- It’s Brad Leone’s Super Smash Booger™️ feat. Brad Leone’s Just-Invented-World-Famous-But-Never-Heard-Of Secret Burger Sauce™️!!! This one is a simple… dare I say… perfect? grillin’ recipe for fall.
The ingredients can be swapped out for lots of different stuff, make it your own, have fun with it. Main thing here is technique:
- Slice them onions thin
- Add your black pep at the end right before you bun it - the black pep burns easily and can taste bitter if it sits on the flat top
- Get your mise en place ready (yeah I said it chef) so your hot fresh burger can go straight on the plate
- Add cheese right after you flip for optimal gooeyness
- Use beef tallow or animal fat for a good sear

🍔 DIRECTIONS:
1. Put your burgerball on top of the onions
2. SMMMAAAASSSSHHHHH
3. Don’t mess wit it
4. flip it after 4-4.5 mins
5. lay the cheese on and cover for another 4 mins
🍔 INGREDIENTS:
Booger:
potato rolls
~85-90 gram 80/20 beef balls
little bit of beef tallow
thinly sliced white onion
wild ramps or lettuce - any greenery
bread & buttah pickles
american cheese sliced thin
a little salt
a little black pep
Beef tallow or other animal fat for the grill
🍔 Secret Sauce:
1/2 cup mayonnaise - Hellmann’s or bust (or dukes or homemade)
just a stoche (about a tbsp) of dijon mustard
japanese bbq sauce - I like Bachan’s
about that much black pepper
little pinchy pinch of salt
thinly sliced and chopped ramp bulb or green onion bulb
pinch of crushed red pep flakes - I like maras biberi
🍔 Gear:
Flat top grill if you got it, or a cast iron skillet
Some surgical-sharp-spatulas
A little hat for your burger to wear while the cheese melts

I love how Brad went through the proper way to layer burger, made sure to tell us not too much sauce on the top. Then when he eats it he flips it 360 and goes for the upside down bite. You cant beat this man.
It's so fun and satisfying when you experiment with stuff and it ends up awesome! Following a recipe is cool and all, but nothing beats the feeling of coming up with something yourself.

Yep, I would not consider this a traditional smash burger. The onions will release water and steam the burger instead of crisping it. I actually prefer the way Brad is doing it. Like he said. cook it like you want to do it.

Onion smash burgers are my favorite things to cook. I do it slightly differently and I put down my meat ball first, then cover it with thin onion and then press.
I find that it’s one of those perfect things that doesn’t really even need sauce. Just a pickle and it’s perfect. Although that’s not a critique whatsoever.
As someone who also enjoys a thick burger with sauces and toppings, these bad boys are simple and perfect. They’re actually perfect.

I really like the smash burgers made with the onions on the bottom. That is how I do it but with one difference. I do the smashing on the counter before it hits the grill so that I don't dry out the meat. Thanks to everyone involved with the production of this video.
