2 cups mashed potatoes
1 large egg
1/2 c. Flour
1/2 c. Breadcrumbs
Salt
Pepper
Garlic
1/2 grated onion or 1t. onion powder
Hot grease, cook till golden brown

My Mother was a wonderful cook and I loved her Potatoe cakes, these were the last thing she showed me how to make before she passed away. I was so blessed by a wonderful Mother that could make a full meal out of whatever she had , she always amazed me with that ability.
Moms from back in the day really new how to cook with simple ingredients but made everything so delicious...I had one of those Moms 🥰

My mother-in-law was from Va. She taught me to make potatoe pancakes the exact same way as yours! Especially grating the onion! My kids - now all grown with their own families - absolutely love them! Yum!❤️👍🏻

I was raised during the depression. We had them often. Called them Mashed Down Potatoes. My Dad took mashed Potato sandwich to work

Here in PA Dutch country...potato pancakes are made with shredded potatoes. The one from leftover mashed are just potatoes cakes!!!! Both are so yummy!
My Mom made these and also the ones she'd grate, add onion too. On the grated ones we always put applesauce. Yum-yum!
Family favorite in our house! We don't have mashed taters often but when we do, I always fix double so we have leftovers for tater cakes!!! I thought I was the only one that liked applesauce with them. My husband thinks I'm nuts! Amazing how the simple things just brings a smile!
I went to a Polish restaurant recently, and they served applesauce with their potato pancakes too.

My mom used to make these. I had dairy allergies so they were made with chicken broth, and I couldn't have eggs, so she used something else. The flour was potato flour, and I loved them. A few years ago, I developed a bread recipe using the water from the potatoes and the leftover mashed taters. I still make it and share the extra loaves . Thank you for sharing your recipe. I will definitely try it.
Thank you, Miss Lori. Agreed 😃. Those look scrumptious. My Italian mom would also gently mix in some leftover baked fish or shrimps or scallops or whatever. She’d fry them up in a skillet, and we had those with some baked beans and salad for a delicious meal for our big family. Brought back lots of great memories. Big smile on my face! Thank you so much. My mom used to make these also. Whenever we had left over mashed potatoes. It wasn’t very often as I grew up with 5 brothers and 4 sisters. I absolutely loved these. You bring such joyful memories when I watch you cook. Thank you.
Sometimes I put a dollop of sour cream on top and sprinkle fried bacon crumbles on top..Never thought of apple sauce or pear butter..can't wait to give that a try.
I am so going to try making these "tater cakes". That's what we called them growing up. When Mom made them, I could eat my weight in them with no topping added. The onions are what really made them taste special. I remember Mom always telling me to eat my other vegetables, but the "tater cakes" and her cornbread is all I wanted. Thanks for the recipe.
I adore potato pancakes, I grew up with these as well! Mom was so good at whipping these up on a cold, snowy winter night for supper. My brother and I loved ours with ham and applesauce! YUM!

I grew up in West Virginia until I was 16 then we moved to New Mexico when my Dad's parents retired to New Mexico after he got black lung and needed a climate with very low humidity...I lived in New Mexico for almost 20 years then moved to Dallas Texas in 2002..My Grandmother was from Kentucky and she could cook such good simple food....it is because of her that I even know what potato cakes are....they are so delicious. I am a big fan of yours and it feels really nice getting to see a really great lady cooking such memorable things.....Please keep doing what you're doing. These were a family favorite growing up! We didn't do mix ins though, we'd form cakes just from the very cold mashed potatoes, dip in flour, and fry. Crispy on outside and creamy in the middle! Served with ketchup

This is one of my absolute favorite way to use left over mashpotatos. My favorite is to serve with bacon and lingonberrysauce. Live in Sweden.
We make quite a thin pancakebatter and fry in a cast iron pan with little ” holes” that makes seven mini pancaces at once.
I grew up on these also, we called them potato cakes and we loved them with onion in them. So yummy!!!

Hi lovely, thanks! you've given me the thrifty idea to freeze those pesky few scoops of mash 🥔 that we always seem to have left over. When i get around 2 cups worth i can mark the bag & it's there if i need it. So much better than throwing it away!

In my area of NE Pa. there are a lot of Polish people. My "Bachi", grand Mother in polish, what you're making was called potato patties because , she made Polish potato pancakes. They were made with grated potatoes(fine grate) , salt, pepper, egg, a heaping tablespoon of sour cream and flour . Fried in about 1/2 in of hot oil until golden brown. Bachi never threw away left over potatoes either. Her's were made with the potatoes, finely grated onion to taste, salt, pepper, egg and flour. Sometimes she would throw some crumbled bacon in. Fried in butter until golden brown. SO good !
We love potato patties. I do mine in my air fryer now. My favorite way is with a sunny side up egg. 🌞

My Mother made these when I was knee high to a grasshopper everytime we had mashed potatoes. I was never a fan as a child, but I sure am as an adult. I never paid any attention to how she made them since I didn't like them, so I'm really thankful for this. Now I'm going to make some potato pancakes. YES MA'AM!
Lori, I am really enjoying your background. I always enjoy your presentations, but it seems that you have been working on your backdrop. It’s just beautiful! This comment reminded me of a story my mother told me about her childhood. My grandfather, Dallas, was a tenant farmer in Missouri during the depression, and the family moved often from farm to farm just to keep food on the table and have a house to live in. My grandmother, Alpha, made potatoes almost every day and added peas if she had them. My uncles, who were young boys, would say, “I could eat every potato and pea in the bowl!” We all got a kick out of that old story.

Years ago my mom made these when we were kids at home and we always loved them. My grandkids were here a few months ago and I made some for supper. My grandson said he loved them. Here in the USofA, everything has been so troubling lately, but here there are all kinds of people from all kinds of backgrounds sharing various names for the same thing. It may seem trivial, like "just potato pancakes", but it's brought a lot of people together with good memories. Makes "the big picture" look a lot more pleasant to me. This isn't some fancy dish that contains exotic, expensive ingredients or needs a bunch of equipment or experienced techniques...just easy to access foods that lend a tasty result, and brings folks together in a happy way. My mama made these when I was little. When I grew up, my oldest sister taught me to make them with saltine crackers instead of flour and I loved them. If you try it with crackers, don't make sawdust out of them--just crush them into small pieces with your hands. I don't put anything extra in them except chopped onions and an egg. Luscious!!
I was raised eating these. My mom taught us to shape them like thumbs. We call them croquetas. Yes you can add anything you have to the potatoes. Chicken, Ham anything we had left over. These are so good. I haven’t made these in years. Thank you for the reminder. I will make some for my children and grand kids real soon. I hope you and Mr. Brown are enjoying your Hope cabin. My mom was a depression era cook and she used to make these. It was one of my favorite of her recipes. I think I liked the mashed potatoes leftover and fried better than fresh. As a kid we ate them plain with just some salt sprinkled on them, but when I grew up and made them myself, I usually topped them with sour cream & chives, or sometimes with stewed apples. Yum.

Oh, those look so good! You make them the way my mom did. My mother-in-law was Jewish & she made potato latkes, using shredded potatoes, flour & egg. I tried to get her to put onion in them but she wasn’t having it. When we had big family dinners at her house, I would help cook. Lord knows how many potato latkes I have made. My German side of my family made traditional German pancakes and served them with applesauce. My Russian side of my family added garlic and ate the potato pancakes with sour cream. Left over potato was made pretty much the way you made them. I think food is a universal solution to our problems with the diversity we have here in the states. Need to share our different foods with each other. Love watching your show and can almost hear some potato pancakes cooking.

My MAMA used to make this exact dish when we were growing up. We called them simply"POTATO CAKES". I loved to eat a potato cake while warm wth peanut butter and homemade apple butter. It is 2:18A.M. in the night and you are making me so hungry, but I am going to stay in bed, trying to go to sleep. My MAMA is 91 years old. She has been in the long-term care center here for a little over 2 years now. The Long-term Care Center is in lock-down since this past March. I sure wish I could make some "Potato CAKES " and surprise her with some. Thank for jiggling my mind with one of many great foods my MAMA, AUNT MOLLIE, and Grandma Hauf used to make for us all.

Made these out of leftover mashed potatoes from a Costco mashed potato and meatloaf dinner. They were AWESOME! Saved enough to make me a couple of patties but made patties and placed between parchment paper and froze about 8 more for later. So crispy and delicious!

My momma still makes these and they are the BEST. All she puts into her mashed potatoes is flour and egg. Sprays a little pam or olive oil spray in the pan and That's it! They're not greasy. Just perfect

Yum! Leftover mashed potatoes are great as pancakes, the next morning, with some fried eggs over them! Too many?...they'll freeze just fine! Freeze on a piece of waxed paper. Move them to a freezer bag, with the waxed paper separating them. To eat another day, put the frozen pancake in an oiled (or buttered!) frying pan. Heat low and slow. Tastes just as good!

My leftover mashed from last night was already patted out (just the potato with no additives--mother did them that way). My little Griswald cast iron skillet has a dollop of bacon grease in it awaiting my return to fix the rest of dinner. That will be a lettuce salad from the garden with some sauteed onion and orange pepper with a bit of cut up deli-roast beef and some feta cheese.
We have made potato pancakes forever. My hubby and I still love them.
My nana always put sour cream and chives over top she's German so I'm not exactly sure what she used to call them but I'll tell you what they were the most delicious things and then watching you make them just brought me back to her making them.

And other leftovers become golouh, & leftover cornbread & biscuits go in the freezer to make dressing!!
