    Congee is basically what I new from my childhood “рисовая каша”. The difference is that all water is added at the beginning, there’s recommended proportion 1:4. I’ll try doing it this way to see if ther is flavor difference. Thank you for your video.👍🏻🌻🇺🇦

    Will, your channel has THE most interesting background music! I seem to like all of them!
    I've thought about making something like the rice "pucks" for awhile. Your recipe helped solidify the idea/method. And here's the thing that made my eyes pop looking at your rice puck recipe -- that nice SEAR on the rice. "Burnt" rice is SO YUMMY. Nu-reung-bap!

      That’s one of my absolute favorite things about his videos besides the fact that he uses all the ingredients that I already love, and I can learn how to make some really great tasting food.
      Some of my concoctions come out good but other’s not so much so I’m glad I found this channel😂

    I love your chickpea+white miso onigiri! We love onigiri in my household, and they’ve been a staple in my children’s (and my own) lunchboxes for a long time. Yours may not be traditional, but they are tasty and have a bit more nutrition than plain rice. I make plenty of non traditional onigiri as well, as we like to use seasoned sushi rice or even chirashi rice as the base. I’ve added mashed lentils, beyond meat, eggplant, and pickled mustard greens in addition to the traditional umeboshi or non-vegan spicy tuna mayo or salmon for my children. Make what you like and you’ll never go hungry.

    I went low carb a few years ago to lose weight, but recently returned to eating rice and man, I won't be doing without it again. Life is too short to turn your back on delicious basmati.

      I'm glad you are eating rice once again! There is a reason why rice-eating societies are among the healthiest in the world. There's nothing wrong with unrefined carbs; in fact, you NEED them. Often times, when people discuss what carbs they are avoiding, it turns out that these are refined carbs full of more fat than anything else. Muffins for example: flour, then eggs (fat/cholesterol), dairy (fat/cholesterol), and butter/oil (fat/cholesterol). I lost 90lbs a decade ago, and have only fluctuated up to 3lbs since then. 80% carbs, 10% protein, 10% fat. 36 going on 18. I seriously feel better now that I did then.

    I use the seed part with some shallots and water to make a broth that I use for vegan soups. Adding some pureed squash to the soups makes it really delicious.

    Man, your hair are always the same length in each of your video, I have no idea how do you manage those each time. You have an amazing kitchen, I love the storage boxes kept so well, the washing sink too is great to have for a chef like you. I liked the chilli oil recipe, definitely going to try.

    Thank you for the hand shots of you shaping the onigiri! It’s not that easy the first few times. Stilll tastes good but Onigiri Everywhere isn’t quite the same, ask me how I know lol

    Hello Will. If I were making the risotto and wanted to do one cup rice, would I double all the liquid? Wine & stock? Also, would Bomba rice be good for risotto?

    With all your care and attention, is there a reason you don’t soak beans from dry? 🌎I find their texture and flavour is better, not to mention the cost savings and environmental impact Soak for 8 hours, cook for 10mins. Easy peasy
