I love your chickpea+white miso onigiri! We love onigiri in my household, and they’ve been a staple in my children’s (and my own) lunchboxes for a long time. Yours may not be traditional, but they are tasty and have a bit more nutrition than plain rice. I make plenty of non traditional onigiri as well, as we like to use seasoned sushi rice or even chirashi rice as the base. I’ve added mashed lentils, beyond meat, eggplant, and pickled mustard greens in addition to the traditional umeboshi or non-vegan spicy tuna mayo or salmon for my children. Make what you like and you’ll never go hungry.

Often times, when people discuss what carbs they are avoiding, it turns out that these are refined carbs full of more fat than anything else. Muffins for example: flour, then eggs (fat/cholesterol), dairy (fat/cholesterol), and butter/oil (fat/cholesterol). I lost 90lbs a decade ago, and have only fluctuated up to 3lbs since then. 80% carbs, 10% protein, 10% fat. 36 going on 18. I seriously feel better now that I did then.

I use the seed part with some shallots and water to make a broth that I use for vegan soups. Adding some pureed squash to the soups makes it really delicious.
Man, your hair are always the same length in each of your video, I have no idea how do you manage those each time. You have an amazing kitchen, I love the storage boxes kept so well, the washing sink too is great to have for a chef like you. I liked the chilli oil recipe, definitely going to try.

With all your care and attention, is there a reason you don’t soak beans from dry? 🌎I find their texture and flavour is better, not to mention the cost savings and environmental impact Soak for 8 hours, cook for 10mins. Easy peasy
