I used to mainly use raw cashews to make creamy sauces, but cashews aren't cheap. I recently started using lima beans. They're just as creamy, possibly healthier, and high protein, but also a lot cheaper. I buy them dry, soak and pressure cook.
Cannellini beans can be made into a creamy sauce too. For recipes like veggie carbonara, they can make a more convincing cheese like sauce than lima (butter beans).
not only that but they’re unethical as hell and i’d hardly say they’re vegan. i wish more people would talk about it, especially in the vegan community. please look up “dailymail cashew” and click on the first article that pops up
Does anyone else feel like this as well or am I the only one which feels like Merles videos are the soooo needed weekly theraphy session I am looking forward to each Tuesday?
Yes, yes, yes! Have a cold and feel like sh*t so really don’t want to cook so perfect timing. Just made the gnocchi one and OMG this is definitely a keeper for me….had everything but leeks but subbed in onions, added miso into the sauce and I’m sure it added the complexity that you said you missed, a bit of Worcestershire sauce might also add that additional umph. Can’t wait to try the others. Thanks, Merle!
Thank you for sharing these!! I’m jumping back into a plant based era and it’s so helpful to know the incredible recipes and creators that exist right now! I am stoked to try all of these! Also loved your shirt in this video 💜💓💜
I’m pretty sure this is your best recipe line up yet. It’s the first time I’ve made all the recipes in one week 🤩 keep the high protein recipes coming!
These are great! I'm not personally looking to cram more protein in everything but I find these meals super appealing just based on flavour, accessibility and overall nutrition.
i was going to say... am i the only one not thinking about my protein intake these days? maybe i just don't work out enough (at all lol). I suppose since I'm just veg I don't need to worry so much about it.
Great recipes! I’m def going to try some of these. In the fajita recipe when you were chopping the onion it sounded like it was saying “chop, chop, chop!! Haha! So satisfying!
The gnocchi recipe is amazing. Not being a full non-meat eating kinda gal, I added Amylu chicken meatballs. But, honestly- the silky tofu lemon sauce makes it next-level!! Well done, you 😊
I'm almost 70 and believe me, I love brussel sprouts, cauliflower, eggplant, etc. But my digestive system can no longer tolerate some veggies anymore, even beans! Now I'm following the plant paradox. It helps!
I don’t know if there’s a difference in 425* in a regular oven and the oven you use, but 18 minutes in, I noticed the gnocchi was brown on top so I pulled it to check it. Was very brown on bottom, so stopped cooking. It was too far gone to soften with addition of veggies and sauce, so I tossed the gnocchi. The veggies and sauce were delicious though, so I’m going to cook up some cavatelli I have in the pantry and add that to leftover veggies and sauce. I’ll try again because I’m pretty sure it’s delicious!
oh my god - roast gnocci with cherry tomatoes and whole garlic cloves (and olive oil and seasoning of choice ofc) then add rocket and a bit of basil and the end. easiest and yummiest dinner ever.
You’re adorable! Recipes look amazing too, and a must try! I add miso to soooo many things and it’s always a winning ingredient. Would be great in that sauce.
Catherine Perez has two roasted Gnocchi sheet pan meal recipes that are TO DIE FOR! The pesto one is good (in her cookbook) BUT the bell pepper, sausage situation is ON👏RO👏TA👏TION👏!! (on her website and insta).
I just recently learned I am mildly allergic to most foods that have been staples in my diet. Your video is the first I've seen that makes vegan look doable and delicious. I'm excited to try these recipes and will check back for more, especially for anything that adds protein. Thank you!
@@MerleONeal I made a modified version of the cauliflower dish, with cabbage, because it was cheaper, and soy joghurt instead of silken tofu, because it's hard to get here, and it was very very good as well! Thank you for the inspiration :)
Love sheet pan easy peasy (see what I did there?) meals with a good amount of protein cuz I honestly don’t think about protein much as a plant based gurl. Thanks for your lively lighthearted video. Keep em coming!
Made the gnocchi dish with the silken tofu sauce. Added 1 tablespoon of white miso per your recommendation and swapped the 3 raw garlic cloves for garlic roasted with the veg and it was amazing!
Yes, the Whole Foods brand chick-un is good. I personally do not like Daring chick-un. These recipes look great. I have recently been missing fajitas. Can’t wait to try it. We hen you add the peas, you add the protein. Looks yummy.
i didn’t need to add olive oil later for it to emulsify, i zested the lemon into it (which might be too overpowering for some), and i added some mushroom powder to the sauce
Your cooking skills have really amped up. Adding some miso is almost never a bad idea in any sauce. These are being added to my Paprika app for future meals.
These look amazing! It's 11:40am here and I am wishing i'd watched it closer to lunchtime as now I'm starrrrving. I just sent the link to this video to my (omnivorous) husband, who does most of the cooking. He tries, but still doesn't really GET cooking without meat, and hopefully these could help.
