Hello, thank you for your comment !☺️ We rinse to minimize the foam buildup, excess proteins and in this case bitterness. The technique is called “aku nuki” in Japanese. You can do it 2-3 times for best results.☺️

After dango start floating, wait for one minute and it is ready to eat ☺️
