Omg just made this. Mine had less sweetener in it. IT IS SOOO GOOOOOOD!!! I used it to make lemon mousse. Which is just this stuff mixed with whipped cream

Seriously, I didn't hold out much hope for this tasting very nice, as I've tried to make a raspberry jam and a blueberry jam, they were okish but nothing great. This on the other hand..OMG it's heaven, I honestly can't find the words to describe how perfect this is, and I cannot believe it's keto. I am over the moon. Thank you so so so much for sharing this amazing recipe, just in time for Easter. I have a keto hot cross buns recipe to try out which will go amazing with this lemon curd. 10/10 👍😍

Excellent 👌 used Allulose to avoid the nasty cristallisation and cooling effect I get so strongly from the other sweeteners... came out amazing. I've added as well some Italian pastry liquor (Strega), can't tell you how heavenly it tastes 😋 if then mixed with fresh whipping cream 😛 question though how long will this keep in fridge? Thx again for this amazing recipe 👍

This recipe was bang on perfect. Just don't do what I did and add sugar after the curd has already thickened because then it will crystallize and the only reason I did that is I switched my brand of erythritol and this one wasn't quite as sweet as the one I was used to and so I did have to add a 1:1 ratio

That was a dead easy recipe, I tried making a lemon curd 2 weeks ago (from a recipe from taste.com) as a topping for my lemon cheesecake and although it tasted great it had crystallised. So it wasn't a very pleasant texture, and I was stirring for 20min. 🙄
I made your recipe, and watched your tutorial while I was making it and it came out velvety smooth, and was so easy.
Thanks for the thorough step by step instruction. Lemon 🍋 curd for dummies😝. I did think the 4 lemons was a little to sour, as it made my toes curl, I just added more eryithritol, all a matter of personal preference. 😊 You must have loved sour lollies 🍭 as a kid!

do you have recipes in which your lemon curd is an ingredient? for example could you use the curd in a lemon pie? or in a cake?
Lemon meringue pie.
Stir some in with keto ice cream or with yogurt. The ice cream one is lovely served inside a hollowed out lemon, it can be wrapped in cling film and kept frozen, just remember to use the whole lemon to keep it well covered.

Help! Having trouble figuring out how you calculated the macros. Calories, fat and protein are pretty much right on the money (well protein is 1 gram higher in my calculations but who cares) but the net carbs are coming in at 5.7grams per serving . There appears to be some disagreement as to the carbs in the juice of a lemon. Could you let me know where you found your info? Thanks so much.
I use Chronometer to calculate macros - much more accurate than MFP
