    Grandma's peanut brittle will make anyone a peanut brittle fan! This is light, airy, and crispy with caramel and butterscotch notes along with toasted peanuts. Honestly, it’s simple. You just need to watch the candy thermometer and follow some simple tips! You're about to be a candy master!🎄

    INGREDIENTS
    - 2 cups sugar
    - 2 cups raw peanuts
    - 2 tbsp unsalted butter
    - 1 cup white corn syrup
    - 1/2 cup hot water
    - 1 tsp vanilla extract
    - 2 tsp baking soda
    INSTRUCTIONS
    - Combine the sugar, corn syrup, and hot water in a 4-quart heavy bottom kettle. Place over medium-high heat and bring to a boil. Continue to cook and bring it to a temperature of 250°F. Use a candy thermometer to check the temperature. I like using a high-quality instant-read thermometer, but a good candy thermometer fitted on your kettle will work as well.
    - Once at 250°F, add in raw peanuts and unsalted butter. Raw peanuts are a must with this recipe as they have a longer cooking time at high heat. Once the peanuts are added, stir the mixture continuously so no peanuts scorch on the bottom. Bring mixture up to 310°F.
    - Once at 310°F, remove from heat and add vanilla and soda. The mixture will foam and grow so make sure to stir constantly to completely incorporate.
    - Working quickly, pour into prepared 10×15 pan. To keep the brittle light and airy, do not spread or flatten the mixture. Instead, let it flow freely.
    - Place in a cool area and leave until completely cooled, about 2-3 hours.
    - Once cooled, break into pieces as preferred.

    Just found your channel and loving it. What I am finding is that you took the time to not only learn from your Grandma and mom, you made sure you had the recipes. My Mamaw has passed, I made many things in her kitchen and learned much while in the garden with her...but recipes...they seem to have disappeared in the family shuffle. So finding these gems takes me back to my Mamaw with the recipes I need to share with the family. Thank you!

    Just made this again for this years Christmas candy bowl and as usual it turned out perfect. Even with me forgetting the butter until I saw it still sitting on the countertop after I had already poured it out onto my candy mat 😆

    As another follow-up a year later, for those without a candy thermometer, the first boil takes about 5 to 6 minutes on high heat to reach 210F, then an additional 10 minutes on high heat after adding the peanuts and butter. It seems like a long time, but anything less than 10 minutes will result in a chewy caramel-like result, not the crunchy brittle that you want.

    Just like my peanut brittle; love it. My grandmother was a great cook. Both grandmothers were great cooks and passed it along to the girls, but my paternal gran was a great cookie, cakes, and candy maker too. I haven't made this for a long time; my husband loved my cooking & baking. My oldest sis great in the kitchen but youngest suck at it. Anyway thank you for sharing your beloved recipe.

      I have dry roasted peanuts 🥜 will that work
      Or also i have cashews ❓

      @@wendyrodriguez5375 you’ll have to use raw nuts because of such high heat, it might burn the dry roasted nuts. You can find raw peanuts in baking isle at stores. Hope that helps

    This was my dad's favorite! My mom made it at Christmas to please him.
    His mom had moved on to Divinity, which he thought nasty. My grandmother refused to make Divinity when we were there. I was frustrated at 8, to not get to learn it. I never understood until I watched a video. Candy making can be dangerous with children near the kitchen.
    I made toffee and sent it out this year, now it is time to learn brittle. Thankyou for making it possible!

    I wanted to make peanut brittle this year as I have never made it before, I looked at several
    Recipes & I decided on yours because u made it look so easy, turned out wonderful. I had to
    giggle when u were pouring it into the pan & u said do not touch it, do NOT touch it, Lol.
    So i did not touch it, so light & airy, it’s a keeper for me. Now onto your other candy’s . My family
    for the first time this year r not gathering together because of COVID-19 & I am delivering
    food to each family & also along with that will be your candy goodies.

    You say dont touch it to spread it out. My grandmother always made hers in foil pie pans, then spun them to spread it out. It was perfect thickness, and as brittle/fluffy as could be.

    So glad you had this loving experience with your grandmother! This looks like the easiest clearly written recipe I've seen and am going to try with the expectation that I can do it. The note to not smooth out in pan is key! Can you talk about how to store in general and for gift giving? Thank you!

      I put my peanut brittle into either a festive tin or a decorated mason jars for gift giving. If I'm making for my family, I simply put it into a plastic container with a lid. Hope that helps.

    Hello. I made my first peanut brittle! Thanks for sharing. Though I didn't use your recipe exactly, ( used dry roasted peanuts because couldn't find raw and 4 T butter, so I them added closer to 280 degrees so they would not burn) I used your tips. i.e., used a digital thermometer, constant stirring and watched for the change in color and paid close attention to the temperature. Most important after I poured in the pan I did not Touch it! Delicious , crisp and not too hard. Those I gave to enjoyed it.

    "you don't want things to get sticky on your heavy-bottomed pan"....Got it.
    By the way, I like it thick too and the butter helps it release so easily!!!!!!!
    and after I get what I wanted, I wipe it off right after too!!! YEAHHH!!!

    This is THEE BEST recipe for peanut brittle.
    I came across your older video from 6 years ago a few years ago. I improved on your recipe by adding almonds and cashews in addition to peanuts. And it was spectacular. All other peanut brittle pales in comparison. Some even taste like they are made with medicine. I assume that might be the difference between using real vanilla extract and imitation vanilla. One time I added macadamia nuts. I always add raw nuts as you advise. Not only are macadamia nuts super expensive but they are also too soft and not ideal for peanut brittle. Thank you for sharing.

      Yeah, Mac nuts are great if you put them in much later in the process and use roasted Mac nuts. (Last 5 minutes)

    Wanted to make some peanut brittle (I think the dalgona candy craze got to me), and came to this video to refresh my memory. TY for saying not to "pull" the brittle. To each their own, but it drives me nuts for the same reason you mention here. All that work for the fluffiness and air...and then it's flattened and hardened? No, no, no! LOL!! TYSM!
