🏻👍😊

    Last Christmas I made a chestnut and mushroom rotolo for the vegans, the sauce was a bit grey ngl but everyone actually really liked how it tasted 👍

      A white sauce ( bechamel sauce) should work equally well if well seasoned and herbed. Tomato sauce would have an acidity and sweetness which probably gives it an additional dimension

    My son has a severe allergy to cashews...can I substitute almonds or sunflower kernels? Love your videos!!

      My child has a severe allergy to nuts. I have usually substituted the richest seeds I can; pine nuts are pretty rich, pumpkin and sunflower. Not quite the same as cashew, because of that definitive cashew taste and creaminess, but has been suitable in most recipes.

    Instead of adding water to the cashews, how about oat milk or any other dairy free milk? Also, what about a bit of lemon to give it that tang dairy ricotta has?

      Chris Frank isn’t the technique they’re using a way to sear with pressure? Ijs...it seems that pressing them without searing heat would preclude getting the crusty edges desired...like using a panini press
