Thats a perfect rack of ribs Scott. That is how I like to make them everytime. That Char-griller is a good smoker, you can get ribs done in 4 hours, I found a way to set up a chain method on it and it worked great. I filled it with charcoal and got 3 solid hours of cook time at a steady 260ish degrees. I got a mod coming for it pretty soon, I want to cook a brisket on it and that smoker is not designed to go past 6 hours.

Kirby, just looked through my manual since my Smokin' Champ is still new.There are smoking times for large game of 7-10 hours, so a brisket should be possible.

Hey Scott! I was waiting for this first offset Vid. Gotta say I wasn't expecting to see a Stoker used.......That was cool! 👍 More guys should think about running a stoker in these
kind of cheaper offsets, because they are actually charcoal pits. Load them up with charcoal a couple small chunks of wood and let the stoker do its thing. Trying to burn splits of wood will be a challenge after the small amount of lump charcoal burns away,......no stoker will be able to provide the needed oxygen for quick and complete combustion of a normal size split. The Pit also doesn't have a tight seal for the necessary draft needed to pull the heat and smoke threw the pit.
I know You and this Pit is just a cheap starter, and You will be getting a Real Deal RealShow Stick Burner in time. I'de recommend a Vertical....smoke and heat naturally go up! :-)
As for the Ribs......Wow that was a flavor explosion going on! The color and that glaze was amazing.......picture perfect!
I'm a bit impatient and usually have a million things going on all the time. So the DigiQ definitely helps me out a great deal. Looking forward to learning a lot with this offset. Hey Scott that's cool man, our local hardware (Bunnings) sells the chargriller, i dont have one I do all my cooks in a Weber kettle but i think you just sold me a chargriller and that smoke fan device

Is there a reason u don't use butcher paper? Looks awesome definitely wanna do the butter and brown sugar. Wat temp did u wrap at?
Just depends on if looking to get a really bark. Like for brisket, then I'll use butcher paper. Usually wrap around 160 - 165. Thanks for watching!

I'm really surprised how those ribs turned out using the DigiQ BBQ GURU on an offset. I have an offset and the DigiQ DX3. I haven't installed the adaptor to the pit because I didn't think it would work. After watching this, I will go ahead and install the adapter and try it. The ribs were beautiful. Was that lump charcoal. How long was the cook. You may have said but I missed it.

Yea since getting the kamado cooker I've been using some lump (which I don't normally use) and watching videos on lump charcoal comparisons. The jealous devil brand shows to burn very hot which is what you would need in an offset cook for that much steel etc. I'm going to install the adapter on my offset and get some jealous devil and giver a try with the guru. I've seen a few people try the guru on offsets but didn't seem like it was a total success. I've been thinking about this for over a year and half now. Got all the stuff why not right.
@@progers5019 Jealous Devil does burn really hot and long. Once you get the coals set up right. The DigiQ kept with in 5 - 10 deg of target. I do like it and will continue to use. I hope it works great for you.

This might be a dumb question - but how best to drill the 1 3/8" hole in the Char Griller?
It's best to use a 1 3/8" hole saw.

Id use a pilot hole. Then use a hole saw. Or a step drill if you dont have that
Would you recommend the same process for beef ribs.
You could use the same method. May take a little longer to get the beef ribs tender.

Hi, I'm from the UK so we barely see ribs on a BBQ let alone a smoker. Can you please tell me what kind of ribs you have used. I know you can get beef and pork ribs, but there are baby back and spare ribs for example. Very good video, I will try and do this next weekend.

@@THEREALSHOWBBQ Hi, I need some advice please. I did these yesterday using the 3-2-1 method. The result was not really tender meat that stuck to the bone. It was even hard to pull the ribs apart. I have a cheap smoker, does this mean that the temperature was too low. Maybe the thermostat is way off.
