Recipe:
Lemon Keto Cheesecake Pie Dessert Thing:
Make the crust first.
Start off with a cup of chopped pecans.
Melt two tablespoons of butter until it's nice and smooth.
Add a teaspoon of Magic Baker's Granulated:
Use a mini chopper to chop those pecans. Quick and easy!
Mix in the melted butter and Swerve until everything's well combined.
Press the pecan mixture into whatever you want to serve it in. I use a 3" x 6" x 7.5" glass container.
Bake at 375 degrees for about 10 minutes,or until golden brown, then let it cool completely.
Now for the Lemon Pie Filling:
In your favorite yellow mixing bowl, whip up 1 1/2 cups of heavy whipping cream until it forms stiff peaks.
Add 8 ounces of softened cream cheese, 2/3 cup of Magic Baker's Confectioners, and a teaspoon to a teaspoon and a half of vanilla. Mix until smooth.
Pour in 1/2 cup of fresh lemon juice, or less. Taste as you go!
Stir in a tablespoon of lemon zest for that extra flavor kick. Taste it !
Pour the filling into your pecan crust and pop it in the freezer for 1 to 2 hours and then thaw completely before serving.

I agree, no music. We need to see you try the food you have prepared. We want to see you enjoy it. It would help when you are making a keto recipe to inform us how many carbs are in a serving and the size of a serving. I enjoy your channel.
Thanks! I didn't even get to have a piece myself that night... I have a different one coming up for a slice it, but I don't think anybody wants to see me eat 🤣 also, I don't put carb count on mine because all ingredients are different. After trying some of the other big RUclips recipes, I figured out quickly that the carb count the list and the actual carb count can be completely different! One recipe was supposed to have four grams of total carbs and it ended up with 12. Another listed 8 g and it was 18 total. I would definitely use an app like Carb Manager or something similar for the exact ingredients you were using, and double check every recipe you make. There's a lot of bad information out there...

I just made this. I did not have lemons, but I had a huge heirloom orange. Because the juice of the orange is sweeter than lemon juice I used less sweetener. I used only 1/4 cup of monkfruit. I can’t wait to eat it later after dinner. Happy Mother’s Day!

I followed everything according to your recipe except I used the orange and cut the sweetener. Monkfruit is the sweetener I like the best. It tastes most like sugar (to me) and has no aftertaste.

@@southernketo I liked it a lot with the orange. I cut the sweetener to half of what you used. But some might like it sweeter than I do. I have been hearing a lot about allulose as a sweetener in RUclips videos. It also has a good taste to me. I am diabetic and from what I am hearing about it it might be what I use in the future. Apparently it is a sweetener that might have some health benefits.
@@sheleneworland1497 Thank you! It's a really good sweetener. It's part of that magic baker's blend from Splenda. It has allulose as well as stevia and erythritol. I think it gives it a really balanced sweetness. I use allylation my ice cream to help it stay nice and creamy instead of getting hard in the freezer

I found basically the same recipe from another keto site that is even easier. All same ingredients except only use 2-3 Tbs of juice and you add a packet of keto lime ( or lemon) jello to the whip cream, cream cheese mixture. It eliminates the need to put it in the freezer. It only needs time in frig before serving. Your recipe uses a lot of juice which makes whipped cream mixture soupier which is why you have to freeze it.
I try to make all my recipes with the most natural ingredients possible, but that's probably good👍🏽! I can stand the extra few hours, because I'm cheap 🤣

It's not that the music made it so I couldn't hear or understand him, but it's loud enough that it completes for attention, which is distracting when you're trying to pay attention to what he's saying.

He was giving you a chance to understand on a deeper level what happens to some people. He is telling you what happens to him so you will understand at a deeper level. You reject what he says calling it false. That is like telling him he is a liar and he and his kind don't matter anyway, your reality is the only one that counts. I think what you meant to say is that it is not distracting to you but could be to others, since you said each to his own.

Awesome! Yes, we use that crust for a lot of things. You can grind up the pecans into a flour also instead of leaving chunks to make a more commercial type crust
I do agree with everyone else about the music. Music is not needed, and I would have liked to see you cut into it so I could see how it slices. I did just make this, and it is in my freezer setting up for tonight's dessert. Of course, I tasted the filling as I was making it and I do like the lemon zest added to the filling. What I tasted while making it is delicious!

I love everything about this recipe! I can no longer have almonds due to kidney stones, but pecans are my favorite nut anyway (fellow southerner here). It's wonderful with lemons, and today I'm going to buy limes and try it with that.
BTW, I'm in the please ditch the music group--I listened on my computer both with and without ear buds in, and in both ways the music was distracting. Had to turn off the sound and use cc.

I have used the Nellie's (I think that's the name) key lime juice in a bottle and it was actually good in that recipe because I couldn't find key limes at the time. I have gotten with my RUclips support folks and figured out what happened. It was some sort of frequency problem. I had to change a few settings and it should be fine now. I was wondering why nobody had complained before about it and then all of a sudden it happened. Now I know, so I hope you'll enjoy my future videos a lot more!

Yea I didn’t watch the video because of the music, too loud and distracting. But it is your video and it is your choice to have the music too loud. Just some of us are older so it’s more difficult to hear separation from loud music and someone’s voice. W can always turn up, or down, someone’s voice but not when it’s got loud music too.

I would suggest mixing in a glass or porcelain bowl as you could get plastic bits from the scraping of the mixer on the plastic bowl

Hi there! 👋🏻 Splenda is a name brand. I don't use their normal sweetener, just the magic bakers. It is a blend of only eriththritol, allulose, and stevia. Check it out. I was really surprised and happy to see it and it is my favorite sweetener. 😁

This is not about being critical, it's about being inclusive. There are many seniors with hearing issues, many neurodivergent people who can't sift through too many stimuli, even people with seizure disorders who need to be free of multiple incitements. We often fall through the cracks and I wanted to provide feedback so that this person can be as inclusive as possible.

This recipe . sans the Swerve ( which did not exist way back when i was a child ) is very much like one my Mom made often. She did meringue sometimes.
Super yummy and easy. Pecans can cost a fortune here in N Callie, but its worth it. Walnuts are everywhere and about half the price. NOT the same but close.
In Central Ca,, the San Joaquin Valley. Merced especially, has pecan trees growing all over , in parks and such. People are allowed to glean the nuts from the ground. Its a lot of work but I have more time than money .
Id like to add my opinion about the background music, its hard to hear you over it. Also, I was eagerly awaiting you enjoying the dessert cutting it and serving it. It was a bit of a let down not to have included that in this video.

Splenda is just the name brand...Check out their Magic Baker's blend. It's not their regular sweetener... It's just a combination of erythritol, allullose, and stevia! It's the best sweetener on the market. I wouldn't touch their normal sweetener. That's why I was super surprised when I saw this!

Yet again my stumbling upon a recipe of yours is very timely. This is mostly no-bake but I halved it so I could use 2 ramekins in my air fryer during this heat wave. So I used Minute Maid's no-preservative kept-frozen-until-the-one-week-you-are-using-it lemon juice in a bottle that was thawed in the fridge too long (1/4 c) and 1 dram of lemon oil (used 1/2 tsp) from a flavor sample pack; the not-so-fresh-but-no-bad-stuff equivalents of the lemon juice and zest. I also had heavy whipping cream a couple weeks past it's best by date that (so very much) needed to be used up. For those of us with nut sensitivities, I did coconut flour with sunflower seeds and hemp hearts for texture instead of pecans, and extra butter for the bottom crust (350F 5 min). My lemon mixture was thinner than yours appeared to be due to the different products and sweeteners. I sprinkled some freeze-dried blueberries on top since I'd no real zest to play with. After the 2 hour freeze and the hour plus thaw, I tried some ... it was great but it didn't set up. I'm sure it'll firm up some in the fridge once more. I might try stabilizing it (or the whipped cream step) with some gelatin next time and make a no-bake crust because it tastes that good but it is a little bit fussy. Thank so much!
Oh good! Check out my strawberry dessert video too. It has a great nut free crust I make. Make sure you whip it really really good also. That will help it set up. Maybe after an overnight it will set up good for you. 😁 Where are you at where the heatwave is so bad?

Hey, it's a 3" deep x 6" x 7.5" . I wish I would have remembered to cut it and take it out, but we had people over to eat that night and it was gone before I even got a piece myself 😂. I'm going to do the lime version also at some point and I will definitely cut it then

Yes, very annoying music. Also, you should ALWAYS cut a dessert and show it on a plate or in a bowl after preparation. Otherwise it feels like we have no idea what it really looks like! Is it soupy, firm, presentable? Or just yummy.

@@antheitmann152RUclips told me that iPhones sometimes change the frequency of some music making it sound a lot louder. That's why I couldn't tell on my end. I watched it on my computer, my TV and my Galaxy phone and they all sounded fine, so I asked RUclips and they told me IPhone or iPad will do that. I'm going to change the music next time
