Mama's Whole Wheat Bread Recipe (by Peaches and Cream): 1) Make the sponge: mix the following in a large bowl, then cover in plastic, and let rise for 15-20 mins (or until really bubbly): * 3 cups (390 grams) whole wheat flour * 1 1/2 Tablespoons yeast * 3 cups (700 ml) warm water, about 110* Fahrenheit 2) Mix the following into the sponge from step 1: * 1/2 cup (185 grams) honey [I put 1/4 cup only and still find it sweet] * 7 Tablespoons (95 grams) oil * 1 1/2 teaspoons salt [put only 1/2 tsp if you are watching your sodium intake] * 3 cups (390 grams) whole wheat flour 3) You will probably need to mix in another cup (130 grams) or so of whole wheat flour until the dough is of kneadable consistency (i.e. not too sticky and not too dry). 4) Knead the dough for 10-15 mins (with machine, or by hand on a floured counter). Whole wheat bread needs more kneading than white flour to make a soft fluffy dough. Don't add too much flour as you are kneading (to avoid making your dough too dense). Knead until smooth, soft, and elastic. 5) Let dough rest 10 minutes on counter. Meanwhile, grease your baking sheets with cooking spray or oil. 6) Grease countertop, dough, and hands with oil (to prevent sticking), then form the rolls any shape you like (e.g. 13 large rolls, or 20 medium rolls, or make loaves). 7) Cover with plastic wrap and let rise for 30-40 minutes until almost doubled in size. 8) Bake in preheated 350F oven for 25-30 minutes or until golden brown. 9) Brush tops with warm butter then serve, or transfer to cooling rack.
@@stevenrevins You can use pretty much any cooking oil you want. I've used avocado oil, but it's pretty expensive. Olive oil, vegetable oil, etc should all give the same results though unrefined oils (like virgin olive oil) might impact the flavour a bit.
Since nobody reviewed this, I'll be the first one to do so: I used a little more flour (metric measures) than the recipe required. Nevertheless they came out fluffy and puffy. Just quite flakey, although I kneaded the dough for 20 minutes, but I think it's the flour I used, which seemed not to be as finely grounded as yours. Also a little bit to sweet for my liking (I used 120g agave), since we Germans enjoy our breads on the savory side. But all in all it is bouncy, soft, fluffy and delicious as a hamburger bun or sloppy joe. If that's what you're looking for, this recipe is perfect.
I lived in Germany for 6 years when I was in the U.S. Air Force. I preferred German bread because it wasn’t sweet. I read your review about this recipe and was going to use half the amount of honey. Oops, I completely forget the honey and it tasted perfect for me. I mixed this dough for 15 minutes in my kitchen aid and this came out super soft and fluffy. The only other thing I did different was sprinkle Maldon’s salt flakes over the rolls before I baked them.

Just made a batch. Made half of it into a loaf and buns with the rest. I kept the bread in got 35 minutes at 180°C. It tastes great, but his wa........y over the pan. So next time I'll use two pans. The load is also awesome. My family loves it.

I made this bread a few weeks ago and it was great, here I am to make it again. Awesome explanation. I had regular bread flour so I mixed it with the whole wheat flour. Used less honey and salt because our taste is used to it. They grow a lot so will make the smaller this time, will also be using them as hamburger buns. Two thumbs up! Thanks!

You can use lightweight cotton napkins instead of plastic wrap for the rise. My metal bowl is like yours and a napkin did it for the sponge with a large dinner plate on top. Great recipe! Made six rolls and one loaf. The spatula shape is perfect for the mixing.
OMG. It worked, perfectly. I could not do the squeeze thing, I Tried, but... So I just kind of stretched and formed them into shape. They came out looking great and tasting even better. Perfect size for Hiking Sandwiches that won't get squashed in my pack. It may be the Flour I used, I get it from a Stone Mill out of Waco Texas, Def not a light flour but the flavor is really good. But they seem heavy when you pick them up, though they are fluffy on the inside. Thank You again, I will be trying more recipes of yours. Another thing I only burnt my hands 3 times, that's a record.

I used just 1.5 cups of warm water for the sponge, but I think you are right when you mentioned that the stickiness of the dough depends on the type of flour used. They turned out good though a bit dense and not fluffy like white bread. I will try your tips of letting it rise for a longer time than 40 mins before baking and adding less flour as I experiment with this recipe...They tasted better than white bread, just need to get it right the next time 👍 Can you post a recipe for Rye bread? We recently started buying wheat berries and milling our own flour. But we aren't fully whole wheat. So I have been experimenting with this recipe.... I've made it 3 times now because it always turns out great, but the dough is the stickiest to knead and it seems a bit finicky... even if I replace a cup of whole wheat with 2 cups of white, I still end up kneading in another cup or 2 of 50/50. Also I do add a bit extra salt and replace half the oil with melted butter because I like the extra flavor it lends. Most recently I reduced the liquid by a 1/4 of water... but still a bit sticky.... oh well. Also I am able to get one small loaf and about 8-12 medium rolls because of the extra flour I have to add. Which works well for me, especially since the rolls freeze well!
Yes but giving it a second rise will not hurt anything it will actually improve the flavor. It will just take longer so depending on how much time you have to make it.

My flour is more on the gritty side and was sticky and difficult to come together.
Will it be okay to let the rolls prove for an hour instead of 40 minutes?

I used this recipe but my breads texture was too dense. What did I do wrong?
@@the_good_citizen don’t add all the flour, just add until the texture is soft and elastic. Make sure to let it rise until it is double in size.

I had regular bread flour so I mixed it with the whole wheat flour. Used less honey and salt because our taste is used to it. They grow a lot so will make the smaller this time, will also be using them as hamburger buns. Two thumbs up! Thanks!
Absolutely love it, I have been stuck in a rental house without an over because of the lockdown in India, so I tried it without an oven and it came out pretty decent. Can't wait to get my hands on my oven at home and try it again for better results. Thank you for sharing your mama's recipe :)

This recipe worked out great. I saw one reviewer said it was too sweet. So I was going to use half the honey, but completely forgot the honey all together and it was still great. 😂

You can use lightweight cotton napkins instead of plastic wrap for the rise. My metal bowl is like yours and a napkin did it for the sponge with a large dinner plate on top. Great recipe! Made six rolls and one loaf. The spatula shape is perfect for the mixing.

This is the BEST bread EVER!
OMG. It worked, perfectly. I could not do the squeeze thing, I Tried, but... So I just kind of stretched and formed them into shape. They came out looking great and tasting even better. Perfect size for Hiking Sandwiches that won't get squashed in my pack. It may be the Flour I used, I get it from a Stone Mill out of Waco Texas, Def not a light flour but the flavor is really good. But they seem heavy when you pick them up, though they are fluffy on the inside. Thank You again, I will be trying more recipes of yours. Another thing I only burnt my hands 3 times, that's a record.

I'm so glad I found your recipe, thanks a ton for sharing ♥️Your recipe is the only one which uses the sponge technique and shorter proofing times..I tried these today with some variations - 3 cups of whole wheat flour, half cup of bread flour, and ended up using another half cup of all purpose flour while kneading as the dough was sticky. I used just 1.5 cups of warm water for the sponge, but I think you are right when you mentioned that the stickiness of the dough depends on the type of flour used. They turned out good though a bit dense and not fluffy like white bread. I will try your tips of letting it rise for a longer time than 40 mins before baking and adding less flour as I experiment with this recipe...They tasted better than white bread, just need to get it right the next time 👍 Can you post a recipe for Rye bread? We recently started buying wheat berries and milling our own flour. But we aren't fully whole wheat. So I have been experimenting with this recipe.... I've made it 3 times now because it always turns out great, but the dough is the stickiest to knead and it seems a bit finicky... even if I replace a cup of whole wheat with 2 cups of white, I still end up kneading in another cup or 2 of 50/50. Also I do add a bit extra salt and replace half the oil with melted butter because I like the extra flavor it lends. Most recently I reduced the liquid by a 1/4 of water... but still a bit sticky.... oh well. Also I am able to get one small loaf and about 8-12 medium rolls because of the extra flour I have to add. Which works well for me, especially since the rolls freeze well!

Yes but giving it a second rise will not hurt anything it will actually improve the flavor. It will just take longer so depending on how much time you have to make it.
