I don't add baking powder because I like my chips on the crispy side. Adding baking powder takes away from the crispness. Adding baking powder is not right or wrong. It's just a matter of preference. I hope this helps.

This recipe is made for frying. You can bake the chips, but the recipe would have to be adjusted for that.
