  • Hey guys thanks for watching my video! I was trying to get ahead of my weekend baking prep and thought I would tape this and share for you. I am sorry I lost the footage of me piping out the bagels buns and hot dog buns through a large Ziploc bag. I pretty much added the mixture to a large Ziploc bag, cut the corner off and piped out perfect hot dog buns, buns and donuts. Again I know the counter that I mix the bread on is quite narrow and small I’m not able to get the best angles and footage I am sorry about that. Thought I would share anyways. Thanks for watching my video!
    Ingredients
    2 eggs separated
    1 cup egg whites
    1 teaspoon cream of tartar
    3 hefty tablespoons egg white protein powder
    1 teaspoon nutritional yeast
    1 teaspoon of xanthan gum
    2 hefty teaspoons confectioners Swerve
    Dash of salt
    1 tablespoon melted butter
    *For the cake I did add 1 extra teaspoon of sweetener and 1 extra tablespoon of protein powder.
    * For the Danishes filling I heated 1 heaping tablespoon cream cheese in the microwave for 30 seconds I added 2 teaspoons of powdered Swerve. I used a dollop of keto raspberry jam too.
    Preheat oven to 325°F or you can use your air fryer which you will not need to preheat
    Separate two eggs from their yolks and whites.
    Add egg whites to your mixing bowl and one cup of liquid egg whites.
    Start your mixer and add one teaspoon of cream of tartar.
    Once mixture has started to whiten add your egg white protein powder 1 tablespoon at a time.
    Next add your nutritional yeast while it’s still mixing.
    Then your xanthan gum, swerve and salt.
    Continue mixing until stiff peaks are formed. (about 4 minutes total)
    At the end had one yolk at a time until mixed in.
    Then your bread mixture is ready to be put in a baking pan or mold, or piped out on a baking tray in the shape of hotdog buns, buns, bagels, danishes, or you could spread it flat to make a garlic bread, you can cover hotdogs or even do a pizza. The possibilities are endless!
    Bake at 325°F for 35 minutes
    Halfway through add melted butter to tops of bread or buns.
    When making bread or buns you can leave in oven for 20 to 30 minutes with the oven shut off. I would not suggest doing this with donuts or danishes.

    I had tried psmf twice before and just could not see myself ever eating it. But your recipe is a game changer! I used it to make French toast that was awesome! Looking forward to some other things now! The texture is so much better!

      You should try the danishes and cinnamon rolls. Incredible! I add more sweetener and vanilla to the batter, andvyiday I added butter vanilla cake flavoring, but its probably delicious either way.

      Aww thanks 🥰 I have used a regular bread knife too, but this electric carving knife, I believe it’s just Hamilton beach I got it for a gift from my parents for Christmas one year works the best❤️🤗

    Omgosh Crystal.... This is a game changer for me!!!! I don't eat low carb breads from the store. I do without. I made this today (in the oven and in the Ninja Foodi) and it was absolutely delicious!!! Thank you for all you do!!!

    Interesting version of the bread. Thanks. Will definitely try this as my attempts at the original version in UK with UK available ingredients have been a disaster. Interesting that you add the egg protein powder quite early on, not after whites have already whipped to stiff peaks

    Thank you for all the wonderful pmsf bread / bun/ cake 🍰 🥖 videos! ♥️😊 I have started to use a little nutritional yeast & sometimes I’ll add in some 🥚 yolks & wow ! It now has a nice crust on the outside & soft / a bit doughy like in the inside just like bread 🍞 😁 I’m so happy. It provides great variety for me & saves time. I do pmsf days 3-4 days in a row. it’s tough but the results are worth it. I change my cardio & strength training to fit my energy on those days but no loss of strength & the scale is going down 3 sometimes 4 lbs a week. no bloating no more sugar cravings . I still need electrolytes & magnesium & use the Real Salt 😀 this bread save the day! . It’s very filling& satisfying paired with some meat 🥩 .

      Thank you so much! I know I just love this bread. I do really like the original too. This is just nice because I like the crust and how it doesn’t crumble on me.
      That is awesome you’re doing great! I have definitely lost weight with this way of eating too. I don’t have any sugar cravings but I still feel I use this in desserts and I’ve been having protein shakes only to get in enough protein if that makes sense.

    I just found your channel and just learned about protein sparing… I’ve been trying to follow ketogenic lifestyle but so much of the recipes call for almond flour and other types of flour and I am allergic to nuts and a lot of other ingredients, which is why I am so thankful to found your channel and Maria!

    I’m back... this recipe is so awesome, i know it’s Maria’s with tweaks, but i appreciate what you’ve done! I am baking for our week, I turned 1 batch into 12 danish for me, and used Maria’s recipe for cinnamon bun filling and turned another batch into 12 cinnamon buns for hubs. I also made another batch for pigs in a blanket (7 full size hot dogs) and had enough for 2 large hamburger buns. I have run the macros... Maria’s PSMF “bread” is a miracle. I find your recipe tweaks/modifications turns out a fantastic product! 😀

      That’s awesome! Thank you so much! You know to tell you the truth I have not seen her cinnamon bun recipe I don’t know what she uses for her filling. I know I had made cinnamon buns before she did. I’ll have to watch it and check it out. What is in her cinnamon bun filling?

      Maria has a youtube called Protein Sparing Cinnamon Buns with her son Kai. The filling is butter, sweetener, (i used brown sugar swerve), cinnamon, and egg yolks.

    I tried the PSFM for the first time today. So glad I did a super small batch because I had so much trouble getting the egg whites to get stiff. I was ready to give up until I saw this video. Your goodies are absolutely beautiful! I need to keep trying. Thanks for this video!

    I had been hesitant to try making this bread because of so many people saying it didn’t turn out. But your version seemed much easier. I used my hand mixer and made 4 danish and a 9x9 pan of it. ( somehow I forgot to add in the egg yokes at the end). But it is really good! Thank you for such an easy way to make this !

    I just watched your video and went immediately and made this recipe. It is cooling now. I don’t know if I can wait to try it. I made 4 loaves from the mixture and about half way through cooking I added sharp cheddar cheese to two of the small loaves. I can’t wait!!!

It poofed up more than I expected and touched the top of my tabletop convection oven so lesson learned, next time I'm making it in the normal oven, lol! :D I'm almost out so definitely making it again SOON!     I'm having fun with danishes. So far I've made strawberry and cherry cheese danishes, cheese chocolate chip, eclair, and today lemon cheese. This dough also well for the cinnamon "buns."

    Let me tell you...you have taken this recipe up more than a few notches! I did add vanilla and additional sweeter to my batter, because I was making cinnamon rolls and raspberry cheese danishes, and WOW, Wow, wow....this is incredible. That dry, foamy meringue texture has been morphed into a fine, delicate pastry dough texture and taste. This is a game changer! THANK YOU!! For some reason my dough shrinks down quite a bit when cool, but I can live with that. I wonder if I should try using room tempurature egg whites.

      Today I used room temp whites and a bag to pipe. My danishes and cinnamon buns came out much higher and nicer.

    Is this recipe closer to the texture of bread? I know it's impossible to expect the SAD version of bread but any type that gives us a closer experience to what we're used to is GOLD!! I made the last one - post 4/20 - and I didn't do too well with it. I can't wait to try this.

    My husband and I waited until the loaves were cool and then sliced and ate one. I put cream cheese and Everything seasoning on it. It was delicious. I can’t seem to be able to post a picture but it was beautiful too. I will make this again for sure.

    OMG I'm praying these turn out for me, all my other attempts have failed. Those danishes are tempting!! I have multi collagen powder I'm going to try subbing... hopefully it works like quest did. I think this would still fit in my PSMF days as long as I omit butter and don't eat a ton of other fats.

    Thank you for this I contacted Maria emmerich kind of asking if there was any other recipe if you use because I'm allergic to chicken eggs and I can eat duck eggs so she basically told me her response was find another recipe so I thank you for putting this out there I'm going to try it tonight

    I made this today but misread about the butter.. I added it to the recipe🙄 and thought the yolks weren’t to be used.. don’t know how I missed that.. I also dehydrated egg whites and powdered them myself.. they looked beautiful when done but they all sunk.. I will try again in a few days. Think I will use some for strawberry shortcake.
    (It made the most delicious strawberry shortcake! Just like the one we used to buy at sobeys🤗)

    So many challenges making this bread, thank you for your multiple demonstrations on how to make it and create other things with it. It gives me hope that I can get a good result! All my failures (fallen loaves) make excellent french toast!

    Thank you for this video. I am going try the bread without the white powder. Going protein powder version. Egg white powder is too expensive for me , so as it doesnt rise the same is no biggy to me ..l had to subscribe , TFS. Hugs. ❤️🇨🇦

    Have you tried ultra prime beef protein powder?
    They have strawberry, vanilla and chocolate, its very clean and tastes delicioos .
    I would love if you would use this protein powders in a recipe .

    So does the xantham gum and egg yolk addition make it more bread like abs less sponges? I haven’t tried it bc I wanted to try to keep the fats down but curious about your reasonings.

      Yes it does make it less sponge like for sure and I really like how the crust doesn’t crumble as much for me. It doesn’t bump up my macros too much that’s why I’ve continue to use it. I’ve heard but I don’t know if it’s true that the egg white protein powder that Maria uses has Xanthan gum in it🤷‍♀️🤗

      Thank you! I do not have a video/recipe for the raspberry jam. Mine was bought online it is good good sweet raspberry spread. I wouldn’t mind trying my own jam I probably would just take some raspberries and heat them down and add some sweetener and gelatin if I did it on my own though 😆🤗

      The egg white protein powder is kind of what gives it its structure it doesn’t work the same by using more egg whites unfortunately. I know it is almost impossible to find egg white protein powder in the stores you generally have to order it. I ordered mine off of Amazon and it came fairly quickly though🤗

    Thank you so much for all your experiments and sharing! I found them so enticing and looking so great-all the variations. Your results look so great. I tried the bread-and was only mildly successful. It looked beautiful putting in oven and was beautiful browning until I spread on melted butter. It then began to deflate slowly. I had made two buns & put in separate pan which I had to pull out after 20 min. This is when I buttered the loaf. The results were disappointing with the loaf. Tasted pretty good but was deflated to the point of being only about 1 1/2 inches tall. Looked like a dutch boy pancake. Also the center was still a little bit moist. Can you tell me how tall in inches your bread gets? And if you have a clue as to what might be my problem please respond. You seem to have wonderful results. I used liquid egg whites from carton. Please help!

      Check the temperature of your oven, it could be that your oven runs at a lower temp & may need to cook longer (mine runs about 12 degrees high so I set it at a lower temperature). When I saw her apply the butter, my first thought was "no, add more" - perhaps that is your thinking too & we need to scale back on it. Good news is that you had some yummy flat bread LOL!!

      I’ve never seen any protein sparing with the nutritional yeast but I use it because I like the flavour of it I tend to use it in a lot of keto baking I do. The egg yolks and the butter I suppose put the fat Count up which makes it not proteins Sparing but still works for me and my macros. Thank you❤️🙏

      I’m sorry I’m only answering this now, no for a total of just over four minutes when I start my mixer it takes me about a minute to add the egg protein powder if that makes sense🤗

      Aww Thanks so much! Yes a handmixer will work you don’t need a stand mixer. I am not sure of the macros other than the carb count is low there is just a little bit from the eggs and Xanthan gum. I will have to figure out the macros I know I am bad for posting that. 🙈
      Of course there is carbs in jam if you’re doing the danishes but there are minimal ❤️🤗

      So taste wise it was still really good. I actually really enjoyed the cake. I had the whipped topping and fruit on top and it was so good. I just don’t know if the mixture stays as firm and the cake stays as risen but it was still delicious🤗

    Help! I was so excited to make this bead but when I put the egg white powder into the egg whites the mixture deflated and didn’t rise again. Not sure what I did wrong.

      Oh no! Did you gradually add the egg white protein powder a little bit at a time? Were you using a hand mixer or a stand mixer? I know I add it in as I’m going towards the beginning. In Maria’s original recipe she adds it at the end that may help. I’m sorry it took me so long to get back to your comment🤗

I'm down in Costa Rica and don't get to buy the egg protein that you get that easily. But I got one from a national brand. It is a very uncommon product but it seems to work ✨❤️

      I think it would still work out. I like it as a stabilizer and I find it gives it that extra support, but I don’t think it’s necessary…you might not get the same shape but it will still be delicious🤗

    Does the nutritional yeast change the taste of the bread? I have been having such a hard time eating the bread. I’m not a fan of the egg taste.

      I do find the nutritional yeast add extra flavour to the bread for sure! If I make buns I find adding everything but the bagel seasoning changes the taste to🤗

Because I was just doing a ton of baking and taping this for RUclips I didn’t play around with adding things partly because I was using the mixture for the buns and the danish. But adding some vanilla would taste amazing I know in some of my cakes I’ve even added vanilla pudding from simply delish and I’ve added chocolate pudding powder to my chocolate cakes it’s so good I only need a tablespoon or two🤗

      Aww thanks so much! Yes you could totally use cocoa powder instead of the pudding powder, The pudding powder does have a little bit of xanthan gum in it so you might wanna add a pinch more of that too🤗

      It will work without all three that would be closer to the original recipe of Maria Emmerich’s‘s although I think the egg white protein powder she uses has xanthan gum already in it. I do find the Xanthan gum is what gives it more structure. Taste wise if you leave all three of those out it will be fine just not sweet of course🤗

    So my bread keeps rising in the oven doubling in size in the beginning and then shrinks towards the end of cooking to like a third of the normal size... any tips???

      I’m not sure but I’ve Heard of this happening to a few people. I did not experience this, but my newest version of this bread I’ve been using a tablespoon of coconut flour with my dry ingredients at the end and I feel it really helps with the texture and overall quality if you are able to tolerate coconut flour🤗

      I honestly wish I could fit a bread pan in my air fryer😆 only because it seems to do the best in there for me, it doesn’t deflate and I don’t have any problems. I did make a big French loaf in the oven and it didn’t stay as risen as it does when I use my air fryer. Unfortunately you can only make a loaf so big in the air fryer🙃🙈

    Where are you located? I’m in Toronto, Ontario and you are the first person I’ve ever seen using the exact same egg white powder as what I have. Feel much more confident that my results may look similar to yours.🤞🏻, I also love that you show the steps at each and every step and the pans that you use and what has worked for you and exactly what the recipes look like at each step. Thank you for sharing!! I don’t have an air fryer like you have and that’s my only concern however having said that mine is the one with the dual zones and I’m planning to use parchment paper and make the loaf of bread the size of the inside rectangle of the pan and I’m wondering whether or not I should be using the crisping tray underneath? It would allow greater air circulation but I don’t think it would actually crisp it maybe just brown it a bit more then yours was? Thanks again for your recipe!! Can’t wait to try it!!!🥰🙏🏻🇨🇦

      @@ketocarnivoreishcrys3446 no I never tried my air fryer I’m sure it would work but I don’t want to take a chance because the ingredients are soooo expensive. My biggest concern is the depth required during cooking because the bread tends to rise soooo high while it’s baking I’m afraid it would make a terrible mess inside my airfryer. It may be okay to do mini loaves and do a couple each? But when I make a batch I tend to want a whole loaf and I haven’t yet found a use for the mini loaves.
