✿ Gillian's Almond Cookie Recipe ✿
200 grams Almond flour
120 grams Caster Sugar
2 Egg whites
40 grams Plain flour
Pinch of Lemon zest
1 tsp Almond extract
Add all of the dry ingredients, and almond extract, into a bowl and mix together, then add in the egg whites, a bit at a time, and stir by hand until a soft dough forms. Shape each cookie by hand into a small ball, and place each one on a lined baking tin. Bake in the oven at 170 degrees celsius for approx. 15-17 mins. Enjoy!

Such a calming, peaceful start to my day here in upstate New York. We have a big snowstorm coming today and oh how I love the tranquility of the sparkling snow especially at this time of year. It’s a time to relax, tune out the chaos and busyness of the world, light a candle, read a book, relax, bake a treat and spend extra time cuddling with my five sweet cats and two little dogs. I also relax in front of the fireplace with relaxing music and cozy scenes playing on the tv. My own wonderful fresh roasted coffee, fireplace, candles and soft music is how I start everyday, my tranquil moment before work. Even though I am not lucky enough to have a real fireplace, my Real Flame fireplaces create the same ambiance with real crackling flames...I need to make a habit of taking more moments throughout the day to find that peace again and renew and let go of the stress that comes everyday. Thanks again for the reminders. :)

This is another lovely Christmas video. Your tree is spectacular with many meaningful decorations. How nice it would be to sit by the fireplace looking at the decorations and having an eggnog or brandy. Of course Charlie would join with his catucinno. Enjoy every moment.

My birdhouse on the balcony is viseted by blue tits, blackbirds and jays and in the last time of big parakeets. We have many flocks of them in German cities.

The blue tits at the feeders, Charlie with his milk, the Christmas decoration, and the walk at dusk.
But I would like the comment that in my country, in addition to the Christmas tree, there is a custom if making a Nativity scene.
It's a portal to Bethlehem, but with a recreation of the town, with its sheeps, goats, sepherds the three Wise Men, a river, etc.
The children really enjoy placing the figures and placing moss and sawdust.

Hello dear Gillian, what a lovely video, I loved all your Christmas decorations, the felt ornaments, they were all beautiful. I bought some this year , they’re really nice. I hope Charlie enjoyed his catuccino! Nothing compares to your videos! After I watched your video the first time I decided to make some vegetables soup too, but yours looked so delicious! Can I have the recipe please! What did you put on top of the soup? You’re an excellent cook! I hope you’re feeling better!

Aw thanks so much Yani! The soup is super simple - my favourite kind of recipe 😅 Just peel and chop an onion, two cloves of garlic, two carrots, one potato, a parsnip, and add to pot with water. I also added a bay leaf, pepper, pinch of salt, thyme and a vegetable stock cube. Boil for 10 mins then let simmer for another 15 mins until all veg is soft. Remove the bay leaf and then using a hand blender (or add the slightly cooled mix to a blending machine) and blitz until thick and creamy. I also add a splash of milk at this stage, you can also add a spoonful of cream for extra richness. Serve and enjoy!🎄🥰✨💕
