    I don't know if my copper clad sauce pot cooks faster than yours or what, but I was at 320 and pouring in about 40 minutes. And that was over a med. low natural gas flame that I didn't think was turned up enough when I started. My brittle was a little darker than yours, thought I scorched it even though I stirred throughout. But the taste proved otherwise, nothing scorched, peanuts roasted, brittle was light and airy, couldn't have made a better product if I tried, dare I say perfect.
    It's hard to find a good peanut brittle on the market. Braum's dairy store has peanut brittle that isn't bad, and See's candies is pretty good. This recipe IMO is better than any I've bought, period.
    Give it a try folks, it really isn't that difficult. This was my first time to try making peanut brittle and if I can do it, so can you.

      Some people don't like long videos, they expect you to be able to teach them how to make something with perfect results in 5 minutes! Then when it doesn't turn out right for them they can't figure out why! I've been making candy for years and I still have flops from time to time! Great video, very detailed!

    I use cast iron. It's about 100 yearsold. Was my grandmother's mothers now I use it. Mexican vanilla is GREAT for this. Don't use thermometers. Mom didn't they broke. For me they've inaccurate or just get in the way. I was taught the right smell, and what it looks like. Once you get this technique you will never use a thermometer. I also use a pizza pan buttered and I put it in the freezer. It sets up nicely.

      But the peanut brittle is the tricky one though,a candy you gotta be real careful with. It didnt always wanna turn out Quite right,at times got just alittle harder then what we wanted. Then sometimes-(Right On,Perfect) lol. But the fluffy/delicious kind you're describing,is what we were always aiming for 😀

    Thanks for the best brittle recipe it came out perfect, this one is impossible to just have one piece. The trick is to pour it out and not touch the pour and let it harden. Following your step by step direction one can’t fail. Terrific!

    That's how I like my peanut brittle. I don't move it when it hits the pan at all. Because to me, when it hardens it's very thick and airy and that's what I like.

    Thanks so much for sharing your video. looks very delicious and yummy i will definitely try out your recipe. I have a question, what if i decide to cook or would like to cook peanut brittle in larger batches or in commercial quantity , like say 10 cups or even 16 cups of spanish peanuts, do all i have to add is the proportional rate of the other ingredients. can you advise me sir on what is the most or maximum number of cups of peanuts you would recommend in one batch of cooking peanut brittle. looking forward to your help and thank you so much

      If you are planning to increase the batch size you will have to multiply all the ingredients by the same factor. If you want a batch ten times larger then you will need ten times the amount of all the ingredients equally. The batch will have to be processed differently than you would by hand if it grows larger than about three times what I have shown. Larger batches may require a large kettle as well as an extra person or possibly machinery. The way the batch is poured out and cooled will also need to change to accommodate the flow rate of the finished batch when poured out. This is necessary to maintain the structural quality of the brittle. Good luck.

    I have a question, Chef: I can't wait to try this recipe! Is it a "no-no" to try to make this candy when it is rainy outside? I've had a problem with divinity not coming out right because of the weather, and am hoping that you might know! This Texas weather is not always cooperative around the holidays! Thanks!

      Yeah Divinity can be a problem when the humidity is high. A solution to that is to close up all doors and windows and use the air conditioner to dry out the air in the house before making it. Peanut brittle does not suffer from the same problems that divinity has, it should cook up and set just fine in any weather. 😀

    As I bee keeper I always to use honey in my recipes. What do you think about using honey instead of corn syrup?

      Anytime I want to try new ingredients in a recipe I usually get used to the recipe by performing it a few times as it was originally written, then I substitute the new ingredient and see what changes I get. After that Ill further modify the recipe based upon my findings.

    Hello Stuart , I love this video and I went to my local Food City and my local Kroger to get everything to make your peanut brittle and I can not find raw spanish peanuts , The stores said they can't get them any more, but I did find raw shelled not spanish. Could I make this with any other peanuts? Thank you, Stacy from Clinton Tn.

      Any raw peanuts will work. Raw is the essential word here if the peanuts are already cooked then by the time you get finished they would be overcooked.

    I think the reason this show has limited subscribers is because of the lengthy conversations he likes to have prior to getting on with it many people have busy lives and don’t have time for lengthy conversations prior to showing us how to cook something somebody’s introducing giving us the history of his family prior to can be put in the text in the bottom when someone is looking for a recipe on RUclips they’re not looking for a lot of conversation prior to five minutes of talking is too much.

    so i tried this and its my first time cooking anything like this couldnt get raw penuts so i had to use lightly salted but thats not well i used a tray to small and now its like 2inches thick 🤣 so gunna be interesting just finished a min ago ill reply when i break it but for the most i followed instructions besides penuts and i used brown sugar

    Please get your stove tested and safety checked as your burner is NOT running at correct pressure for the gas level you are stating. I ran mine at med to almost medium low and finished in less than 30 minutes. I sent the video to a gas maintenance person and he says you are in DANGER and NEED TO GET YOUR REGULATOR CHECK,TESTED AND OR REPLACED. YOU ARE IN DANGER.

      The ingredients quantity starts at 21:12. I layout almost all my cooking videos this way I introduce the dish then the ingredients then I show how it's made then the ingredients quantity then the plating and finally the outro. 🤠

    hey tex, i was watching a "how to make honeycomb" video and noticed that it was alot "fluffier" but was very close to same recipie.
    can you add just a touch of apple cider vinegar without messing with the taste? it would make the whole thing react more.

    I made this peanut brittle, it is so good and easy to make. I also watched the making of tamales, haven't tried making them yet.

      Using raw peanuts the extra time allows the peanuts to roast in the sugar giving them a delicious flavor. In addition the extra cooking time allows more of the oil in the peanuts to cook out and into the sugar further flavoring it and making the candy more peanutty in flavor. Give it a try, it's a very old recipe that's time tested.

      Because it will over cook them. Makes sense, since you want the peanut oil flavour to mix with the sugar. Im sure roasting them gets in the way of that process to some extent.

      The higher temperature helps to develop caramelization in the sugar, its just added flavor.

      At the beginning of one of my recipes I introduce the ingredients without the measurements then after demonstrating how to make the dish I again show the ingredients and give the measurements at that time.

      302 degrees is hot enough. The reaction that baking soda causes....will make the peanut brittle puff up and become "airy", almost softer to eat versus the very hard peanut brittle.
