You are the only person who does the right thing by not spreading the candy. Spreading it breaks the air bubbles and makes it hard rather than light and crunchy. To break it up I pick up the whole slab, turn it over and hit it with a spoon to break into pieces.
If you spray Pam in measuring cups it makes it so much easier for the corn syrup& other wet ingredients to come out! Also make sure you put butter on cookie sheet & keep it warm in oven. Have all ingredients ready to use and handy for cooking peanut brittle!

Now hold it in one hand and tap the back (very important) of the candy that was in the sheet pan with the handle of the knife. This will break it up, not destroy your sheet pans and create less fine brittle dust particles. I line my baking sheet with HD foil, butter that and then pour it in. This makes it easer to remove from the sheet and break up afterwards.

I just go by the color and if the peanuts are almost done because it continues to cook and darken even when removed from heat and pouring out.
