    Kholodets isn't made of gelatin, it's meat broth(and a long boiling process) and normal Russian would never put gelatin in there, it's just sick. Also buckweet is a vitamin bomb and was considered the best option for soviet sportsmen, thats why we love it so much

      Gelatin is cooled (dense) bone broth.
      You seem to never have actually made холодец before. No one adds it. It's boiled out of whatever stock is cooked.

      I don't think she meant to imply they added gelatin. The gelatin is naturally there in broth that is boiled with bones. The solidified combination of gelatin and broth is called aspic. It would have been better if she used that term.

      The 'kh' is meant to represent the Russian letter 'х' which is pronounced as a guttural h. We don't have a letter that makes that sound in English. Sometimes 'ch' is used too, as in 'loch' and 'channukah'.

      Ks Y That's because majority of Kvas sold in US is artificially flavored. If you go into Net Cost look for refrigerated Kvas that's brewed.

    Who does kholodets with chicken? It has so little natural collagen they probably substituted it with some gelatin. No wonder she does not want to try this shit again! You need to use pork of beef and proper parts of it. With bones! And cook it the right way. Then jello will be softer and so flavorful and on top of tender meat - that's the true kholodets. And it's super good with spicy mustard or horse-radish.

      oroontheheels my mom makes great holodets from chicken, she uses old family recipe. You just gotta know which parts to use, agree you must eat it with hren or spicy horse radish

      Probably Ukrainians or Jews do it. I've seen a lot of such weird stuff in this kind of supermarkets in the US, that I've never seen in Russia, like Olivier salad with chicken or chicken cutlets, etc. These are Ukrainian-Jewish supermarkets, not Russian.

    Pickling is historically practiced in places with long winters. It is a method of preservation. For thousands of years people had to survive somehow 6 months of winter & 8 months of no growth/harvest. Russians, Fins, Estonians, Swedes, Norvegians and many others pickle, salt, smoke or dehydrate almost everyrhing. You should try Russian variety of fish preserves - these are particulary while.

      actually not a big difference. Moreover I bought in that market exactly same food that I bought before in Russia. And I ate pizza in Rome and in NYC - sometimes taste more different between 2 restaurants in NYC than between NYC average american and italian pizzas.

    Romanian food is basically the same. I think all Eastern European supermarkets are similar to this. We do put a big emphasis on sausages, cold cuts and we Romanians also pickle a lot as well. and we do put a big emphasis on chocolate : )))

    Great job, so enjoyed your market tour. Took me back 10 years to my 12 brand vodka tasting party (a Slate Magazine inspiration). Vodkas were accompanied with Russian zakuski (закуски); plural for "appetizers". Like; salmon caviar on rye, sprotes, (small smoked fish) sliced beef basturma, Salat Olivier (potato salad w/ chicken, peas & carrots), chafing dish pork stroganoff & such. Fell in love discovering Eastern European cuisine. My stomach is FREAKING growing people! Which vodka won our amateur tasting contest? 3rd; Grey Goose, 2nd; Belvedere & 1st place; Chopin Potato Vodka.

    In Mexico we also eat beef tongue and rabbit. Though I suppose they are prepared way different. We also add sour cream in a lot of our dishes. Pickled chilli peppers are also eaten on a daily basis. Just thought that was cool. I would love to go to Russia some day.

      Stevan Nikolic there are Russian supermarkets in Germany. Just pay a visit to Nordrhein-Westfalen. The chains are called "Grand", "Mix Markt" and "Kauver". Is closer than going to the US to grab some Russian food xD

      it's a suckling pig and they are pretty common in grocery stores(esp at x-mas in italian neighborhoods), you just have to ask butcher. My 80 year old mother gets one for porchetta every year

    oh ya, I go to this place almost every day, seriously, but how she puts all the food is a lot less then the best part of the actual store. The side with soup is the best part. They have 4 or 5 different soups and you scoop them out and there are also dumplings. Well what a coincidence, a really popluar youtube channel from around the whole America went to the place that I go to every day

    Good to see the Russians haven't lost their traditional cuisine like a lot of western European immigrants have in the US. It's a pitty that the British, the Germans, the Dutch and Scandinavians have kinda given up their unique traditions for bland Americana suburban fastfood type stuff.
    At least the French in the south have kept their traditions and expanded on them by mixing in traditions from other cultures.

    Pickling regularly changes the initial taste but really helps to keep all vitamins safe. Much better than conservation or freeze. I eat watermelons pickled regularly. Very tasty.

    My mother made preparations for the winter. She marinated tomatoes, cucumbers, zucchini, pattisons, and yes, watermelons, too. Cooked compotes of all kinds of fruits: apples, plums, cherry plums, apricots, gooseberries, pears, cherries, merries. Much of this grew in our garden. She cooked jams of apples, pears, strawberries, cherries, merries, gooseberries, currants, raspberries, zucchini, apricots, cherry plums, sea buckthorn and more. These are all different ways of conservation that a single word "pickled" does not convey. That was her generation, everyone was doing it. The current growth is generally not aware of what preparations for the winter. If I wanted apples in winter, I went to the store and bought them. But the recipes remained. Now such products are not produced at home, namely in the commercial networks. And ready for sale. Do not listen to youngsters who claim that there is nothing of the kind in Russia, they simply put no interest into.

      no, it's our ethnic foods by ethnic sellers. it's not physically in russia because its ethnic customers have immigrated to Bensonhurst and have a economy based on and supporting their needs.

      There are some very large Russian communities in the NYC and Chicago areas. While there are US food products on the shelves, there is also just as much imported Russian grocery items too. They are owned by Russian Americans and vast majority of the people who shop at them speak Russian or some other Eastern European language.

    I shall admit the store looks pretty decent and has a nice selection of things you can actually get in a typical Rusiian supermarket . I would even say that meats and cold cuts from the video look more appetizing.

    If it is pure pickling then there will not be any vinegar used. Fermenting foods is the correct term. Fermenting foods was started a very long time ago as a way to keep food edible for long periods of time when there were no refrigerators and freezers. Fermenting foods is done by placing the food item in a crock. Then a heavy brine solution (salt & water) is poured over the food items until all of it is submerged in the brine. Stones are often used to weigh down the food items so they do not float causing part of the food to rise out of the brine. Spices are often placed into the crock to add distinctive flavors, like dill weed with cucumbers to make dill pickles, etc. A top is placed over the crock that has an airlock that allows off gassing of the fermentation process out but stops outside air getting in. If you enjoy pickles that you've purchased at the grocery stores I can guarantee you'll like real fermented pickles more.

    I was amazed at how similar it was to stores here in America. We don't have that vast variety of meat product in regular stores but our selection is usually good and we have specialty shops that sell cured meat product. Eating blood was forbidden in the new testament so you don't see a lot of blood sausage in America tho you can still find it. We have vast selections of convenience foods like chips, cereal, frozen foods, and cheese in our stores. Overall I would feel quite comfortable walking into the store above as the layout and everything feel familiar.

    Pickle done with salt. It is natural preservative used for many centuries. This is how you keep food in your storage and does not let it go bad. Turks also pickle everything.

      I would say that everybody, with a brain and a desire to eat all winter. pickles food as well as dry foods (and smoke meats). Americans have lost touch with rural life so completely that they have no realistic idea of what basic life and agriculture is like. Much of what she is oohing and ahing over and finding amusing are common methods and foods in rural areas of the U.S. I am sure I'm being a little snotty but what is so funny about a frozen pig? Does she fall about laughing when she sees a quarter of beef or a 30 lb turkey? I'm not Russian but I am finding her more than a little annoying.

    Yes we pickle watermelons, but personally me I don't like it :( I think most of people too- its salty, has weird taste)) About ready meat-sausages: on a feast we have a plate of that in different variety and cheeses, its like a starter :)

    I love love love Russian food. They know how to eat, and you NEVER go home hungry. My husband is a Russian Jew, and holy crap, I could eat my Cherokee convert self sick on the food. I make a lot of the food as well, and I can my borscht if I have the time in the pressure cooker.

    Great video, but no offence, going to a "Russian" store in NY will tell you nothing about actual Russian stores and Russian culture. I am Russian, I've noticed that all Russian stores in the US are owner by Eastern Europian jews and operate oretty much like an American store, nothing like stores/markets in Russia. I am not saying it's bad, but it's just really far from a Russian store. To give you an example, Russian stores in US are just as close to original culture as Panda Express to Chinese culture...(not close at all)

    These videos shouldn't be titled "How to..." because she doesn't know what she's doing and is just exploring like any of us would. Not what I was expecting and not really informative then. A bit cringey too - "the Russians do this" (based on her one observation in a store). Thank goodness I haven't seen one in a Chinese market, I'd be so annoyed.

    Ok, holodezh as it goes, doesn’t made from chicken and jello, it made from beef bones with a little bit meat on them and spices, you can add chicken or pig ears to it but I personally like it when it mostly viyshka (stock), so basically boiling beef bones for 10 hours making stock turn into jello when cooled. Bones of course taken out. It’s made on New Years Eve holidays basically because it’s colder than Winterfell here and its actually quite nutritious. And in times when it was invented you couldn’t just waste those big bones that you can’t make soup with because there is not much meat on them.

      Anna B well, in Orthodox Christianity about 200 days of religious fasting. meat is not used. besides vegan and vegatarians, too. I have a couple of friends, although it is not very common in Russia.
