When microwaves became the “new” kitchen appliance in the early 80s, a dear friend gave me the recipe to make peanut brittle and caramel corn in it. It has been my go to for many years and never disappoints!
I normally make this at Christmas with my grandma, but got a craving for it earlier today. Listening to you reminded me a lot of being in the kitchen with my grandma. Thank you, Cecilia!
You got yourself a new subscriber! I adore your authenticity! I love this recipe and cannot wait to make this with my son. I pray that God will grow your channel as you continue to share your recipes with us. I can’t wait to check out your other posts! Greetings from Southern California!
I just subscribed to your channel. I’ve been making different kinds of brittle, peanut, pecan, cashews and coconut for years. Loved the Carmel corn so that will be an extra surprise this year for the kids and grandkids. Thank you so much and God bless you.
This was in my recommendations on RUclips and I just wanted to say that you are so full of life and seem like such a genuinely kind person. God Bless you and your family, stay safe :)
I happened upon this video and because I love caramel corn I was interested. Then I realized your name and I began to cry. Your name is the same as my mothers maiden name. Thank You for a wonderful video and I cannot wait to make the caramel corn. P.S. my mom used to make peanut brittle as well. (unfortunately I am not a nut fan)......
You have inspired me to try a much loved treat. Thank you for sharing and making it look easy and enjoyable you tickled me when you shook the liven day lights out of the bag of Carmel corn.
First time viewer. What a lovely, delightful lady and an informative video. I love the accent. It reminds me of home is Mississippi, as does the caramel corn and peanut brittle.
I was tickled to find this Carmel corn recipe! Thank you so much. My dad made peanut brittle every year for folks at church. He was known for his homemade ice cream and peanut brittle, but he made in the peanut brittle in the microwave. It's very simple to do that way. Thanks again.
I make this from my aunt and uncle's recipe. It is soooo good. I make my caramel sauce in the microwave. Just melt the brown sugar, corn syrup and butter in the microwave for two minutes. Take it out and stir it. Return to microwave for 2 more minutes. Take out and add baking soda. This gives it the volume.
Thank you. This is the way I learned how to make it and it was so good but couldn't remember the recipe and how long it was cooked in the microwave. Can't wait to make it. I could almost smell it when you took it out of the bag! :)
Awesome, my first time visiting your channel and love easy microwave recipes. Many thanks! I made my first brittle last week, I’m 70 yo😳, and had always thought brittle was extremely hard to make. I did it in the microwave, made peanut and pecan brittle and it’s delicious. Whoever invented the microwave -👏🏻👏🏻👏🏻👏🏻
I just made my mother-in-law’s peanut brittle recipe, she has gone to be with the Lord now, it is made in the microwave. It just didn’t have that rich caramel color and it is very sticky. So I found your recipe made it and it is wonderful, I poured it on a cookie sheet with parchment paper and I didn’t to clean it. Thank you for posting your recipe.
I bake and make candy for a living nowadays and I do my peanut brittle in the microwave it's quicker it's less mess it's delicious and it's just as good as what I used to make in my cast iron skillet. :-) merry Christmas and happy holidays :-)
Stumbled upon this video and must say I loved the energy you have. I will have to try these out! Does it have to be a brown bag for the popcorn or can it be a bowl or something?
For people with peanut allergies. We used mini pretzels, or chow mein noodles, coconut, could not find mini pretzel so broke up regular ones. Before it cools added m&m, and recesses pieces. Finally a peanut brittle for people with allergies
Hi, I just liked, Shared and Subscribed with the Notification Bell 🔔. Your Carmel Corn Recipe came up so excited my favorite!! I’m made this for years but in the oven ugh!! I will try your recipe as soon as I can find a grocery store with Paper Bags !!
We’re going to make this weekend. For my bigger family, I was going to double. Do you think I need to do separate batches or do all at once? Recommend increasing my time in microwave if I do it that way? I’m really going to miss your videos:(
My latest microwave is 1,000 watts. However over the years, I have used several different microwaves to make this recipe and have had to adjust the time according to the microwave. Hope this helps
You can bake it in the oven, but it takes longer. Preheat oven to 250 degrees F. Place popcorn on large flat pan. Pour prepared syrup over popcorn. Stir quickly. Bake about 40 minutes, stirring occassionally.
Here is the recipe: PEANUT BRITTLE 1/2 c water 2 t soda 2 c raw peanuts 2 T butter ½ t salt Note: a black iron skillet works well for this recipe Generously butter a large high sided cooking sheet. In large skillet or pan mix: sugar, water, salt & syrup and cook about 10 minutes (or to 250 degrees). Add raw peanuts & stir constantly. Cook until peanuts are toasty brown, about 8-10 minutes (or 300 degrees), add butter. Remove from heat & add baking soda & vanilla. Stir quickly & thoroughly. Pour at once onto the buttered cookie sheet. Do not spread with spoon, instead with 2 forks lift & pull peanut mixture into a rectangle about 14X12. Cool, break into pieces.
Collard Valley Cooks has a microwave version of peanut brittle and takes 10 minutes to cook plus about 5 minutes prep/assembly...I just made some - it's rich, buttery, and delicious 😉👍🏻
I'm terrified of caramel. I am creation's worst caramel making lady ever to make caramel. I made it perfectly the first time for bread popcorn, then waited too long until my next attempt. Now each subsequent try has turned to crystal or failed to harden. Would the corn syrup change anything?
I have made this recipe a couple of times. Mine always turns out gritty and dry. What am I doing wrong? The texture is almost like seafoam candy, if you know what I mean.

Do u salt ur corn when u pop it ?
@@ksmill09 I didn't. I lightly salted it while it was cooling on a cookie sheet. I also did not add peanuts to mine.
@@ksmill09 no
Will it be crunchy like oven baked recipes? I’m making oven one now. It’s so time consuming. This looks great!

It’s easier to put the popcorn into the pot after u made the caramel. Then pour into the bag. It coats better too.

Thank you. I hope you enjoy the recipes
I'll have to try this as I can't seem to eat the premade stuff that I used to buy anymore. TY
You look exactly like my neighbour. She's a good cook as well.
I make my brittle with salted peanuts I prefer that
Microwave peanut brittle takes 7 min. Is delicious ! And quick. I never butter pan, just breaks up fine.
Does humidity affect this caramel popcorn? Others said it does.
Do I need to put peanuts in the brittle?
Stumbled upon this video and must say I loved the energy you have. I will have to try these out! Does it have to be a brown bag for the popcorn or can it be a bowl or something?
I have never tried it with a bowl, but as long as it is microwave safe, it should work. Just watch it very closely to make sure it doesn't burn
What wattage is your microwave??
For people with peanut allergies. We used mini pretzels, or chow mein noodles, coconut, could not find mini pretzel so broke up regular ones. Before it cools added m&m, and recesses pieces. Finally a peanut brittle for people with allergies
Thanks for sharing ths!
For the caramel popcorn, is it a packec 1/2 cup of brown sugar??
Thank you for this recipe.. 😘

I have no living family and I used to be called the queen of Christmas!
I love your channel god bless you and thank you for the wonderful meal idea and videos!
Good stuff, but after looking in the popcorn bag, I noticed you threw away a lot of popcorn you could cave salvaged......!
We’re going to make this weekend. For my bigger family, I was going to double. Do you think I need to do separate batches or do all at once? Recommend increasing my time in microwave if I do it that way? I’m really going to miss your videos:(
I would make 2 separate batches
Please What is the watt of your microwave, thank u
My latest microwave is 1,000 watts. However over the years, I have used several different microwaves to make this recipe and have had to adjust the time according to the microwave. Hope this helps
So is power #7 on your microwave high setting? 7 on mine is the highest setting.
No, mine goes to #10
How long can you keep it for?
In an air tight bag, about 3 days (ours never last that long!)
So the popcorn itself won't get overcooked in the micro??
Not at all
My microwave is too small for such a large bag. What do I do?
You can bake it in the oven, but it takes longer. Preheat oven to 250 degrees F. Place popcorn on large flat pan. Pour prepared syrup over popcorn. Stir quickly. Bake about 40 minutes, stirring occassionally.
Wattage of your microwave please. Do you use the raw peanuts in your popcorn, or regular salted peanuts?
I'm sure it wasn't raw peanuts.
Yes, use raw peanuts!
@@lindadunn7656 I wouldn't have ever thought to use raw... Thanks!!!
I would love to have the recipe for peanut brittle I love it 🙂🙂🙂🙂
Here is the recipe:
PEANUT BRITTLE
1/2 c water 2 t soda
2 c raw peanuts 2 T butter
½ t salt
Note: a black iron skillet works well for this recipe
Generously butter a large high sided cooking sheet.

Can we pop the corn in the microwave or must we buy it already popped?
Yes you can. BUT pop it before adding the carmel coating
@@CeciliaMiller5Nanny Thanks a million. God bless you.
You are a darling woman ! I just found you …👏🏻👏🏻👏🏻😃
Why is it necessary to use raw peanuts in this recipe?
Raw Spanish Peanuts have a higher oil content than other peanuts and have a strong bold nutty flavor when roasted.
You my dear are beautiful. Thank you sweetie xoxo 🇨🇦
shake the living daylights out of it. Love it:)
I make my peanut brittle in the microwave.
Yeyyyyy Jesus!!!!!! Everyday is Jesus time!!!!!😃
Just join ur channel will be making the popcorn
I’m allergic to peanuts 🙁
Why don’t u do a peanut brittle video. U can speed up the cooking stage by editing it faster.
I'm terrified of caramel. I am creation's worst caramel making lady ever to make caramel. I made it perfectly the first time for bread popcorn, then waited too long until my next attempt. Now each subsequent try has turned to crystal or failed to harden.
Would the corn syrup change anything?
Yep!
Poor sound but good recipe
I have made this recipe a couple of times. Mine always turns out gritty and dry. What am I doing wrong? The texture is almost like seafoam candy, if you know what I mean.
Do you mean the peanut brittle or carmel corn?
Why don’t u do a peanut brittle video of ur mother-in-laws recipe.
Title says ...using microwave... I tune in because I think, wow that's interesting... lady uses stove.... 😒
