I have two suggestions. Try adding a tablespoon of water. The steam will transfer the heat better than dry air. Maybe suspend the cake above the stone on a rack of some sort. Neat baking that. I've done muffins at home but never on a cook/camp out. I have an "oven" setup like yours to heat items and always put a metal trivet above the ceramic as @EpicureanHikers suggests. Cheers!
