  • Thank you for watching my video! I am sorry I’ve been MIA lately. I have found it a Challenge to juggle everything this summer. I haven’t been experimenting a lot in the kitchen either. I did make this switch though. I’m trying to lessen my oxalate load.
    This is my second time trying the vanilla egg pudding! I’ve been trying to wean off chocolate, normally I would make Maria Emmerich‘s chocolate egg pudding.
    The first time I made it I had more vanilla, so I used less sweetener, this time I didn’t have enough vanilla so I added more sweetener. You can totally play around with your sweetness to vanilla taste ratio. I find that if you taste test before putting it into the fridge and it’s to your liking it’s usually really good when you go to eat it the next day or two after. You could swap out the cream and use your milk of choice.
    No it does not taste like eggs.
    Ingredients in this batch
    3 eggs
    1 cup liquid egg whites
    1 tbsp vanilla extract
    1/3 cup monk fruit sweetener
    1/3 cup 10% cream
    1/2 cup of water (just under)
    6 servings per recipe

    I made this last night. Just had my first serving. Delicious, and so easy to make! Instead of the cream and water, I just used Silk Coconut Milk. It came out great. Thanks for another great recipe!

      I can't have the cream, so I'm wondering... Did you replace the amounts listed for the cream and water (combined amounts), equal with the coconut milk?
      I'm so excited to try this!

    Hi - I love your videos, you make it look easy and doable. I was wondering if you've ever tried making the pudding with the egg white powder ... I have a lot on hand and don't enjoy the bread any more at this time. It seems we could replace the scrambled eggs with powder and water - just like we do for the baked goods? Not sure, if it would be good, lol. Guess I will just try it, but since you're so creative, thought maybe you have experimented with that. :)

    Macros equal: net carbs=5, total carbs=69, fat=29, cal=453, protein =41 (using heavy cream for cream in recipe) this is for the whole recipe so if you want servings you can divide into how many servings you make it. I used Carb Manager. Total carbs are 64 from the sweetener, but you subtract 64 to make it net 0. Heavy cream is 2 net and total carbs and whole eggs are 3 net and total carbs.

    Thank you so so much for sharing this recipe and instructions and that it makes a small batch! I love to take "liquid" snacks with me to work in a reusable squeeze pouch and wanted a quality vanilla protein pudding recipe that didnt have "extra" ingredients like powders or chia etc. I'm so excited to try this. Do you think it would still work if I pureed some spinach or kale into the egg mixture before scrambling, just to get some extra veggies in? Thank you!

    I am guessing you could use date syrup or maple syrup instead? I don't do monk or stevia etc.

    I'll have to try this for my kids. I used bake a lot but now that I've changed my diet I dont want to bake all these sugary snacks. I'd like to try some keto things and see if they like them. Is 10% cream half and half? Thank you

      Half and half is half milk and half cream.
