I've made peanut brittle once in my life. It turned out like rock!! Never tried again. My grandma would make it and it would simply melt in your mouth, but she had the knack I guess. She could make popcorn balls too that were awesome.
This recipe was in the cookbook that came with the first microwave I ever bought. But it does call for raw peanuts. They're going to cook in that hot corn syrup+sugar mixture.
Love peanut brittle. Love the idea for thanksgiving too. My mama used to make every year this cream cheese dip with mini chocolate chips to dip pretzels or gragham crackers in as an appetizer for thanksgiving. It was good but unfortunately I didn't appreciate it that much back then, I didn't like cream cheese but I have grown to like it now. It has been a year since my mama passed away. I think of her so often but I know she is with me every day!!
I make this peanut brittle with raw peanuts too. The only thing different I do is not spread it after pouring it. This makes a lighter crunchy peanut brittle. Spreading it out breaks the bubbles.
My peanut brittle recipe is very similar. My times are 3,3 and I 1/2 minutes, and I put my butter in at the same time as the peanuts. I make many batches at Christmas time.
The butter and vanilla slows down the full reaction you can get from the baking soda. It's really better to do seperately and you wouldn't need to refrigerate. Sometimes, try adding the butter and vanilla, stir. Return to microwave 1 minute, then add baking soda alone. It will light and airy and the lighter color you wanted. It can't fully puff up from the baking soda reaction when the butter and vanilla is added at same time.
Love your videos. You remind me of a family member!!!! My Sister would even make this during the summer, also at the holidays but fun at summer nights gatherings around for my vie night, God bless the family of the passed family
Awesome video, Leslie! Thank you so much for sharing this recipe! My beloved Dad loved peanut brittle, God rest his soul. That is so cool that you can do it in the microwave! Prayers in Jesus’s Name for the family of that dear little baby, prayers for you and your church family. I love you guys, God bless you all 🤗🙏❤️
I want to try this recipe for the holidays. Leslie look on the inside of the door on your microwave to see what the wattage is. Mine is up at the top when you open the door.
I've made a microwave peanut brittle for about 40 years. I have always used raw peanuts, no salt & only 1 teaspoon of vanilla. The other ingredients and amounts are all the same. After you make it you get used to the color/texture after each step. I have used different microwaves so knowing this helps. I do put the butter & vanilla in with one more microwave step after. If you want a crunchier end product leave it in the microwave longer with the peanut step. This is the step that changes the texture the most. I make a delicious microwave fudge too! My Apple Butter pie is close in the running for my family favorites though!
Apple Butter Pie sounds like heaven! When I was little my Grandmother made the best apple butter. To this day I've never had better! I'm imagining her apple butter right now made into the pie your talking about, wow!
@@romainejayne1811 I make my own applesauce and just continue cooking and add the amount of spices I like for apple butter. I don't like pumpkin so knew the pie was perfect for me! I bet you could make your own & experiment until the apple butter tasted just like your Grandmother's! I encourage you to try it!
I'd love to try this, it looks so easy. My biggest concern is the clean up, it has to be stuck to your glass mixing bowl. How did you clean it, please?
@@tondam2269 That works! My grandpa never liked his dentures & didn't wear them at home. He asked me to make him some every year without the nuts so he could just suck on it. 😁
My first microwave in the 1980s had peanut brittle in the recipe book that came with it,, and it was awesome. Divide them up between little christmas tins for great hostess gifts! My mother in law loved peanut brittle so I was able to impress her with my "homemade peanut brittle" lol. So saddened to hear of the loss in your church family. Only time and God's healing, can begin to restore losing your child , and you don't even want to hear any comforting words at first...you are so broken. But upholding them in prayer, and loving them...will carry them through the dark time until they can hear and see God's love, and eventually they see that time does take some of the grief and pain away. But the loss never goes away, it becomes a part of your life and grows you, but losing your child is the hardest tragedy to walk through. Prayers for them and you and husband to bring them comfort. My granddaughter helped me thru my dark times, as she was 3 when one of my sons passed, and being a gramma helped me get thru that dark time of heartbreak. She became my heart.😊 now I have 3 beautiful granddaughters❤
Just a comment from the peanut gallery (HA!), if you have granite countertops, lay down parchment paper on your cookie sheet, spay a bit of cooking spray. Spread out your brittle, let sit for a few minutes, then slide the brittle with the parchment paper off the cookie sheet, and let it cool on the countertop. It all cool down quick on the granite. I turn on my kitchen sink faucet on HOT right before I take out the brittle for the last time. When I'm done with the candy, the bowl and spoon go into the hot water. Makes clean up so much easier. Once you get hang of this method, you'll never look back! Give it a try; every microwave is different but when you find what works for you, WRITE IT DOWN. Or do what I do, get all confident, do it from memory, and burn your first batch! 😐🤣 Enjoy and be blessed. Love, Peace, and Bacon Grease!
I've made Microwave PB for many years. I sold Tupperware and they taught me how using their stackers. I still use their stackers to make it. I make 10-15 batches a year. I use cocktail peanuts.
Hello...if a person were to use raw peanuts would they cook enough to be safe to eat since this isn't cooking for a long time in the microwave? How were the dry roasted peanuts in it?
Lord, bless that family!! Oh my goodness, this brings back so many memories of my sweet Mama!!!❤. She made microwave peanut brittle all of the time, and everyone loved it!! She would give away the recipe along with the peanut brittle, and I had a friend a few months ago talk about how much she missed my Mama's peanut brittle!! She was an excellent cook and an even better Mom!❤
If you just pour it out and don't spread it, it will have more bubbles in it and be more brit'll. My grandma always said after you pour it leave it alone
@christyturner530 I do the same, I love having both thick & thin. I tend to make mine so it is more crunchy (expanding the time after the peanuts go in) than chewy where it's easier on the teeth that way!

I have never tried parchment before, I would be afraid of it sticking. I know it stands up well to heat but this is extremely hot so I would recommend trying a small spot of it before putting the whole batch out on it.
spray your measuring cup before you measure your corn syrup and it will slide right out!
