Join me on a little road trip through the meandering mountain tops, where we discover hidden waterfalls, spot some of the 'locals' and soar through the skies to meet some very sweet little characters who live upon the wild meadows.
We'll warm up in the farmhouse with a comforting hot chocolate- complete with a snowy surprise, and indulge in some relaxation by the Christmas tree. Our day will end with an evening stroll with Charlie to enjoy the vibrant winter sunset.

✿ Gillian's PB & Jelly Baked Oats ✿
To make a full tray bake of oat bars : Add 300g of finely milled porridge oats, 50g of almond flower, two eggs, half teaspoon of baking powder, twist of pink salt, tablespoon of maple syrup or honey, teaspoon of good quality vanilla extract, and a splash of milk to loosen the texture. Blitz in a blender until a batter is formed, then mix in a handful of fresh raspberries, and add the batter to your lined dish/tray. Add alternating dollops of raspberry jam and peanut butter and swirl into the mix with a skewer. This will create a marbled effect. Bake at 170 degrees celsius for 30-35 minutes. When cooled, cut into bars, and store in an air tight container for up to a week. You can warm one up each morning and enjoy with tea or coffee.

Gillian, no doubt about it...the beautiful waterfall must have been a holy, revered place for our ancient ancestors. Imagine this surprising "gash" in the lonely, flat bogs, as they came upon it for the first time! And later in your day, as you walked with Charlie, I had to chuckle as he kept looking back to make sure you were following according to "orders". Thank you once again for a glimpse into a place "my people" had to leave behind - a lovely green place that I'll never have the good fortune to visit, but have at least spied from the air on one of my trips.
