- Fermented cashew nut cheese is not only delicious, versatile and dairy free but it’s also easy to make! 😆🧀 🥜
I use it to eat like cheese (obviously) as a dip or it’s good to richen sauces, pesto’s, soups and vegetable purees as it’s loaded with umami greatness! 🎉🔥👌🏻
If you don’t have a dehydrator you can leave them uncovered in the fridge for a day or two to dry out 🌞
Recipe:🌿
500g raw cashew nuts 🌿
1 litre of 3% brine (3% salt to weight of water)🌿
A splash of fermented wild garlic juice 🌿
Wild garlic leaves. I used the ones in my wild garlic vinegar🌿

Is the fermented wild garlic juice a big part of the flavor? Or rather, my question is: Do you think the fermented wild garlic juice can be replaced by another one, like pickled cucumbers or sauerkraut?
Yeah it’s just an addition and seasoning. You can indeed replace it with anything you like or leave it out. Sauerkraut juice would be good though 👍🏻
