Grocery list prep/Squash and spinach rotollo ingredients:
1. Butternut squash layer: butternut squash
2. Spinach layer: Red onions, spinach, nutmeg
3. Tomato sauce: garlic, chillies, olive oil, passata tomato puree
4. Assembly: fresh lasagna, top with feta (or ricotta), cook in creuset pan, fresh sage

This is my fav way to eat butternut squash. Baked, salt, eat most of it standing at the stove “waiting” for it to cool. Skin and all. Best!
Literally had ritolo for the first time yesterday in a restaurant because they didnt have cannelloni, and it was stunning. Perfect to know theres a recipe right here for me to try once i have an oven haha

I followed this recipe and it was so delicious, I felt a little guilty for eating it myself throughout the week for my meal prep lunches. The flavor combinations of squash and spinach plus the cheese are just killer. I thought at first there were too many chillies in the tomato sauce but when it was spread throughout the dish it was perfect.
Huge fan, just love how you don't waste anything and repurpose jars, scraps ect.
For years iv watched since the naked chef days.
I forgot about this recipe, I use to make it whenever butternut squash were in season. Gonna pick up my 2013 Save with Jamie book, see what I can still afford to make in 2022! 😅
My goodness, I just love you Jamie...I just put mine in the oven, can hardly wait 38 more minutes. I am vegan so I substituted for vegan feta not sure how similar it will be but filled with goodness either way. Thank you for these incredible teaching videos, which really help stretch a dollar.

This is in the oven right now! Can't wait to taste it. I did add mushrooms and made half without squash to taste the difference. Looks delicious! UPDATE:Delicious! Did half with squash and half without. Both totally yummy!

looks good. If I were feeling really lazy, I might just use the squash, spinach, and cheese fillings to create some sort of baked ziti or the like.

It's always less expensive and much more healthy to focus on plant based foods.I am vegan so I would sub a good quality plant based, creamy(cashew is best) cheese.The key to tasty veggie foods is the prep and flavorings added! This is a good one.

There is no squash in July in our country, and when it's 30°C outside, I personnaly can't use my oven (nor 3 burners in my kitchen...)
