What are the two white powdery looking substances that get added? Surely, it's not more sugar, since the liquid it gets put into is already molten sugar!
My wife and I do this every winter! We need cold dry winter air to cool our peanut brittle. Otherwise it gets sticky. Fun to watch the pros do it! We use her grandmother's recipe. We add the peanuts to the liquid when you did a spoon in the liquid and it spins a thread.
I sorta wish you wouldn’t spread it right after you pour it. I think stretching it once you’ve moved it would do the trick and it would leave the bubbles in. IMO. ♥️♥️♥️🇨🇦

Why do you add a few pieces of previously made brittle to the mix? 🤔
So nothing goes to waste! The pieces of previous batches get "reconstituted" into the new batch by the heat.

But why bother cutting? Why not just wait till it cools & break apart?
We need to spread it out more to make in thinner and easier on the teeth. Cutting it into pieces let's us stretch especially the middle better
