      I’d love to see some soy free high protein recipes! my stomach is extremely sensitive to soy and I’ve been struggling to get enough protein in since I cut it out

      I took a beginning foods class last year and the first thing the teacher asked me was “where do you get your protein?” because I told her I was vegetarian. I ended up dropping the class two weeks in. She had no idea what she was talking about..

    Hi sarah . Italian vegan cook here . Bologna is a city , so even if different regions may switch the recipe the proper recipe is the one from bologna and you did exactly the write thing ! yep...no garlic. It s even better with small green lentils instead of mince , that s how Italian vegans make ragù alla Bolognese but yours looks amazing. Big hug ❤

      Don't you cook Bolognese for hours usually? I mean we do - 2 to 3 hours I think but of course you make a big pan full of it and then keep portions in the freezer

    it's possible I just am paying attention to it now but the explanations in this video are really good! like explaining each step and why we're doing it, what is the role of each ingredient, etc. something like "sugar goes from caramellized to burnt really fast" is so useful to know and really shows how good you are at explaining the fundamentals of cooking

      research has shown whole food plant based to reverse type too and animal products to increase development (check out the China study). Def find a plant based nutritionist if you can. Hope you are doing well!

    FYI, for those interested…
    Sofritto (Italian) is garlic, onion, peppers, and tomatoes.
    Mirepoix (French) is carrot, celery, and onion.
    Holy trinity (Cajun) is onions, peppers, and celery.
    Trinity (Indian) is onion, garlic, and chili. Sometimes ginger is added, but that is more than a trinity, and regional/personal preference.
    As a formally trained cook, this is informational, to help people keep the appropriate flavor profiles, in case they hear those terms, in the future.

    The lentil burgers were almost the same as "Bun Kebab" , a Pakistani street food burger. Though meat is used but it's highly optional ( the street vendors don't use meat anyway) . It's all about spices and Texture. I'd highly recommend.

    Hey Sarah! I’m new wanting to try this new lifestyle on plant food! I eat eggs for years. I did keto years ago. I’m 55 now . I want to eat healthy and get lean! I still have some belly fat. I have a weakness with pizza’ peanut butter! I gave up fried food like chicken! I gave up soda. I eat oatmeal with blueberries and nuts.

    I will try that recipe soon for sure! I love using tofu in bolognese but to achieve more meaty texture I always crumble it, add some soy souce and oil and bake it until it gets brown and dry and then I add it to a souce, it has a really convincing texture

    I would like to mention that regular wheat pasta, bread or whatever is already pretty high in protein in and of itself. Those regular little 16 oz box of wheat pasta has about 64g or about 21g for 1/3 box

      Exactly!! Especially the weight loss and alleged fitness people seem convinced it's nothing but carbs. Wheats have protein, lots of it.

    Hi! All these things look really good! But a quick tip on lentil burgers, dont boil the lentils first. Just put them in water for a few hours then the rest (drain, mix and form patties) - a bit like falafel. That will give more texture to them 👍 😋
    Also, if you dont put oil on your pasta it will soak up the flavours from the sauce better.

    New sub and new vegan here. I have been so afraid to go vegan because I don't cook and I don't know anything about veggies either! I literally have one pan in my kitchen, no utensils other than a fork, a spoon and a knife, and no idea about any of the spices that you used, but I am taking notes and will definitely be cooking some of your recipes.     Tvp is great in bolognese! We use it all the time for anything needing a ground beef or turkey substitute so you are spot on there

    Hey Sarah, everything looks so yummy! I'm not Vegan but I only eat meat once or twice a week so I'm a frequent visitor to your channel for inspiration. Keep the recipe coming. One note though, I believe you meant mirepoix and not soffrito to start your bolognese.

      Thanks for watching! As for the veggies, Italians call carrots, onion, and celery cooked in olive oil "soffritto." So, same ingredients, different name.

    I eat intuitively and when eating the traditional American diet I wouldn’t get my minimum of protein, too much salt and too much sugar. But eating plant based it’s not even something I worry about anymore. Still have to be careful with salt and sugar because processed vegan foods are an easy trap to fall into.

    I think vegan is the answer. I'm desperate to be healthy. Both of my parents had dementia, so I left work and had to defecate and urinate for a long time on my own. Last year, they both passed away after 3 months. It was stressful. After my parents passed away, all I had was physical and heartache. I got a brain aneurysm and two brain aneurysms on my head. I even had hypothyroidism and suddenly I gained 15kg. Anxiety disorder Panic disorder I'm still experiencing insomnia. It's been a year since my parents died and I'm still in treatment, but I've only started again. I've had the courage to share and communicate, so I started RUclips, took a walk, and traveled. Now I want to be healthy. I want everyone watching this video to be healthy. When you lose your health, you lose everything.

    I always used to soak my TVP in hot water before cooking it but then saw a vegan chef saying he just adds it dry to the sauce because it soaks up the sauce flavours instead of water and since trying it it really makes the TVP extra flavourful 😊

    If you get the big box of soy curls - you can get the crumbles from the bottom and use them in places of grounds or tofu. Also you can always crumble soy curls in the food processor before rehydrating them - just pulse it a few times. Soy curls are my go-to meat substitute for most things these days - buying the big box is never a bad choice ;D

    Everything looks soo good! Wish tempeh was more accessible where I live (Helsinki). Not many stores have it and when they do it's expensive, even in asian stores. Maybe some day I can dabble into making it myself.

    Use smoked tofu instead of firm straight one. It's usually also very firm and adds a nice smokey umami flavour, which goes really well with all kinds of hearty, saucy, stewy dishes.

    I love vegan/vegetarian youtube cooks, im not either, but you guy always have great recipes, and i dont eat often so high protein meals are definitely useful for me! Only change I did was lentils instead of tofu, and mmmmm perfect! I normally love garlic but leaving it out was perfect and definitely the right choice!

    Just a heads up: I made the meatballs for meal prep for work lunches this week and they are so delicious! It hard to not eat the entire tray of them. They are perfect with rice and steamed veggies (Brocolli and mixed bell peppers to add more veggies). Going on the list of go to lunches!

    Actually if you use brown lentils it really comes close to bolognese also the Sofrito is made by putting it in a blender or food processor and mincing the onions celery and carrots then it’s added to the pan to sauté. Bolognese is a very thick sauce so less liquid is better.

    Very informative and fun to watch. I'd love to have more tempeh or tofu in my diet. How about marinades to prep tofu for stir fry. Also loved your section on herbs and lettuce in water. I heard using the tops and some stem of scallions and leaving some stem will produce shoots. How to grow micro greens would be great to know. Thanks so much for making it fun to watch 🤗

    I thought about you yesterday when I bought a huge amount of garlic from the Asian market so I know it pained you not to add garlic. 😂 I’m curious if you think it needed it or did you miss the flavor? The tip about frying the tempeh is great. I love tempeh blt’s but can never get the crispness. Lastly I would love a video featuring ways to get more fruits and vegetables in the diet. Even though it seems that’s what the vegan diet is you’d be surprised how much people heavily rely on faux meats and such as vegans who would love more fruit/veggie heavy recipes. TFS 😊

    I usually use brown lentils with my Bolognaise, but next time I'm going to try it with tofu....and add more onion, which you have done. Excited to try this. ☺☺☺

      Another commenter who's Italian says brown lentils is how it's done by vegans in Bologna. Was that just your personal riff or had you heard about that? I'm excited to try the lentil version. But also looking to decrease the carbs so tofu looks like a great option!

      I think I first saw brown lentils for bolognese sauce in a local (Australian) health magazine & used it ever since. I only recently started using the 'puy' or 'French' lentils (soaked overnight) in stews/pies/bolognese dishes & find them very 'more-ish' (i.e. more umami). But I generally look out for different tofu uses.☺@@greentara291

    As someone who is slowly trying to cut the meat out their diet: this video makes vegan food look so amazing. i'm definitely trying 1 recipe a week at least.
    I'm most excited for the burger. I love making different sauces for burgers so I can see that being a fun thing to experiment with.

    Awesome. I would have cooked the bucatini more though, until it sags, very flaccid over the folk (very flaccid). Have you tried sprinkling on a little nutritional yeast flakes at the end? It replaces cheese nicely (just enough to taste, mind).

    I tried Vegan food but my doctor said don't be stupid.
    So I switched back to natural food. Like dairy, plant and meats. All natural.

    suggestion: freeze tofublocks as defrosting makes them loose all water, and maybe try smoked tofu for a more convincing meat flavour in a Bolognese

    Awesome recipes. I can't eat tomatoes. Is there any way you can offer some tips about the lentil burger and the bolognese recipe being prepared without tomato? The tomatoes provide flavour and a moist consistency to recipes, and it's regrettable I can't eat them! Thanks for any suggestions. .... Oh, and that cookware looks exquisite.🙂

    I'm not sure if you're aware, or if someone else has already pointed it out. But impossible burgers or mince are sadly tested on animals. I know that beyond is still okay and they don't test on animals.

    Could you add a touch of vegan Worcestershire sauce and Dijon mustard to the lentil burgers? Back when I ate meat, I learned from America’s Test Kitchen to add those two ingredients to ground turkey to make it taste like ground beef (for burgers and meatloaf). I imagine the Ws/dm would do the same for lentils.

    Budget friendly tip: if you have a Mexican food market near you you may be able to find TVP/soy chunks at a great price. Mine has a pound of TVP for $2.50.
