Looks a bit soggy and messy for my taste, the flavours are good but I do not like the final look of the meal. Maybe keep the pan fried Bacon and Chorizo mix and then do the potatoes to the point where they are grated and take that spread on a baking tray loosely put the grated cheese over the potato and bake that for 20 minutes so the potato goes a little crispy and he cheese forms it's crust. I think if you do that and serve the potato as a side to the Bacon and Chorizo as the main and add your accompanying sauce that would be a better look, certainly better texture.

It would but you would be.missing the wonderful flavour of Spanish smoked paprika so I would add a half teaspoon to the onions, bacon and sausage.
