Great looking ribs Chris, I stopped wrapping my meats in foil, I use butcher paper, I love the way it maintains the bark on the ribs, pork butts and briskets........ Nice video!

glad you made that comment about the 1 1/2 mark in wrapping. i've found that too. 2 hours just seems to much some times. I go about 1 1/2 wrapped also. that last hour then is perfect.

Ribs Look Awesome ~ Ribs look ready for a KCBS contest ~ What Brand is that Reverse Flow Smoker? It kinda looks like a Lang Smoker. My Racks on my Lang look the same as yours. I love my reverse flow. It keeps 250 for hours! I'm sure you have done Try-Tip on your Reverse Flow. Put it over the firebox on the bottom grate and the Try-Tip gets smoked on the and gets some of the marks as if you grilled it.

I know this is controversial, but I think spritzing is just a waste of time, especially if you wrap the ribs like you did. What I have found is that it does not really impact the moistness or tenderness and just prolongs the cooking time. Of course, I know that some of the greatest Pitmasters out there do spritz. YMMV. Enjoyed your video.
