Mandy, if you're ever out of buttermilk for cooking, you can substitute with 1 cup milk with 1 Tablespoon of vinegar or lemon juice stirred in. Let it set a minute or so to thicken. I usually use that instead of buttermilk. That way I don't waste half a carton of buttermilk. Your recipes always look so good. Happy cooking!
I made the same comment too! We never kept buttermilk in the house too often growing up and if I needed it for baking I would always make it with vinegar. A great way to make an ingredient you need without having to buy it and figure out how to use up all the rest of it!

Tator tot hotdish (the original one, like you made) is a huge winner in Minnesota. We usually mix the cream of mushroom soup, hamburger & veggies all together, then layer on the tots and top with the cheese!
Oh my! There are two I plan on trying either this week or next week. I try so many of your recipes that my family teases me about what my friend Mandy is going to make us for dinner!
Oh my word! I cannot wait to try those pork chops! And the chili! It’s supposed to be yucky tomorrow so it will be perfect snuggle down and binge watch my stories food.
With that tater tot casserole sometimes stuff that doesn't look very appetizing taste the best we grew up with what we now call slop and it was pretty much your tater tot casserole but it was macaroni and cheese You can make macaroni and cheese and put some kind of meat in it mushroom soup whatever spices and or other seasonings you want and whatever vegetables you want. When you are done you put whatever cheese you have on hand in it mix it together and eat. No oven required. Some of our favorite meals that way.
I made the tata tot casserole this evening but we don't have them in the UK so I grated raw potato instead and seasoned it with melted butter and oil so it didn't discolour but the raw potato took too long to cook. Next time I will make them into round rostis and half cook them in a skillet before placing them on top of the casserole. I also added diced carrot because I had it in the fridge. It was tasty. A bit like a richer more tasty version of cottage pie but less sloppy. I'd like to try making it with leftover chicken next. Thank you Mandy. And I love seeing little Gracie Lou 💖

It's so wonderful to have a mentor or sweet friend to share fun ideas and projects with, when I started teaching as a homeschool teacher I had two precious friends step beside me and help me tremendously and now I am able to do the same for others. 💘

I made the pork chop recipe tonight and it is delicious. The gravy/sauce is soooo good.I went as with the 1/2 cup of honey as Mandy did. It’s not sweet and not spicy. This is a monthly dish for us.

My family’s favorite tater tot casserole is taco meat, topped with some fiesta nacho cheese, then the tater tots or the diced hash browns, sprinkle cheddar cheese over the potatoes and bake. Delicious!!
